"I love to experiment with all kinds of recipes," relates Debra Jane Webb of Muskogee, Oklahoma. A dash of chili powder gives her meat loaf fun Mexican flavor that's complemented by zesty picante sauce poured over the top.

3/4 cup milk
2 eggs, lightly beaten
1/2 cup dry bread crumbs
1/4 cup finely chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1-1/2 pounds lean ground beef
1 jar (16 ounces) picante sauce

Steps:

  • In a large bowl, combine the first seven ingredients. Add beef and mix well. Pat into a greased 8x4-in. loaf pan. , Bake, uncovered, at 350° for 1 hour or a thermometer reaches 160°. Top with warm picante sauce.

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

I found this recipe many years ago and my family loved it and so i've been making it ever since.

2 lb lean ground beef
1/4 c minced onions
1 tsp italian seasoning
3/4 c panko bread crumbs
3/4 c milk
2 eggs, beaten
1/2 tsp salt & freshly ground pepper
PIQUANT SAUCE
1 c thick ketchup (heinz)
1/2 c light brown sugar
1 tsp ground dry mustard
1/2 tsp ground nutmeg

Steps:

  • 1. Mix the ingredients for the sauce and set aside to thicken.
  • 2. Preheat oven to 350F. In a large bowl mix ground beef and remaining 6 ingredients. I then mix this thoroughly and form into a loaf shape, fit into loaf pan and pour the sauce over the top. Bake 350F for 1 hour or until meatloaf is no longer pink.
  • 3. After you take meatloaf out of the oven, remove meat out of pan and let it rest on a small wire rack to drain. Then slice and serve.

EASY SALSA MEATLOAF

½ cup salsa
½ cup Italian seasoned bread crumbs
½ cup shredded Cheddar cheese
1 egg, lightly beaten
3 cloves garlic, minced
dried parsley to taste
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.
  • Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).

I love using the pace picante sauce..it has everything you need to make a great meat loaf with out having to chop all that separately. Try it! Its fast and easy and I am sure everyone has a half empty jar of picante sauce in their ice box. Enjoy :)

2 lb hamburger meat
1 c pace picante sauce
1/2 pkg saltine crackers
1 large egg
1 c ketchup
1/2 tsp salt
1/2 tsp fresh black pepper

Steps:

  • 1. Hamburger meat- thawed, put in a mixing bowl
  • 2. Saltine crackers - if you have a food processor crumb the crackers..if not, crunch up in the bag it comes in until its crumbs. Add to your mix.
  • 3. Add egg, picante sauce, salt and black pepper.
  • 4. Mix with your bare hands.....lol you must mush it together and make a loaf. Put it in a deep baking pan, and smother it with the ketchup.
  • 5. Bake in your oven at 375. Should be ready in 35 to 45 min. I alway cut mine right in the middle to check if it has pink in the center. If so just put it back in for another 10-15 mins or so. By cutting it in half it will allow the center to cook faster with out the out side being burnt.

PICANTE MEATLOAF

From Gramma's recipe collection. A twist on meatloaf. You can use spicier sauce if you like a bigger kick. The recipe calls for carrots, but as a kid I never knew they were there and Gramma assures me they were, so if you want your kids to eat more veggies, I suppose this is a good way to sneak them in! When I make it, I sometimes add salsa that contains black beans and corn to the loaf ingredients.

2/3 cup breadcrumbs
1/2 cup chopped onion
1/4 cup coarsely chopped carrot
2 egg whites
1/4 teaspoon salt

1/2 cup picante sauce

Steps:

  • Combine first 8 ingredients. Shape into a loaf and place on a rack coated with cooking spray. Place rack in a shallow roasting pan.
  • Bake at 400°F for 35 minutes. Brush picante sauce over loaf. Bake an additional 5 minutes. Let stand 5 minutes before slicing.

3 slices bread, crumbled

1 onion, chopped
1 cup shredded Cheddar cheese

¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. 3 large eggs, lightly beaten
2 cups picante sauce, divided
1 can (16 ounces) kidney beans, rinsed and drained
1 can (11 ounces) Mexicorn, drained
1 medium onion, chopped
2 cans (2-1/4 ounces each) sliced ripe olives, drained
3/4 cup dry bread crumbs
1 envelope taco seasoning
1 teaspoon ground cumin
1 teaspoon chili powder
2 pounds ground beef
2 cups shredded cheddar cheese
Additional picante sauce, optional

Steps:

  • In a large bowl, combine the eggs, 1/2 cup picante sauce, beans, corn, onion, olives, bread crumbs, taco seasoning, cumin and chili powder. Crumble beef over mixture and mix well. , Pat into two ungreased 9x5-in. loaf pans. 1 c onion, chopped
1/2 bell pepper, any color
1 c seasoned bread crumbs
1 Tbsp brown sugar
1 c evaporated milk (pet or store brand works)
2 large eggs, slightly beaten
1 tsp seasoned salt
1/4 tsp lemon pepper
2 tsp dry mustard
SAUCE FOR PICANTE TOPPING :
3 Tbsp brown sugar
1/4 tsp nutmeg
1/2 c ketchup

Steps:

  • 1. Meat loaf: Combine all ingredients in meat loaf; mix well and put in a well sprayed loaf pan. Bake in 350^ oven for 1 hour. While this is baking: combine the picante topping ingredients, mixing well . After meatloaf has baked for 40 minutes remove from oven and drain any collected grease carefully so as not to burn yourself. Now Pour some of the Picante topping over top of meatloaf and place back in the oven to continue baking until done. Note : I have made this in the microwave several times using a glass loaf dish and it comes out great and needs only about 20 minutes to cook.--- This is so good with the topping- that I often make extra to serve with the meat slices.
