CLASSIC BEEF & TOMATO MACARONI SOUP

Classic Beef & Tomato Macaroni Soup image

Talk about comfort food, this beefy macaroni and tomato soup is seriously the best thing I have tasted all fall! There's a reason it's a timeless classic!

Provided by Karlynn Johnston

Categories     Main Course

Time 8h15m

Number Of Ingredients 12

1 pound ground beef
1 cup onion diced
3 cloves garlic minced
6 cups very strong beef broth
1- 28 ounces can Chopped Tomatoes
1- 28 ounces can whole Tomatoes
1/2 cup ketchup
1 1/2 tablespoons Worcestershire sauce
1-2 tablespoons brown sugar (to taste if you have a sweeter ketchup you may not need it)
1 teaspoon Italian seasoning
3 cups cooked elbow macaroni OR 2 cups dry macaroni to add in at the end
salt and pepper as desired

Steps:

  • In a medium frying pan, brown the ground beef, onion and garlic until ground beef is no longer pink. Drain the grease (I also like to rinse it with hot water to remove most of the grease) and place in a large crockpot.
  • Add the broth, cans of chopped and whole tomatoes, Worcestershire, ketchup, brown sugar (if wanted) and Italian seasoning. Add more sugar and Worcestershire to taste if needed. Place the lid on the crockpot and cook on low for 8-10 hours.
  • When you are ready to serve, either add the dry macaroni and let cook for 20-25 minutes OR add cooked macaroni. Let the macaroni heat through and serve!
  • Press the saute button and fry the ground beef and onions until the beef is no longer pink. Add in the garlic. Fry for another minute or so. Drain the grease.
  • Use the Instant Pot like the slow cooker, using the slow cook button and the instructions above OR
  • Add in the remaining ingredients except for the macaroni. Cook on the SOUP setting for 10 minutes. ( this really helps get the beef flavor going.) Release the pressure manually.
  • Add the DRY macaroni, (not cooked or it will be mush!) then cook for 10 minutes on the SOUP setting again. Release manually or with the NPR ( naturally)
  • Serve and enjoy!

Time 4h

Number Of Ingredients 14

2 to 3 pounds beef shanks
8 cups beef stock (unsalted or low sodium)
3/4 cup onion (chopped)
3/4 cup celery (chopped)
1/4 teaspoon pepper (coarsely ground)
1 bay leaf
Kosher salt (to taste)
2 (14.5-ounce) cans tomatoes (diced)
2 cups cabbage (shredded)
1 1/2 cups green beans (fresh cut or frozen)
1 1/2 cups potatoes (diced, raw)
1 cup carrots (thinly sliced)
2 teaspoons Worcestershire sauce
Optional: 1 teaspoon sugar

Steps:

  • Gather the ingredients.
  • In a large stockpot or Dutch oven , combine the beef shanks, beef stock, onion, pepper, bay leaf, and salt. Cover the pot and bring it to a boil over medium-high heat. Reduce the heat to low, and skim off and discard any foam. Simmer, partially covered, stirring occasionally, for 3 hours, or until the meat is mostly tender.
  • Remove the beef shanks from the soup. Skim excess fat from the surface of the soup with a ladle or spoon. Remove the meat from the bones, cut it into small pieces, and add it back to the broth. Add the tomatoes, cabbage, green beans, potatoes, carrots, celery, Worcestershire sauce, and sugar, if using. Continue to simmer for about 45 minutes longer, or until the vegetables and meat are tender. Taste and adjust the seasonings.
  • Remove the bay leaf and ladle the soup into bowls. Serve hot and enjoy.

HOMEMADE VEGETABLE BEEF SOUP

Homemade Vegetable Beef Soup image

My mom made this soup when I was young. I have always loved her soups. When I was able to start cooking by myself I fell in love and have added and taken items away, but my fiance love my soups. And he isn't even big on soups. I hope your family enjoys the soup as much as mine does.

SAVORY TOMATO BEEF SOUP

Savory Tomato Beef Soup image

Meet the Cook: This soup's one my mother taught me to make. It's good all year but especially when the weather's cold. In winter, I serve it with grilled cheese sandwiches. It would also be a nice lunch with a side salad or homemade corn bread. Even our grandchildren - we have four - like it. It's a good way of getting them to eat their vegetables. My husband and I have two grown daughters. -Edna Tilley, Morganton, North Carolina

THE BEST TOMATO SOUP

The Best Tomato Soup image

Vibrantly colored, tangy and rich, our comforting tomato soup is the perfect partner for a grilled cheese sandwich - but is just as delicious on its own. Blending the soup with butter is our trick for making it creamy.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 9

2 tablespoons olive oil, plus more for serving
1 stalk celery, diced
1 small onion, diced
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
Two 28-ounce cans whole peeled tomatoes, crushed by hand
1 1/2 cups vegetable broth
1 teaspoon fresh thyme leaves
1/2 stick (4 tablespoons) unsalted butter

Steps:

  • Heat the oil in a large heavy-bottomed saucepan over medium heat. Add the celery, onions, garlic and 1/2 teaspoon salt. Cook, stirring often, until the vegetables are softened but not browned, about 10 minutes. Stir in the crushed tomatoes. Add the broth and thyme leaves. Cover and bring to a simmer. Cook, stirring occasionally, for 1 hour.
  • Let the hot soup cool for about 5 minutes or so, then transfer half of it to a blender filling no more than halfway. Add 2 tablespoons of the butter. Remove the center cap from the lid and place it on the blender. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Pour into a clean pot or container. Repeat with the remaining soup and butter. Season with salt and pepper.
  • Ladle the soup into bowls and drizzle with more oil before serving.

  • Preheat your oven to 400 degrees and line a large baking sheet with parchment or aluminum foil. Arrange halved tomatoes cut side up on the pan, along with the garlic cloves. Drizzle with oil, and generously season with salt and pepper. Roast for 35-40 minutes.
  • Meanwhile, add 1 Tbsp of oil to a large skillet over medium heat. Add the onions and cook, stirring occasionally. Monitor the onions and stir occasionally until they have turned golden in color. Be careful and watch not to burn them. Caramelizing onions usually takes between 20 and 25 minutes.
  • When the tomatoes/garlic are done, allow to cool in the pan for 15 minutes before transferring to a high-powered blender (or food processor). Blend until smooth and creamy. Add the basil leaves and onions and continue blending until completely smooth.
  • Transfer soup back to the pot and stir in the bone broth, and oregano. Add additional salt and pepper to taste and stir over medium heat until heated through and well blended.
