MEAL-IN-ONE
Ground beef is layered with sliced potatoes and frozen veggies and flavored with onion soup, Worcestershire and mustard. Topped with cheddar cheese. This has been a family favorite forever.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Cook ground beef in a skillet over medium-high heat until evenly browned. Drain excess grease. Season with garlic, salt and pepper. Stir in the onion soup, Worcestershire sauce and mustard, and bring to a boil. Mix together the cold water and flour, and stir into the sauce. Simmer over low heat for a few minutes, then set aside.
- Meanwhile, place potatoes in a saucepan and add enough water to cover. Bring to a boil, and cook for 3 minutes, not until tender. Drain.
- Spread half of the beef mixture in the bottom of a 9x13 inch baking dish. Arrange half of the potatoes over the beef. Cover with a layer of mixed vegetables. Repeat layers.
- Cover the dish, and bake for 50 minutes in the preheated oven. Uncover, and sprinkle shredded cheese over the top. Bake for an additional 10 minutes to melt cheese.

PEROGIES CASSEROLE - MEAL IN ONE
This is a meal-in-one easy casserole to make. Make ahead and keep it in the fridge until 1 hour before serving. Allow 15 minutes to let the cassserole dish get to room temperature before popping it into the oven. Add more or less veggies; vary the veggies. I like these veggies because it make a very attractive casserole.

Steps:
- Pop the perogies into boiling salted water; stir so they do not stick to the bottom of the pot; bring back to a boil and when they float to the top, add the carrots to the pot. Allow to cook for 5 minutes longer Drain carrots and perogies.
- Meanwhile heat a skillet, add 1 tsp oil and saute the onions and mushrooms until the onions are translucent. Add the peppers and saute another two minutes.
- Mix the perogies and onion mixture together.
- Pour into a lightly oiled large casserole dish (9"x14"x3").
- Arrange the tomatoes, broccoli, and cauliflower artistically on top of the perogies.
- Sprinkle evenly with the cheese.
- Cover and bake in a 350 degree fahrenheit oven for 30 minutes.
- Uncover and bake a further 15 minutes, allowing the cheese to slightly brown.
- Serve with salsa, sour cream and, if you wish, bacon bits. Just let everyone add their own at the table.

- Brown celery and onions in shortening.
- Add hamburger meat and brown.
- Grease 1 1/2 quart casserole dish and put layer of potatoes, carrots and add rice.
- Top with meat mixture and tomatoes.
- Bake at 375 degrees for 1 hour.
WESTERN MEAL IN ONE
Another easy great recipe, can't remember where I got it from, but it is a good one, remember trying it when I had some ground beef thawed and didn't know what to make for dinner, and found this, the family loved it. It's one of those dishes you can always put togerther fast, and always seem to have the ingredients handy. I think it was about 5 or 6 years ago. Been making it every since.

- Brown beef in vegetable oil with garlic.
- Add the onion and green pepper;cook until onion is transparent. Drain off fat.
- In a 2 qt casserole, combine the meat mixture, salt, chili powder, beans, tomatoes and rice.
- Bake covered at 350 degrees for 30 minutes.
- Uncover and sprinkle with cheese and olives; bake for 15 minutes more.
