Steps:
- You will need some cooking oil (2-3 TBS Any type); Salt & Pepper to taste; and a deep skillet.
- 1. In deep skillet, sauté green pepper and onion in oil until onion is just beginning to turn translucent (Do not overcook as the mixture will continue to cook with the other ingredients.).
- 2. Drain off the excess oil retaining a coating in the bottom of the pan. Save the excess oil in case you find you need to add some back in during the next phase of cooking.
- 3. Add in the shredded sweet potato, Kielbasa, and Simply Potatoes and cook as directed on the package. Add salt and pepper to your taste. While cooking, you may find that you need to add some of the oil that you retained in step 1.

- In a large skillet, cook the beef and onion over medium heat until the beef is no longer pink; drain. Stir in the next nine ingredients. Bring to a boil; cook an stir for 2 minutes. , Pour into an ungreased shallow 3-qt. baking dish. Combine potatoes and eggs. Drop by 1/2 cupfuls onto beef mixture. , Bake, uncovered, at 350° for 35-40 minutes or until bubbly and potatoes are lightly browned.

- Heat oven to 350.
- Spray a 12 inch non-stick skillet with cooking spray and heat to medium-high. Add hash browns, spread out and press down so flat. Heat till brown on bottom(about 6 min) ad flip lowering heat to medium nd cooking till golden brown ( about another 6 min). Once done remove potatoes. Seperate about 12 spoon fills into a bowl and cover remaining potatoes and keep warm.
- Spray 12 muffin cup pan with cooking spray. Line each cup with I slice of Deli meat so it makes a little cup/basket (if meat is very thin and tearing use 2 slices offing one over the other). Add 1 spoon of potatoes to each cup. Then pour 1/4 cup of either All Whites or Better'n Egg into each cup (3 cups total).top off each cup with 1 spoon of your Favorite shredded Crystal Farms Cheese (I recommend Pepper Jack or Colby Jack). Bake at 350 for 18-22 min or until egg cups golden brown and no egg liquid visible.
- Remove from pan and serve with remaining hash browns and your favorite condiments. If you are serving brunch a light salad also pairs great as well as soe hot sauce!

QUICK & EASY MINI MEAT PIES #5FIX
5-Ingredient Fix Contest Entry. A delightfully simple but yummy appetizer, perfect for game days, picnics or last-minute guests. Made this for the Super Bowl with ingredients I had in the fridge. You can add lots more but staying within the 5 ingredients was a fun experiment. I often use two cans of dough to make a double batch, because they go so quickly.

- Divide the mashed potatoes in half, returning one half to the bag to refreeze, thaw the remaining half and set aside.
- Thaw and drain 1/2 bag (about 8 oz.) of the peas and carrots, and place in a medium bowl.
- Over medium heat cook the sausage (the meat having been removed from the casing) and the onion in a nonstick skillet, stirring, until the sausage is browned and the onions are translucent, about 8 minutes. Drain off the grease and pour the meat-onion mix into a large bowl, set aside.
- In the same pan, with any residual grease left in the pan, cook the peas and carrots for another 2 minutes.
- Pour the peas and carrots into the meat mixture, then fold in the thawed (10 ounces portion) of the mashed potatoes.
- With a rolling pin, roll out the biscuit dough and cut into 12 (3-inch) rounds.
- Preheat oven to 350F degrees.
- Put a generous tablespoonful of the filling in the center of each round, brush the edges with water, and fold in half. Seal the edges with a fork. Cut 2 small slits in the top of each meat pie.
- Put the mini-pies on an un-greased baking sheet and bake for 15 minutes until they are golden brown. Remove, let cool slightly, and serve.
BAKED POTATO-STUFFED LOBSTER TAILS #5FIX
5-Ingredient Fix Contest Entry This recipe is a super fast variation on lobster macaroni and cheese and equally as tasty and indulgent. The potatoes and onion hold their own with the lobster and the creamy sauce. Cream cheese may be substituted for mascarpone, if desired.

- 1. Heat oven to 375 degrees.
- 2. Remove meat from lobster tails, cut into bite-sized pieces, and reserve shells.
- 3. Heat 2 tablespoons olive oil in a 10-inch nonstick skillet over medium-high heat. Add Simply Potatoes and cook and stir 10-12 minutes until potatoes are tender. Remove potatoes from skillet, add remaining 2 tablespoons olive oil and lobster. Cook 5 minutes or until lobster is done.
- Return potatoes to skillet and stir in mascarpone and 1 cup fontina cheese until blended.
- 4. Pile mixture into lobster tail shells, dividing evenly. Sprinkle with remaining fontina cheese. Place on baking sheet and bake 7-8 minutes or until cheese melts.

- Brown potatoes and carrots in electric skillet (300-325 degrees), use juice from mushrooms if you need to add liquid - this avoids using oil. While potatoes are cooking cut sausage into bite size pieces. Once potato mixture is cooked, add fz green beans, sausage and mushrooms. Make sure to stir so all ingredients are mixed thoroughly. Turn skillet down to low or steam. Put the lid on and vent, steam for 15 minutes or until beans are tender. Season to taste.

- Preheat oven to 350.
- Coat an 8x8 glass baker with 1T of the melted butter.
- Sprinkle 1c of the potatoes in the dish.
- Layer the onion to cover the potatoes.
- Sprinkle the pepper over the onions.
- Take a 1/2c of the puree' and drop dollops of the pumpkin on top of the onions, and spread with the back of a spoon.
- Repeat for a second layer.
- Add the remaining potatoes to the top, pushing down slightly to ensure no gaps, and drizzle with the remaining 2T of butter.
- Cover with foil and bake for 30 minutes, removing the foil for the last 10 minutes to crisp the top.
