"My mother sent me the original recipe for this delightful dessert 45 years ago, and I lightened it up," writes Alice Case of Carrollton, Texas. With bits of angel food cake and a cream cheese-like texture, this refreshing treat tastes so rich that no one will guess it's light.

Number Of Ingredients 7

2 cans (5-1/2 ounces each) apricot nectar, divided
1 package (.3 ounces) sugar-free orange gelatin
1 package (1 ounce) sugar-free instant vanilla pudding mix
2/3 cup nonfat dry milk powder
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
5 cups cubed angel food cake
1 can (15 ounces) reduced-sugar apricot halves, drained and sliced

Steps:

  • In a microwave-safe bowl, microwave 1 cup apricot nectar on high for 50-60 seconds or until hot. Sprinkle gelatin over hot nectar; stir until gelatin is completely dissolved, about 5 minutes. Set aside to cool. , In a large bowl, combine remaining apricot nectar and enough water to measure 1-1/4 cups; whisk in pudding mix and milk powder for 1-2 minutes. Whisk in cooled gelatin; fold in whipped topping and cake. , Pour into an 11x7-in. dish. Refrigerate for 2-4 hours. Garnish with apricot slices.

2/3 cup freshly squeezed orange juice
1 (16 ounce) package dried apricots
2 cups sugar
1 3/4 cups pecan halves
sugar

Steps:

  • In food processor or blender, process orange juice and apricots until pureed.
  • Combine apricot mixture and 2 cups sugar in a medium saucepan.
  • Over medium high heat, stirring constantly, bring to boil.
  • Keep stirring, reduce heat to medium and boil 12-14 minutes.
  • Remove from heat and cool for 20 minutes.
  • Drop teaspoonfuls of mixture into a small bowl of sugar.
  • Press a pecan half into top of each candy.
  • Spoon sugar over candy to coat.
  • Sprinkle a sheet of wax paper with sugar.
  • Use a fork to carefully transfer candy to paper.
  • Store between sheets of waxed papers in airtight container.

I love apricots so when I saw this recipe I had to try it. I got this recipe a couple of years ago from a cookbook I checked out from the library. I can't remember which one. This is really good!

1 cup all-purpose flour
1/2 cup butter or 1/2 cup margarine, softened
1/2 cup walnuts, chopped
3/4 cup sugar
2 tablespoons cornstarch
1 (3 ounce) package apricot gelatin
2 (15 ounce) cans apricot halves in light syrup
1 (8 ounce) package cream cheese
1 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup whipping cream, whipped

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl beat flour and butter until blended.
  • Stir in walnuts.
  • Spread mixture into bottom of a greased 9 x 13-inch baking dish.
  • Bake 25 minutes or until golden brown.
  • cool in dish on a wire rack.
  • In a medium saucepan, combine granulated sugar, cornstarch and gelatin.
  • Reserving juice, drain and slice apricots.
  • Add enough water to reserved apricot juice to make 1 3/4 cups.
  • Stir juice mixture into sugar mixture.
  • Stirring constantly, cook over medium heat until mixture thickens and becomes clear (about 26 minutes).
  • Cool to room temperature.
  • Stir apricots into gelatin mixture.
  • In a medium bowl, beat cream cheese, confectioners sugar, and vanilla until fluffy.
  • Fold in whipped cream.
  • Spread cream cheese mixture over cooled crust.
  • Spoon apricot mixture over cream cheese layer.
  • Cover and chill 4 hours or until set.
  • To serve, cut into 3-inch squares.
  • Store in an airtight container in refrigerator.

1 cup powdered sugar
2 (21 ounce) cans cherry pie filling

Steps:

  • Melt margarine and combine thoroughly with the graham cracker crumbs and sugar. Press onto bottom of a 9x13 pan. Blend whipped topping, cream cheese, and powdered sugar with a mixer. Carefully spread this over the pressed crumbs. Evens spread the pie filling over the cheese mixture. Refrigerate.

1 cup crushed pineapple, drained
1 (3 ounce) package lemon gelatin
1 cup hot water
1/2 cup reserved fruit juice
1/2 cup miniature marshmallow
1/2 cup chopped nuts, if desired
1 cup whipped cream or 1 cup Cool Whip

Steps:

  • Drain fruit and reserve juice.
  • Dissolve gelatin in hot water, add 1/2 cup juice, and chill until partially set.
  • Fold in fruit. Pour in a 9"x9"x2" pan. Top with marshmallows. Chill until set. Cover with whipped cream. Garnish with nuts.

This recipe is Honoring my Aunt Bernie, who just passed away last week. Years ago, she published a recipe book, "Cooking for 1 or 101." You need to double this recipe, because apparently it was just for 1, or maybe 2.

1/4 c butter
1 c powdered sugar
1 large egg
8 canned apricot halves
1/3 c slivered almonds
1/2 c whipped topping
1/4 tsp almond extract
1/4 tsp vanilla extract
2 tsp sugar
DOUBLE ALL INGREDIENTS FOR 9X9 SQUARE PAN

Steps:

  • 1. Spread 1/2 Cup Crumbs in bottom of 6" round baking dish.
  • 2. Cream together the Butter and Powdered Sugar. Add Egg, beat until Fluffy. Carefully spread over crumbs in dish. Drain Apricots and chop. Spread over butter/sugar mixture in dish. Layer with Slivered Almonds and then 1/2 Cup of crumbs.
  • 3. Combine whipped topping, almond extract, vanilla and Sugar, layer on top of ingredients in dish. Sprinkle remaining 1/2 c. crumbs in top.
  • 4. Chill 12 Hours before serving.

25g icing sugar , sifted
2 tbsp orange flower water
1 meringue nest, broken into rough pieces
3 apricots , stoned and chopped
2 cubes Turkish delight , orange flavoured if available, chopped
25g skin-on almonds , roughly chopped
4 mint leaves, shredded, plus extra to decorate (optional)

Steps:

  • Place the mascarpone, yogurt, sugar and orange flower water into a large bowl and whisk until thickened. Fold the remaining ingredients through, then divide the mix between 2 dessert glasses or bowls and decorate with extra mint, if you like.

2 (3 ounce) packages apricot gelatin
2 cups boiling water
2 cups cold water
2 large bananas, sliced
1 (20 ounce) can crushed pineapple
1 cup colored miniature marshmallows
1/2 cup pineapple juice (from reserves)
1/2 cup sugar
1 egg, slightly beaten
2 tablespoons flour
1 tablespoon butter
1 (8 ounce) package cream cheese
1 (8 ounce) container Cool Whip

Steps:

  • Drain pineapple and reserve juice for topping. Dissolve jello in hot water. Then add cold water. Let partially set. Add crushed pineapple & banana slices and chill in refrigerator.
  • While chilling in refrigerator, prepare topping. Cook pineapple juice, sugar, egg, flour and butter together on the stove. When thick, remove from heat and cool slightly. Fold in cream cheese. Whip prepared topping and fold into mixture. When completely cool, spread on jello mixture.
