MAWMAW BELLARD'S PRALINES (MICROWAVE RECIPE)
There are tons of microwave praline recipes out there, but this is the one that tastes like the ones my mawmaw made, before microwaves were a thought..LOLOL The ones in stores aren't like hers, they are dark brown and creamy. Her pralines were thinner, glassy looking surface, and very sugary!

Steps:
- combine all except for vanilla extract in a microwave safe 1 quart bowl or measuring cup.
- Microwave on high for about 6 minutes, stirring every 2 minute.
- Add Vanilla extract and stir quickly.
- Drop by teaspoonfuls onto waxed paper and allow to harden.
- If it sets up too fast while in the bowl just add a bit of evaporated milk.
- My problem was always spooning them out before the sugary mixture was thick enough or had cooled enough. I solved that by stirring quickly and checking to see if it starts to harden around the edges of my spoon or bowl. That's when it's ready to spoon out. It's very humid here so unsure how different climates will affect the outcome.

EASY MICROWAVE PRALINES
The most fantastic, EASY candy you can make... sinfully delicious and habit forming. I have only seen this fail once, and then the disaster was the most marvelous gooey pecan praline ice cream topping.

TWO POTATO GRATIN (MICROWAVE)
I'm not really a fan of microwave cooking, but I find that when the weather is very hot, microwave cooking will not heat up your house like a regular oven will... this is a recipe that really turns out well! The microwave cooking time is only estimated depending on the size of your potato slices and the power of your microwave. I use a mandoline to slice mine. This takes less than half the cooking time of a regular oven, and is really a delicious side dish, you can also do this using about 2-1/2 pounds of all russet potatoes, or all sweet potatoes. I also like to sprinkle some Parmesan cheese and caramalized onions that I store in my freezer in between the potatoes when layering, but that is optional.

- First: know the wattage of your microwave. This recipe works best on a 1000-watt microwave. If your microwave is less than 1000-watts, you may need to increase the cooking time. If it is higher than 1000-watts, you may want to decrease the cooking time.
- In a large plastic microwaveable bowl, add in the sugar, heavy cream, salt, butter, and pecans. Do not stir. Microwave on HIGH power for 3 minutes. Remove from the microwave and stir for 30 seconds. Microwave again on HIGH power for another 3 minutes. Remove from the microwave and stir for about 45 seconds. Lastly, microwave once more for 2 minutes and 30 seconds on HIGH power.
- Remove from the microwave and add in the vanilla. Beat the mixture with a wooden spoon, stirring vigorously until mixture becomes thickened and cloudy/dull in color, about 2 minutes or so.
- Working quickly, drop heaping spoonfuls of the pralines onto a parchment-lined baking sheet. Allow pralines to cool and set at room temperature before storing in an airtight container.
