Putting this one aside for when real meat-and-potatoes buddies roll on through... in cold weather. I like having a few slow cooker recipes up my sleeve & this one fills the bill nicely. Use tough cuts of meat & tenderize yourself or have your butcher tenderize them (they can do it fast - I prefer their method). Serve with mashed taters, collards & buttery fresh dinner rolls & dinner's done! Adapted from Beverly Mills and Alicia Ross' Desperation Dinners via (of all places) the Miami Herald.

2 lbs steak (tough cuts that are tenderized please)
2 onions (for 2 cup sliced rings)
1 teaspoon ground pepper
10 3/4 ounces cream of mushroom soup
1 (1/4 ounce) packet reduced-sodium brown gravy mix

Steps:

  • Cut any large pieces of steak into roughly 4-inch-wide pieces after tenderizing vigorously (or get your butcher to tenderize). Place a single layer of steak in the bottom of a slow cooker.
  • Peel and slice the onion into ¼-inch-wide rings. Place half the rings over the steak. Sprinkle with half the pepper. Layer the rest of the steak over the rings and top with the remaining onion and pepper.
  • In a small bowl, combine the soup, gravy mix and 1 cup lukewarm water; mix well. Pour the mixture over the steak, and cover the slow cooker. Cook on high heat for 6 hours or low heat for 10 hours. Remove steak to a large platter, and spoon the gravy on top. Serve immediately.

Perfect for when you need something easy that the kids will love. My kids would beg for this with rice or potatoes and, of course, bread to soak up the gravy. Certainly may use sliced onions rather than chopped.Note: After some of the reviews I realized that even though it is quick to put together the cooking does take some time so I have changed the title.

4 cube steaks
seasoned flour
1/2 cup water
1 (10 1/2 ounce) can cream of mushroom soup
1 medium onion, finely chopped
1 -2 teaspoon Kitchen Bouquet

Steps:

  • Dredge steak in flour & brown quickly in hot oil. Mix soup & water & pour over meat, Top with onion. Cover & simmer for 1 hour. Add kitchen bouquet to taste.

Comfort food yum! Golden, cake-like crust. Can replace a portion of the chicken with an equal amount of frozen, thawed veggies, or stir a cup of shredded cheese into the soup mixture. Suggest broccoli and cheddar. May substitute fat-free soup for less calories. From Southern Living January 2007

4 cups cooked chicken, chopped
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 1/2 cups chicken broth
2 tablespoons cornstarch
1 1/2 cups self-rising flour
1 cup buttermilk
1/2 cup butter, melted

Steps:

  • Place chopped cooked chicken in a lightly greased 12x8 inch baking dish.
  • Whisk together cream of chicken soup, chicken broth, and cornstarch.
  • Pour mixture evenly over chicken.
  • Whisk together self-rising flour, buttermilk, and melted butter.
  • Spoon batter evenly over chicken mixture.
  • Bake at 400 degrees Fahrenheit for 40 minutes or until crust is golden brown.

Good ole Southern Cooking at it's best. I looked forward to these every summer when the fresh black eyed peas were plentiful. Maw Maw would get them by the bushel, we'd sit out back under the big old oaks in the afternoon, enjoy the breeze & shell peas. Once she cooked them up, you knew it was worth all the effort. Add some cornbread & sliced home grown tomatoes and you didn't need anything else. Fresh Frozen Black Eyed Peas come close. They taste much fresher than dried peas, and taste like summer even in the winter.

16 ounces frozen black-eyed peas
1 ham hock
1 tablespoon bacon grease
salt (be careful Ham is salty)
black pepper
water, to cover and bring all to a boil

Steps:

  • Based on the amount of Peas you are cooking, add water to Pot.
  • Start to bring to a boil.
  • Take Ham Hock and score skin side if needed and add to pot.
  • Boil Ham Hock for about 20 minutes to season water, add Bacon Grease & stir until melted.
  • Add Peas.
  • Boil at a rapid boil for the first 20 minutes, then turn down to a low boil and cover pot. Continue cooking until Peas are getting soft.
  • Take a taste.
  • Season with Salt & Pepper to your taste.

My mother brought this recipe home from her Home Economic class (in the late 50's)and my Maw Maw has been making it ever since. My mom, aunts, cousins and myself all enjoy the recipe now. It's a moist cake with a delicious topping!

1 1/2 cups boiling water
1 cup quick-cooking oats
1 cup sugar
1 cup light brown sugar
1/2 cup shortening
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons butter, melted
1/2 cup light brown sugar
1 teaspoon vanilla
1/4 cup evaporated milk
1 cup chopped pecans
1 cup shredded coconut

Steps:

  • Preheat oven to 350°F.
  • Pour boiling water over quick oats and let stand for about 15-20 minutes, while you begin mixing up the cake.
  • In a mixing bowl, combine sugar, brown sugar, shortening, and eggs, mixing well.
  • Sift together flour, baking soda, cinnamon, and salt; add to sugar mixture.
  • Add oatmeal and mix well.
  • Pour batter into a 9X13-inch greased cake pan.
  • Bake for about 30 minutes, or until cake tests done.
  • For topping, combine all topping ingredients.
  • Prick holes in the top of the cake with a toothpick or ice pick.
  • Spread icing over the top of warm cake.
  • Place cake under the broiler for just a minute or two until topping starts to brown.
  • (My oven browns quickly and only takes 1-2 minutes, so watch closely!).
