110 Calorie Crustless Veggie Quiche image

A lightened-up, healthy crustless quiche with heavy flavor and little calories. Get creative and use your favorite vegetables and spices!

1 and 1/2 cups sliced yellow squash (2 small or 1 very large)
1 and 1/2 cups sliced zucchini (2 small or 1 very large)
1 large orange bell pepper, chopped (or any color)
2 cloves garlic, minced
2 teaspoons dried thyme (or fresh chopped)
3 large eggs
3 large egg whites
3/4 cup milk*
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2/3 cup shredded cheese*
2 Tablespoons grated parmesan cheese

Steps:

  • Heat a large skillet over medium-high heat. Spray with nonstick spray and add sliced squash and zucchini, chopped pepper, garlic, and thyme. A little pinch of salt and pepper, too. (The rest of the salt and pepper called for in the recipe goes into the egg mixture, so just use a pinch here). Stirring frequently, cook for 6-7 minutes or until veggies are tender. Spoon into a bowl and allow to cool as you prepare the egg mixture.
  • Preheat oven to 350°F (177°C). Spray a 9-inch pie pan or square pan with nonstick spray. Set aside.
  • In a large bowl, whisk the eggs, egg whites, milk, salt, and pepper together until thoroughly combined. Arrange veggies into the prepared pan. Top with shredded cheese, then pour the egg mixture on top. Sprinkle with grated parmesan cheese.
  • Bake for 45 minutes or until filling is set and no longer jiggles. Cool for 10 minutes on a wire rack before slicing and serving. (Note that it can be a little watery on the bottom, even after cooking and cooling, since there are so many vegetables with no crust.)
  • This quiche makes great leftovers! Store tightly covered in the refrigerator for up to 4 days.

½ cup sliced onion
½ cup chopped green bell pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake pie crust in preheated oven until firm, about 8 minutes. Remove crust from oven and set aside. Reduce oven heat to 350 degrees F (175 degrees C).
  • Heat olive oil in a large skillet over medium heat. Cook and stir onion, green bell pepper, mushrooms, and zucchini in hot oil until soft, 5 to 7 minutes. Remove vegetables from skillet and set aside.
  • Sprinkle tomato slices with flour and basil; cook in the skillet for 1 minute per side.
  • Whisk eggs, milk, salt, and pepper together in a small bowl.
  • Spread 1 cup Colby-Monterey Jack cheese in the bottom of pie crust. Layer vegetable mixture over the cheese and top with the tomatoes. Pour egg mixture into pie shell. Sprinkle remaining 1/2 cup cheese atop the quiche.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 40 to 45 minutes. Cool 5 minutes before serving.

In my family, we make two kinds of dishes for Passover: all kinds of chicken recipes and all kinds of vegetable recipes. It's definitely alot healthier. When it comes to paprika and garlic powder always err on the side of taste. In the ingredient list I added what I used, but you can add or decrease as much as you like.

3 large tomatoes
2 cups frozen mixed vegetables (broccoli, cauliflower, carrots, yellow zucchini)

1 frozen pie shell *see ingredient note
2 ½ cups finely chopped veggies such as zucchini, mushrooms, broccoli and peppers
5 large eggs
½ cup half and half or low fat milk
2 teaspoons Dijon mustard
¾ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon ground pepper or white pepper
Pinch nutmeg or dried tarragon
1 ½ cups freshly shredded cheese, such as cheddar, Fontina, Gruyere or Swiss, divided (6 oz)

Steps:

  • Arrange oven rack in the lower third of the oven. Preheat oven to 375 degrees F.
  • Combine veggies and ¼ cup water in a microwave safe bowl. Cover with a layer of parchment and plastic wrap. Microwave on high for 4 minutes. Carefully remove the cover (watch for steam) and drain the veggies in a fine mesh sieve.
  • Whisk eggs, half and half, mustard, salt, garlic powder, pepper and nutmeg (or tarragon) in a large bowl. Stir in the veggies and 1 cup cheese.
  • Pour the egg mixture into the crust. Top with the remaining ½ cup cheese.
  • Transfer the baking sheet to the rack in the lower third of the oven and bake until the center of the quiche is lightly puffed, and the crust is golden, about 40 to 50 minutes. Let cool 30 minutes before slicing and serving.

On a weeknight, when you don't have the time to work with paper-thin sheets of phyllo, try matzo. Although different from phyllo, it makes an easy framework for a spanakopita-like pie. This pie's dill- and nutmeg-seasoned spinach is made tangy with cottage cheese (which is smooth once blended) and gets a salty hit from feta.

1 medium onion, finely chopped
3 tablespoons olive oil
2 (10-ounce) packages frozen chopped spinach, thawed
1/3 cup plus 2 tablespoons chopped dill, divided
1 (16-ounce) container cottage cheese
2 cups whole milk
3 large eggs
1/4 teaspoon grated nutmeg
6 ounces feta, crumbled (1 1/2 cups), divided
6 matzos (about 6 inches square)

Steps:

  • Preheat oven to 400°F with rack in middle.
  • Cook onion in oil in a large heavy skillet over medium heat, stirring occasionally, until golden, 12 to 15 minutes.
  • Meanwhile, put spinach in a sieve and press out as much liquid as possible. Add spinach to onion and cook, stirring occasionally, 5 minutes. Remove from heat and stir in 1/3 cup dill, 3/4 teaspoon salt, and 1/2 teaspoon pepper.
  • Purée cottage cheese in a blender with milk, eggs, nutmeg, and 1/2 teaspoon each of salt and pepper until smooth. Reserve 2 cups in a bowl and stir remainder into spinach with 1 cup feta.
  • Stack matzos in a deep dish and pour reserved cottage-cheese mixture over them. Let stand 15 minutes to soften.
  • Arrange 2 soaked matzos side by side in a generously oiled 13- by 9- by 2-inch (3-quart shallow) baking dish. Pour in half of spinach filling. Cover with 2 more matzos, then pour in remaining filling. Put remaining 2 matzos on top and pour any remaining cottage-cheese mixture over them. Sprinkle with remaining 1/2 cup feta.
  • Bake, uncovered, until golden and set, 30 to 35 minutes. Cool 10 minutes, then serve sprinkled with remaining 2 tablespoons dill.

This is one of a number of quiche recipes I use, but nothing's faster than this particular one. It's made with any type of cheese, or a mixture of leftover cheeses; with spinach or broccoli, or whatever is in the freezer. The vegetable soup mix has all the seasonings and adds nice spots of color, too. (Not sure if the Knorr soup is 1.25 oz, but I had to have a measurement or it couldn't print.)

Steps:

  • Sautee veggies in oil until tender.
  • Remove veggies and allow to cool.
  • Beat eggs in bowl, add salt and pepper add cool veggies to eggs and mix well.
  • Spray glass pie plate with cooking spray.
  • Pour half of the egg mixture in pie plate.
  • Add the cheese slices.
  • Top with remaining egg mixture.
  • Bake at 350 degrees for 15-17 minutes.

1/3 cup oat bran
1 tablespoon chilled butter
1 tablespoon applesauce
3 tablespoons cold water
1 small eggplant

1/2 zucchini
1/2 summer squash
2 cups fresh spinach
3/4 cup mushroom
1/2 onion, diced
3/4 teaspoon basil
3/4 teaspoon oregano

1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1 cup Egg Beaters egg substitute
2/3 cup grated parmesan cheese

Steps:

  • To prepare crust, combine oats and oat bran; cut in butter and applesauce with a pastry blender or 2 knives until mixture resembles coarse meal.
  • Add water; stir just until moist.
  • Press mixture gently into a ball on wax paper, and cover with additional wax paper.
  • Roll dough, still covered, into a 10-inch circle.
  • Remove 1 sheet of wax paper, and fit dough into a 9-inch pie plate coated with cooking spray.

  • Cool on a wire rack.

  • Blend and continue cooking until almost all juice is evaporated.

  • Combine with vegetable mixture.
  • Pour ½ vegetable mixture into quiche crust.
  • Sprinkle rest of Parmesan cheese and ½ mozzarella evenly over mixture.

  • Quiche should be set and well browned.

1 green bell pepper, diced
2 cups cheddar cheese, shredded
2 tablespoons flour

  • Start preheating oven to 375. While that is happening --
  • Saute onions, peppers, and mushrooms in one tbsp butter or margarine over medium heat for 10 minutes.

Adapted from http://stephfourie.wordpress.com ---------- Pair with a side salad for lunch, or a rice pilaf for dinner. You can also put it in a pie shell, with or without the sweet potato layer. I used phyllo dough, which makes for a beautiful presentation, and just mixed the sweet potato in with the rest of the ingredients. Because the egg mixture didn't look to be enough, I ended up using just over a cup of coconut milk and 5 eggs. Play around with the vegetable choices to suit your household. This is delicious served hot for dinner, and cold for breakfast the next morning.

  • Mix milk and eggs in a bowl and whisk briskly for about 30 seconds. Using the oil gently sauté the onions, garlic, broccoli and mushrooms for about 4-5 minutes. Season with salt & pepper
  • Transfer vegetables into prepared egg mixture and stir to coat the vegetables with eggs. Pour egg mixture over sweet potatoes and gently even it out with a spatula.
  • Bake for 35 minutes. Then, turn the oven off and let the quiche sit in the oven for additional 10 minutes so the eggs can set.
