CRAB LEGS WITH GARLIC BUTTER SAUCE
I ended up getting some snow crab legs on sale at the market. I wanted something a little different from plain steamed, boiled, or grilled crab legs, so I ended up throwing a few things together to make this awesome crab leg dish. Enjoy! This would be great with shrimp as well.

OLD BAY KING CRAB LEGS
The classic seafood seasoning and lemon bring heat and brightness to sweet crab meat. The only way to improve it is with a dunk in drawn butter.

Steps:
- Put the crab legs in the bottom of a large stockpot, then cover with 4 quarts of water and stir in the seafood seasoning (see Cook's Note). Halve the lemons and squeeze the juice into the pot, then add the rinds. Cover and bring to a boil, then cook over medium-high heat until the crab legs are warmed through, about 5 minutes. Remove the crab legs to a large serving bowl or platter.
- Meanwhile, melt the butter in a small saucepan over medium-low heat. Cook until the butter foams and simmers, about 1 minute. Remove from the heat and let stand 5 minutes. Using a spoon, remove any milk solids from the surface of the butter, then slowly pour the melted butter into a small serving bowl, leaving any watery, white whey behind in the saucepan. Serve alongside the crab legs.
MARYLAND STYLE SNOW CRAB LEGS
If you are a north easterner and live in the south, then you know the frustration with boiled seafood vs. steamed. Well this recipe gets you back to Richmond, Baltimore, Philly, NY or Boston... Use 20 qt Stock Pot... Using cheap beer actually adds to the taste of the crab. The bitterness of the beer will counterbalance the sweetness of the crab and will be lit up with the spices in the Old Bay. So don't use expensive beer, your run of the mill standard domestic will do.. Enjoy!!!

Steps:
- You will also need: Big pot with water.
- Season the water with a couple dashes of garlic salt, some fresh ground pepper to taste, and about 1/2-1 cup of old bay.
- Remember these are outside shells and you're trying to penetrate flavor to the inside, although if you buy the good legs they should be slit (at least the claws) for easy access.
- Then squeeze all the lemons into the water and throw them into the pot, too.
- Then put the legs into the water.
- The water should boil, watch it to make sure it doesn't boil over and make a big mess!
- It should take at least 15 minutes to come to a boil, let boil for 4-5 more minutes so they can get a nice flavor in them.
- Dump in sink in colander, and let cool for a couple minutes.
- If you think it might be too spicy for ya then rinse it off a little bit.
- Meanwhile heat you up some butter, maybe 1/2 stick in microwave, in a couple small bowls and squeeze some lemon in it.
- Perfect for dipping the crab in!
- But only if ya like lemon--if not just heat up the butter to dip the crab into.
- Enjoy!

- Add the butter, olive oil, garlic, fresh parsley, Old Bay, granulated garlic, granulated onion, dried parsley, dried dill, and crushed red pepper flakes to a large skillet or braising dish over medium heat. As the butter melts, stir everything around. Give it a taste, and add sea salt and black pepper as needed. Cook for about 2 minutes, then reduce the heat to low.
- Add the crab legs, one cluster at a time, and with a large spoon baste the crabs with the butter mixture thoroughly. Get every nook and cranny. Continue until all of the crabs are in the pan. Nestle the chunks of corn in, and baste those with the butter mixture too. You may have to tilt the pan towards you to make this easier.
- Pour in the beer, and bring the heat back up to medium. Once the beer starts to simmer just slightly, nestle in the lemon wedges. Cover the pan with a domed lid or use heavy-duty foil.
