Macadamia-Maple Sticky Bars image

Layers of texture -- crumbly shortbread and a chewy toffee-like topping -- balance these indulgent bar cookies. Ginger adds unexpected spice.

1/2 cup plus 6 tablespoons (1 3/4 sticks) unsalted butter, softened, plus more for dish
1 1/4 cups all-purpose flour
1/2 teaspoon salt
3/4 cup coarsely chopped toasted macadamia nuts (about 4 ounces)
1/4 cup plus 3 tablespoons packed light-brown sugar
2 teaspoons pure maple syrup
1/4 cup finely chopped crystallized ginger
1/4 cup plus 1 1/2 teaspoons maple sugar
2 tablespoons light corn syrup
3 tablespoons heavy cream

Steps:

  • Butter an 8-inch square baking dish; line with parchment, allowing a 2-inch overhang on 2 sides. Butter lining (not overhang); set aside. Whisk flour, 1/4 teaspoon salt, and 1/4 cup nuts in a bowl.
  • Preheat oven to 350 degrees. Put 1/2 cup butter and 1/4 cup brown sugar into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy. Mix in flour mixture and 1 teaspoon maple syrup. Press dough evenly into bottom of prepared dish. Refrigerate 30 minutes. Bake until set in center and pale golden, 22 to 25 minutes. Transfer to a wire rack; let cool slightly.
  • Put remaining 6 tablespoons butter and 1/2 cup nuts into a small saucepan. Cook over medium-high heat, stirring constantly, until butter is very foamy and nuts are fragrant, 2 to 3 minutes. Add remaining 1/4 teaspoon salt, 3 tablespoons brown sugar, 1 teaspoon maple syrup, the ginger, maple sugar, corn syrup, and cream. Boil, stirring constantly, 2 minutes. Spread over crust. Let cool completely. Run a knife around non-parchment sides; lift out of dish by overhang. Cut into sixteen 2-inch squares.

These squares are my husband's favorite. We get some real, pure maple syrup from back home in Ontario, Canada, and they are just to die for. Hope you enjoy as much as we do.

1 cup all-purpose flour
⅓ cup packed brown sugar
½ cup softened butter
1 egg
⅓ cup packed brown sugar
3 tablespoons pure maple syrup
½ cup chopped pecans

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the flour and 1/3 cup brown sugar in a mixer. Mix in the softened butter until a dough has formed. Press into an ungreased 8x8-inch baking dish, and prick with a fork.
  • Bake the shortbread in the preheated oven until golden brown, about 20 minutes. While the shortbread is baking, beat the egg in a mixing bowl along with 1/3 cup brown sugar, maple syrup, and pecans. Pour the pecan mixture over the hot crust, and return to the oven. Continue baking until firmed, 12 to 15 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking. Cool completely, then cut into 1-inch squares to serve.

2 1/4 cups all-purpose flour, plus more for work surface
1/2 cup cake flour, (not self-rising)
1/2 teaspoon salt
3/4 cup pecan halves (about 2 1/4 ounces), finely chopped
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup granulated sugar
1/4 cup pure maple syrup
1 large egg yolk
1/4 teaspoon pure maple extract
1 large egg, lightly beaten
Turbinado sugar, for sprinkling

Steps:

  • Preheat oven to 350 degrees. Line baking sheet with parchment paper; set aside. Into a medium bowl, sift flours and salt. Whisk in 1/2 cup chopped pecans; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and granulated sugar on medium-high speed until smooth and light, about one minute. Add the maple syrup, egg yolk, and extract; beat on medium speed until well combined. On low speed, gradually add flour mixture, beating until just combined. Dough should be smooth and pliable. Flatten into a disk. Wrap in plastic; chill until firm, 1 1/2 hours or overnight.
  • On a lightly floured work surface, roll out dough to 1/4 inch thick. Cut out rounds using a two-inch cookie cutter; place one inch apart on prepared baking sheet. Brush tops with beaten egg; sprinkle centers with remaining 1/4 cup pecans. Sprinkle the entire surface with turbinado sugar.
  • Bake cookies, rotating baking sheet halfway through, until golden around the edges, 10 to 12 minutes. Transfer to a wire rack to cool.

1 cup butter or margarine, softened
3/4 cup maple sugar or granulated sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 3/4 cups Gold Medal™ all-purpose flour
1 cup finely chopped pecans, toasted
1/4 cup coarse sugar
40 pecan halves, if desired
3 tablespoons real maple syrup

Steps:

  • In large bowl, beat butter, 1/2 cup of the maple sugar, the vanilla and salt with electric mixer on medium speed 3 minutes or until light and fluffy. On low speed, gradually add flour, beating just until blended. Stir in chopped pecans.
  • Shape dough into 11x2-inch log. Mix remaining 1/4 cup maple sugar and coarse sugar; roll dough log in sugar mixture, pressing lightly to coat. Wrap in plastic wrap; refrigerate 2 hours or until firm.
  • Heat oven to 350°F. Unwrap dough; cut into 40 (1/4-inch) slices. On ungreased cookie sheets, place slices 1 inch apart. Top each slice with pecan half.
  • Bake 12 to 14 minutes or until edges are golden brown. Cool 2 minutes; remove from pans to cooling racks to cool completely. Brush cookies with maple syrup. Let stand until dry.

This recipe, adapted from "The New Carryout Cuisine" by Phyllis Méras with Linda Glick Conway, was one she turned to in the trying days that followed. A mere two steps, and ready in less than an hour, it's comfort in a pan, just as good for when the darkness creeps up as it is for those days when you just need a bit more. And to those who might scoff at the two sticks of butter? Consider taking Schrambling's words to heart: "Abstemiousness," she wrote, "is not an option when you're feeling low."

Steps:

Press into bottom and half an inch up the sides of a 9- by 13-inch baking pan. Bake 15 minutes, or until edges begin to brown. Cool on rack.
  • For filling, combine all ingredients except pecans, and mix until smooth. Pour into cooled crust. Distribute nuts evenly over top. Bake 30 minutes, or until filling is set. Cool on a rack before cutting.

  • DOUGH: In the bowl of a stand mixer, beat the butter for 1 minute. Then add the powdered sugar and cream them together, for another minute. Add the maple and vanilla extracts and combine. Then add the ground cinnamon and flour until the flour is mostly mixed in. The dough will be shaggy and that’s okay. Add the chopped pecans with the mixer on the stir setting until evenly dispersed. Expect the dough to be quite thick!
  • ROLL: Flour a clean work surface, I like to do this on a silicone mat placed on the counter. Dump out the dough and pull it together into a disc without working it too much, sprinkling with a little bit of flour if it’s sticking. Divide the dough into two equal pieces then roll each piece into a 10-inch log that is about 2 inches in diameter. In a bowl, combine the coarse sugar and chopped pecans. Spread the sugar and pecan mixture over your clean work surface and roll the logs in the mixture until both logs are coated. Wrap each individual log in plastic wrap and refrigerate for at least 1 hour or longer. It's easier to slice the dough if it's chilled. You can make this up to 4 days in advance and refrigerate. Don't discard pecan sugar mixture; you can sprinkle a pinch on each cookie before baking, if desired.
  • BAKE: Position a rack in the center of the oven and preheat the oven to 350ºF. Line a baking sheet with parchment paper. When the oven has reached 350ºF, remove one log from the refrigerator and cut the log into 14 equal pieces using a sharp knife. Place the cookies on the lined baking sheet, about 1 ½ inches apart. You can sprinkle the cookies with the remaining pecan sugar mixture if you’d like. Bake for roughly 14 - 17 minutes or until golden around the edges. Allow the cookies to rest on the cookie sheet for 5 minutes before moving to a cooling rack.
