EGG SALAD SANDWICH



Egg Salad Sandwich image

A round loaf of bread instantly elevates this Egg Salad Sandwich, making it the perfect dish to serve at your next picnic.

6 hard-boiled eggs, peeled and roughly chopped
1/4 cup Homemade Mayonnaise, or prepared mayonnaise, plus more for spreading
1/2 teaspoon dry mustard powder, or 3/4 teaspoon Dijon mustard
3 tablespoons diced celery
Salt and freshly ground black pepper
1/4 teaspoon mild Madras curry powder, (optional)
1 8-inch round bread loaf, cut in half crosswise
Dijon mustard for spreading (optional)
1 small head radicchio
1 small bunch arugula

Steps:

  • In a medium bowl, combine eggs, mayonnaise, mustard powder, celery, salt and pepper to taste, and curry powder, if using. Gently mix until combined.
  • Spread the inside of the bread halves with a layer of mayonnaise and mustard, if using. Line the bottom half with radicchio and arugula leaves, and top with the egg salad. Cover with the top half, and cut the sandwich into wedges. Serve immediately.

9 hard-boiled eggs, peeled and chopped
1/3 cup homemade or best-quality storebought mayonnaise, plus more for spreading
1 medium celery stalk, diced
3/4 teaspoon dry mustard, or 1 teaspoon Dijon mustard
1/4 teaspoon mild Madras-style curry powder (optional)
Coarse salt and freshly ground pepper
8 to 12 slices whole-grain bread
1 small head radicchio, leaves separated
1 small bunch arugula, trimmed (optional)

Steps:

  • Stir together eggs, mayonnaise, celery, dry mustard, and curry, if desired, in a medium bowl. Season with salt and pepper.
  • Spread one side of each slice of bread with mayonnaise. Top half of slices with radicchio, and arugula, if desired; spread with egg salad. Top with remaining bread.

1 avocado
2 tbsp. light mayonnaise
1 tsp. Dijon mustard
1 tbsp. freshly squeezed lemon juice
Coarse salt
Freshly ground pepper
12 slice white sandwich bread (such as Pullman)
Boston lettuce (optional)
arugula (optional)
Tomato slices (optional)

Steps:

  • Using a pastry blender or fork, mash together egg whites and yolks in a large bowl; carefully fold in avocado. Stir in mayonnaise, mustard, and lemon juice; season with salt and pepper.
  • Place 6 slices of bread on a work surface. Evenly divide egg salad among bread slices. Add lettuce greens or tomato, if desired. Top with remaining 6 slices bread. Serve.

1 apple, such as McIntosh or Gala, peeled, cored, and cut into 1/4-inch pieces
3 tablespoons light mayonnaise, preferably Ojai Cook's Lemonaise Light
2 tablespoons freshly chopped basil leaves
1 tablespoon freshly squeezed lemon juice
Coarse salt and freshly ground pepper
8 slices best-quality sourdough

Steps:

  • In a medium bowl, combine tuna, celery, apple, mayonnaise, basil, and lemon juice; mix well. Season with salt and pepper.
  • On a work surface, divide tuna salad among 4 slices bread; top with remaining 4 slices bread. Serve.
