EASY BEEF CHILI



Easy Beef Chili image

No beans in this hearty ground beef-based chili! The meat is cooked with aromatics, then amped up with fire-roasted tomatoes, chili powder, and cocoa.

2 pounds ground beef, preferably 85-percent lean
2 medium yellow onions, chopped (3 cups)
3 cloves garlic, finely chopped (1 tablespoon)
1 jalapeno (seeds and ribs removed for less heat, if desired), finely chopped (4 teaspoons)
Kosher salt and freshly ground pepper
2 tablespoons chili powder
2 tablespoons Dutch-process cocoa powder
2 tablespoons tomato paste
1 can (28 ounces) fire-roasted diced tomatoes
2 cups low-sodium chicken broth
Sour cream and finely sliced chives or scallions, for serving

Steps:

  • Place a large pot or Dutch oven over medium-high heat. Add beef and cook, breaking up with the back of a spoon, until cooked through, about 6 minutes. Using a slotted spoon, transfer beef to paper towels to drain. Discard all but 1 tablespoon fat from pan.
  • Return pot to medium-high heat. Add onions, garlic, jalapeno, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper; cook until onions soften, about 6 minutes. Add chili powder, cocoa, and tomato paste; cook until fragrant, about 2 minutes more.
  • Add tomatoes, broth, and cooked beef. Bring to a boil, then reduce heat to medium-low and simmer, partially covered, until thickened slightly, 25 to 30 minutes. Season with salt and pepper; serve with sour cream and chives.

Serve this chunky sirloin version of chili in a tin cup, for a dish that warms not only the stomach but also the hands.

Number Of Ingredients 16

4 1/2 cups water, plus 5 cups warm water
4 dried ancho chiles
4 dried guajillo chiles
4 dried mulato chiles
1 dried chipotle chile
8 garlic cloves, unpeeled
1 can (28 ounces) whole peeled tomatoes
1/4 teaspoon ground cumin
1/2 teaspoon dried oregano
Coarse salt and freshly ground pepper
1 teaspoon white vinegar
5 tablespoons extra-virgin olive oil, divided
4 pounds beef sirloin, cut into 3/4-inch cubes
2 cups finely chopped onion (from 1 large onion)
2 cans (14.5 ounces each) kidney beans, drained and rinsed
Sour cream, shredded cheddar cheese, and jalapeno chile slices, for serving (optional)

Steps:

  • Bring 4 1/2 cups water to a boil in a saucepan. Preheat oven to 300 degrees. Spread ancho, guajillo, mulato, and chipotle chiles and garlic on a baking sheet. Roast until softened, about 7 minutes. Let cool slightly.
  • Tear chiles into pieces, discarding stems and seeds. Add to boiling water, remove from heat, and top with a smaller plate to keep chiles submerged. Let stand 30 minutes. Drain, reserving 1 cup water. Puree chiles, reserved chile water, the tomatoes and their juices, and 5 cups warm water in a blender.
  • Peel garlic. Pound garlic, cumin, oregano, 2 teaspoons salt, and the vinegar into a paste with a mortar and pestle.
  • Heat 1 1/2 tablespoons oil in a Dutch oven or other large heavy pot over medium-high heat. Season beef generously with salt and pepper. Working in batches and adding more oil as needed, cook beef until browned all over, 2 to 3 minutes. Transfer to a plate.
  • Reduce heat to medium. Add onion to pot, and cook until translucent, about 5 minutes. Stir in garlic paste, and cook until fragrant, about 2 minutes. Stir in beef and chile puree, and season with salt and pepper. Raise heat, partially cover pot, and simmer chili until thickened, about 2 1/2 hours. Stir in beans, and cook until heated through. Serve with sour cream, cheese, and jalapeno.

30-MINUTE CHILI



30-Minute Chili image

This easy chili recipe makes eight one-cup servings; if you reserve half, you'll also have enough for four servings of our Cheesy Hash-Brown Bake, a stick-to-your-ribs meal for later in the week.

1 tablespoon vegetable oil
3 medium onions, chopped
6 garlic cloves, chopped
Coarse salt and ground pepper
1 can (6 ounces) tomato paste
3 tablespoons chili powder
2 tablespoons chopped canned chipotle chiles in adobo sauce
1/2 teaspoon ground cinnamon
3 pounds ground beef chuck
3 cans (14.5 ounces each) diced tomatoes in juice
1 bottle (12 ounces) mild lager beer
2 cans (14.5 ounces each) kidney beans, rinsed and drained
Shredded cheddar cheese (optional)

Steps:

  • In a Dutch oven or large (5-quart) heavy pot, heat oil over medium-high. Add onions and garlic. Season with salt and pepper, and cook, stirring occasionally, until softened, 3 to 5 minutes.
  • Add tomato paste, chili powder, chipotles, and cinnamon. Cook, stirring, until mixture has begun to brown, 2 to 3 minutes. Add beef, and cook, breaking it up with a spoon until no longer pink, about 5 minutes.
  • Add tomatoes with their juice, beer, and beans. Bring to a boil, and reduce to a rapid simmer. Cook over medium heat until chili has thickened slightly and beans are tender, about 5 minutes. Sprinkle with cheese, if desired.

Always serve with some combination of fixings, such as grated cheese, sour cream, sliced avocados, tomatoes, onions or scallions, or cilantro. Garnish with tortilla chips or crumble in cornbread.

5 dried red chiles (Mexican ancho, New Mexican Hatch, or Anaheim)
1 tablespoon olive oil
1 cup chopped onion
3 garlic cloves, minced (1 tablespoon)
2 pounds ground beef
1 tablespoon coarse salt
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes, or pinch of cayenne pepper
1/2 teaspoon dried oregano
1 bay leaf
1/4 cup pickled jalapenos, chopped (optional)
1 28-ounce can tomatoes, broken up, with juice
12 ounces beer
1 15-ounce can beans (pinto, kidney, black, or a combination), drained

Steps:

  • In a dry large skillet over high heat, lightly toast both sides of the chiles for a few minutes. After roasting, remove from pan to slice open, then remove and discard the stem and seeds. Cover the chiles in boiling water and let soften for 5 minutes. In a blender or food processor, puree the chiles with enough soaking liquid to form a thick paste.
  • Heat the skillet again over medium-high heat, and then add the olive oil. Saute the onion and garlic until translucent, about 3 minutes. Increase the heat and add the beef and 2 teaspoons of the salt. Brown the beef, stirring occasionally to pick up browned bits on the bottom of the pan as the moisture evaporates, about 15 minutes. If the meat is excessively fatty (your judgment call), spoon off some of the fat, but leave some for flavor.
  • Stir in the cumin and cook for 30 seconds. Add the chile paste, red pepper flakes, oregano, bay leaf, jalapenos, and the remaining teaspoon of salt. Stir to combine well.
  • Add the tomatoes and beer and simmer for 30 minutes. Add the beans and cook for an additional 20 minutes. Add water if needed for desired consistency. Serve with preferred condiments.

VEGETARIAN CHILI

1 medium yellow onion, diced medium

1 medium zucchini, cut into 1/2-inch dice
3/4 cup (6 ounces) tomato paste
1 can (15.5 ounces) black beans, rinsed and drained
1 can (15.5 ounces) pinto beans, rinsed and drained
1 can (14.5 ounces) diced tomatoes with green chiles
1 can (14.5 ounces) diced tomatoes

Steps:

  • In a large pot, heat oil over medium-high. Add onion and garlic; cook, stirring frequently, until onion is translucent and garlic is soft, about 4 minutes. Add cumin and chile powder, season with salt and pepper, and cook until spices are fragrant, 1 minute. Add zucchini and tomato paste; cook, stirring frequently, until tomato paste is deep brick red, 3 minutes. Stir in black beans, pinto beans, and both cans diced tomatoes. Add 2 cups water and bring mixture to a boil. Reduce to a medium simmer and cook until zucchini is tender and liquid reduces slightly, 20 minutes. Season with salt and pepper.

1 (16 ounce) can ortega whole green chilies, drained
4 eggs, separated
1 lb monterey jack cheese, grated

Steps:

  • Preheat oven to 325 degrees F. In a small mixing bowl, beat egg whites with electric mixer until fluffy; add yolks and continue to beat for 3 minutes.
  • In an 8 or 9-inch square baking dish, put a layer of green chiles. Put one layer of jack cheese; continue putting one layer of each until you reach the rim of pan. Pour egg over last layer.
  • Bake in 325 d F oven for 1 hour.
  • Let cool to room temp, then cut and serve.
  • Makes @ 6 servings.
