EASY BEEF CHILI
No beans in this hearty ground beef-based chili! The meat is cooked with aromatics, then amped up with fire-roasted tomatoes, chili powder, and cocoa.

Steps:
- Place a large pot or Dutch oven over medium-high heat. Add beef and cook, breaking up with the back of a spoon, until cooked through, about 6 minutes. Using a slotted spoon, transfer beef to paper towels to drain. Discard all but 1 tablespoon fat from pan.
- Return pot to medium-high heat. Add onions, garlic, jalapeno, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper; cook until onions soften, about 6 minutes. Add chili powder, cocoa, and tomato paste; cook until fragrant, about 2 minutes more.
- Add tomatoes, broth, and cooked beef. Bring to a boil, then reduce heat to medium-low and simmer, partially covered, until thickened slightly, 25 to 30 minutes. Season with salt and pepper; serve with sour cream and chives.

- Bring 4 1/2 cups water to a boil in a saucepan. Preheat oven to 300 degrees. Spread ancho, guajillo, mulato, and chipotle chiles and garlic on a baking sheet. Roast until softened, about 7 minutes. Let cool slightly.
- Tear chiles into pieces, discarding stems and seeds. Add to boiling water, remove from heat, and top with a smaller plate to keep chiles submerged. Let stand 30 minutes. Drain, reserving 1 cup water. Puree chiles, reserved chile water, the tomatoes and their juices, and 5 cups warm water in a blender.
- Peel garlic. Pound garlic, cumin, oregano, 2 teaspoons salt, and the vinegar into a paste with a mortar and pestle.
- Heat 1 1/2 tablespoons oil in a Dutch oven or other large heavy pot over medium-high heat. Season beef generously with salt and pepper. Working in batches and adding more oil as needed, cook beef until browned all over, 2 to 3 minutes. Transfer to a plate.
- Reduce heat to medium. Add onion to pot, and cook until translucent, about 5 minutes. Stir in garlic paste, and cook until fragrant, about 2 minutes. Stir in beef and chile puree, and season with salt and pepper. Raise heat, partially cover pot, and simmer chili until thickened, about 2 1/2 hours. Stir in beans, and cook until heated through. Serve with sour cream, cheese, and jalapeno.

- In a Dutch oven or large (5-quart) heavy pot, heat oil over medium-high. Add onions and garlic. Season with salt and pepper, and cook, stirring occasionally, until softened, 3 to 5 minutes.
- Add tomato paste, chili powder, chipotles, and cinnamon. Cook, stirring, until mixture has begun to brown, 2 to 3 minutes. Add beef, and cook, breaking it up with a spoon until no longer pink, about 5 minutes.
- Add tomatoes with their juice, beer, and beans. Bring to a boil, and reduce to a rapid simmer. Cook over medium heat until chili has thickened slightly and beans are tender, about 5 minutes. Sprinkle with cheese, if desired.
CHILI
Always serve with some combination of fixings, such as grated cheese, sour cream, sliced avocados, tomatoes, onions or scallions, or cilantro. Garnish with tortilla chips or crumble in cornbread.

- In a dry large skillet over high heat, lightly toast both sides of the chiles for a few minutes. After roasting, remove from pan to slice open, then remove and discard the stem and seeds. Cover the chiles in boiling water and let soften for 5 minutes. In a blender or food processor, puree the chiles with enough soaking liquid to form a thick paste.
- Heat the skillet again over medium-high heat, and then add the olive oil. Saute the onion and garlic until translucent, about 3 minutes. Increase the heat and add the beef and 2 teaspoons of the salt. Brown the beef, stirring occasionally to pick up browned bits on the bottom of the pan as the moisture evaporates, about 15 minutes. If the meat is excessively fatty (your judgment call), spoon off some of the fat, but leave some for flavor.
- Stir in the cumin and cook for 30 seconds. Add the chile paste, red pepper flakes, oregano, bay leaf, jalapenos, and the remaining teaspoon of salt. Stir to combine well.
- Add the tomatoes and beer and simmer for 30 minutes. Add the beans and cook for an additional 20 minutes. Add water if needed for desired consistency. Serve with preferred condiments.

- Preheat oven to 325 degrees F. In a small mixing bowl, beat egg whites with electric mixer until fluffy; add yolks and continue to beat for 3 minutes.
- In an 8 or 9-inch square baking dish, put a layer of green chiles. Put one layer of jack cheese; continue putting one layer of each until you reach the rim of pan. Pour egg over last layer.
- Bake in 325 d F oven for 1 hour.
- Let cool to room temp, then cut and serve.
