Chicken Burgers with Spiced Rub image

A simple and delicious way to serve up chicken burgers at your next gathering!

Number Of Ingredients 25

4 lbs. boneless-skinless chicken breast - cubed
for the burgers:
2 - 3 tbs. sun dried tomatoes - chopped
2 cloves garlic - chopped
juice and zest of 1 lemon
¼ cup cilantro - chopped
1 tsp. salt
1 tsp. black pepper
½ cup romano or parmesan cheese - grated
1 scallion - chopped
1 tbs. olive oil
for the rub:
1 tsp. paprika
1 tsp. salt
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. chili powder
1 tsp. ground oregano
1 tsp. ground cumin
honey mustard dressing for the salad greens:
2 - 3 tablespoons smooth mustard - your favorite
2 tablespoons balsamic vinegar
2 - 3 tablespoons honey
¼ tsp. salt
¼ tsp. black pepper

Steps:

  • 1. For the Burgers & Rub Combine all of the ingredients for the rub in a medium sized bowl and set aside. Place the cubed chicken a little at a time in the food processor and process to desired consistency. Place the ground chicken in a large bowl and add the remaining ingredients for the burgers. Shape the burgers into a ball and roll in the rub; then flatten the burgers to desired thickness. Grill burger until juices run clear. The cooking time depends on the thickness of the burger. Serve with your favorite lettuce, tomato and cucumber. Honey Mustard Dressing for the Salad Greens Combine all of the above ingredients in a small bowl and whisk. Adjust the flavors for the dressing to your liking. Use on salad and for burger.

It's everything you love about wings, only in burger form! Spicy Buffalo Chicken Burgers have a secret to keep them juicy and flavorful: shredded carrot and celery in the burger!

For the burgers
1 pound ground chicken
1/2 cup panko breadcrumbs
2 tablespoons grated carrot
2 tablespoons grated celery
2 tablespoons Franks hot sauce, plus extra for serving
1/2 teaspoon kosher salt
1/2 teaspoon granulated garlic
1/4 teaspoon black pepper
To serve
4 potato hamburger
Butter lettuce
Blue Cheese Sauce

Steps:

  • Preheat the grill and rub with oil: Preheat the grill for direct heat grilling, by turning gas burners to medium-high or spreading charcoal coals so there is direct heat under the grilling grates. The temperature should be 450-500˚F. To make sure the burgers do not stick, dip a kitchen towel or some paper towels in oil and use tongs to quickly rub down grill grates. Alternatively, you can spray the grates with spray oil, but be careful of flare-ups.
  • Grill the buns: Add buns to the grill next to burgers and grill for 30 seconds. Optionally, you can brush buns with a little butter or oil, but it isn't necessary.
  • Leftovers and storage: Leftover buffalo chicken burgers keep well in the fridge for 3-4 days. They reheat really well in the microwave on high for 1 minute.

1 cup sour cream
2 tablespoons Frank's Red Hot® Sauce
1 lime, juiced
1 lime, zested
1 teaspoon kosher salt
1 ½ lb ground chicken
¼ cup red bell pepper, minced
2 tablespoons Frank's RedHot® Sauce
1 teaspoon garlic powder
1 teaspoon onion powder
3 teaspoons kosher salt
2 tablespoons canola oil
4 slices pepper jack cheese
4 brioche burger buns, toasted
butter lettuce leaf
1 avocado, thinly sliced
pickled chily

Steps:

  • Make the Frank's® Red Hot lime crema: In a small bowl, whisk together the sour cream, Frank's® Red Hot Sauce, lime juice and zest, and salt. Set aside. Crema can be made up to a week in advance, stored in an airtight container in the refrigerator
  • In a large bowl, combine the ground chicken, fresno chiles, Frank's RedHot® Sauce, salt, garlic powder, and onion powder and mix gently with your hands until just combined. Divide the mixture into 4 even portions, then shape into 4-inch (10 cm) patties using wet hands to make it easier to shape.
  • Heat a 12-inch (30 cm) cast iron skillet over medium heat. When the skillet is hot, add the canola oil. When the oil starts to shimmer, add the chicken patties and cook until the bottom is golden brown and the bottom ⅓ of the patty looks cooked with a white hue, about 5 minutes. Flip the patties and add a slice of pepper Jack cheese. Reduce heat to low and continue to cook until the internal temperature of the center of the patties reaches 165°F (75°C), about 5 more minutes .
  • Assemble the burgers: Spread Frank's® Red Hot lime crema on both sides of each bun. Place a lettuce on each bottom bun, then top with the patties, avocado, and pickled fresnos. Top with the top bun and serve immediately.
