To create a good texture for the apple crisp, the general rule of thumb is three parts fruit to one part topping. You can also swap out the apples for pears, nectarines, or peaches.From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon freshly ground black pepper
Pinch of ground cloves
2 tablespoons fresh lemon juice
4 apples, 2 tart and 2 sweet
2 tablespoons granulated sugar
1/8 teaspoon ground cinnamon
1/4 cup all-purpose flour
2 tablespoons cold unsalted butter, cut into small pieces
3/4 cup rolled oats
1/2 cup brown sugar, light or dark
1/4 cup walnuts or pecans, coarsely chopped
1/2 teaspoon coarse salt
3 tablespoons all-purpose flour
1/2 teaspoon coarse salt
6 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • Preheat the oven to 400 degrees. Position a rack in the center of the oven.
  • To prepare the fruit, place the lemon juice in a large bowl. Peel, core, and cut the apples into 1/2-inch wedges, tossing the pieces in the lemon juice as they are cut, to prevent browning.
  • To the apples, add the granulated sugar, cinnamon, and flour. Toss to combine and pour into a buttered 8-by-8-inch square or oval baking pan. Scatter the butter on top.
  • Make the topping in the same bowl. Combine the oats, brown sugar, nuts, flour, salt, and optional spices. Cut in the butter using a pastry blender, a fork, or two knives. Sprinkle the topping evenly over the fruit and bake on the center rack for 40 to 45 minutes, until the topping is dark golden and the apples are bubbling. Cool slightly on a wire cooling rack. Scoop out with a large spoon to serve in bowls.

3/4 cup all-purpose flour, (spooned and leveled)
1/4 cup packed light-brown sugar
1/2 teaspoon salt
1/2 cup plus 2 tablespoons granulated sugar
8 tablespoons (1 stick) unsalted butter, cold, cut into small cubes
1 cup old-fashioned rolled oats (not quick-cooking)
3 pounds apples, such as Empire, Gala, or Braeburn, peeled, cored, and cut into 1/2-inch chunks
2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
  • In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

1 cup old-fashioned rolled oats
1/4 cup light-brown sugar
1/8 teaspoon coarse salt
1/2 stick unsalted butter, melted
2 pounds sweet apples (about 5), such as Braeburn, McIntosh, or Gala, peeled, cored, and cut into 1/2-inch slices
1/4 cup light-brown sugar
1/4 cup dried cherries
1/4 teaspoon ground cinnamon

Steps:

  • Topping: Preheat oven to 375 degrees. Pulse 1/2 cup oats in a food processor until coarsely ground. Transfer to a bowl and add remaining 1/2 cup oats, brown sugar, salt, and butter. Stir until combined.
  • Filling: Toss together filling ingredients in a bowl and transfer to a 9-inch-square baking dish. Sprinkle with topping. Cover with parchment-lined foil and bake 30 minutes. Remove foil and continue baking until apples are tender and topping is golden brown, about 30 minutes more. Let cool slightly before serving.

3 pounds apples, such as Mutsu, peeled cored and chopped
6 tablespoons granulated sugar
1 cup plus 2 tablespoons unbleached all-purpose flour

Kosher salt
1/2 cup packed brown sugar
Vanilla ice cream, whipped cream, or Greek yogurt, for serving

Steps:

  • Preheat oven to 375°F. Brush a 2-quart baking dish with unsalted butter. In a large bowl, toss together apples, granulated sugar, 2 tablespoons flour, lemon juice, cinnamon, and 1/4 teaspoon salt; transfer to prepared dish.

1/4 cup cornstarch
2 tablespoons dark-brown sugar
1/2 teaspoon ground cinnamon
2 cups all-purpose flour
1/4 cup plus 2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into small pieces
1 large egg
2/3 cup heavy cream
Vanilla ice cream, or whipped cream, for serving

Steps:

  • Preheat oven to 375 degrees. Place peaches, cornstarch, dark-brown sugar, and cinnamon in a large bowl. Toss until well combined. Pour mixture into an 8 1/2-by-11 1/2-inch baking dish.
  • In a large bowl, combine flour, 1/4 cup granulated sugar, the baking powder, and salt. Using a fork, two knives, or a pastry blender, cut in the butter until the mixture resembles coarse meal.
  • Whisk together egg and cream in a liquid-measuring cup. Slowly add this mixture to dry ingredients; mix with a fork until dough just comes together. Turn dough out onto a lightly floured board, and roughly shape into a 12-inch log. Using a bench scraper, cut log into twelve equal portions.
  • Place rough balls of dough on top of peach mixture. Sprinkle with remaining 2 tablespoons granulated sugar. Bake until golden brown, about 45 minutes. Transfer pan to a rack, and let cool slightly. Serve with vanilla ice cream or whipped cream.
