This is simply my all-time favorite recipe! The sweet orange marmalade added to the icing and baked right into these golden muffins makes breakfast something to celebrate.

Time 35m

Yield 1 dozen.

Number Of Ingredients 12

2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
2 eggs
3/4 cup milk
2/3 cup orange marmalade
1/4 cup vegetable oil
ICING:
1/4 cup orange marmalade
3 tablespoons cream cheese, softened
1 cup confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, beat the eggs, milk, marmalade and oil. Stir into dry ingredients just until moistened., Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack., In a small bowl, beat the marmalade and cream cheese until fluffy. Stir in confectioners' sugar until smooth. Spread over cooled muffins. Store in the refrigerator.

The marmalade gives these muffins and lively flavour. Any marmalade will do but seville is the best.Found this recipe in one of my pickling books called Small Batch Preserving. I found it easy to make and good as well.

Number Of Ingredients 10

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup sugar
1/4 cup butter or 1/4 cup margarine
2 eggs
1 cup marmalade
1/4 cup orange juice
1/2 cup raisins or 1/2 cup nuts

Steps:

  • Combine flour, baking powder, salt and baking soda in a medium bowl; set aside.
  • Cream sugar and butter; beat in eggs. Stir in marmalade until blended.
  • Fold in 1/2 of the flour mixture. Add orange juice until combined and add the remaining flour mixture and cranberries, raisins or nuts.
  • Spoon into greased medium muffin pan using 1/2 cup of mixture.
  • Bake at 375°F oven for 20 minutes or till lightly brown and firm to the touch.
  • Makes about 18 muffins.

2 cups flour
1/4 cup sugar
2 1/4 teaspoons baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup milk
2/3 cup orange marmalade
1/4 cup vegetable oil (or use melted butter or melted shortening)
1 teaspoon orange extract
1/2 cup orange marmalade
1/2 cup cream cheese, softened
2 cups confectioners' sugar (more if needed)
orange food coloring (optional)

Steps:

  • Set oven to 350°Fs (second-lowest rack).
  • Line 12 regular-size muffin tins with paper liners.
  • In a large bowl combine flour with sugar, baking powder and salt.
  • In another bowl beat eggs with milk, oil and orange extract until well combined.
  • Mix in marmalade until combined.
  • Using a wooden spoon stir the dry ingredients into the marmalade mixture until just combined.
  • Divide the mixture between each muffin tin.
  • Bake for about 18 minutes or until muffins test done.
  • Cool completely.
  • For the frosting; in a bowl beat the cream cheese with marmalade until fluffy; add in confectioners sugar and beat until smooth (adding in more if needed to achieve desired consistency).
  • Spread over cooled muffins.
  • Store in refrigerator.

These are very moist easy muffins to make. Fruit cocktail is mixed into a simple batter. Be sure to not overmix or muffins will be too dense.

2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup melted butter
1 egg
3/4 cup milk
1 cup fruit cocktail, well drained

Steps:

  • Mix dry ingredients together in a large bowl.
  • Mix together melted butter, egg and milk and add to dry ingredients.
  • Stir just until mixed and then fold in fruit cocktail.
  • Fill paper lined muffin cups 2/3 full and bake at 400° for about 25 minutes.
