This is really two separate recipes but I make this as one dish because it all works so well together. It takes a little time but it's so worth it. Enjoy!

2 lbs steak (sirloin, ribeye, flank steak all work well if cooked correctly)
1/3 cup soy sauce
1/2 cup olive oil
1/3 cup fresh lime juice
1/4 cup Worcestershire sauce
1 1/2 tablespoons garlic powder
3 tablespoons dried basil
1 1/2 tablespoons dried parsley flakes
2 garlic cloves, roughly chopped
8 ounces penne pasta (half a box)
1/2 cup butter
2 garlic cloves, minced
2 cups heavy cream
1 cup milk
1 cup grated parmesan cheese

Steps:

  • Place soy sauce, olive oil, lime juice, Worcestershire sauce, garlic powder, basil, parsley and roughly chopped garlic cloves in a blender or food processor. Blend on high for 30 seconds or until thoroughly mixed. Pour over steak, cover and marinate for 4 to 6 hours. Grill steak or pan sear it, whichever you prefer. It is delicious both ways.
  • Cook penne according to package directions, salting the water liberally before boiling. Drain but do not rinse.
  • In a large skillet melt butter over medium heat. Add minced garlic and saute for a few minutes, careful not to burn it. Add cream and milk, turn heat to medium high and simmer for 5 to 10 minutes. Lower heat and whisk in parmesan cheese and black pepper. Serve over penne and alongside marinated steak.

This is a rich, smoky tasting marinade!

½ cup Worcestershire sauce
¼ cup liquid smoke
1 ½ tablespoons salt
3 tablespoons seasoned salt
2 tablespoons garlic powder
2 ½ tablespoons onion powder

Steps:

  • Whisk together Worcestershire sauce, liquid smoke, salt, seasoned salt, garlic powder, and onion powder in a bowl until the salts have dissolved.
  • To use, pour the marinade over up to 2 pounds of meat in a resealable plastic bag. Seal the bag, and refrigerate overnight. The following morning, discard the marinade, and cook the meat as desired.

2 packages (about 9 ounces each) dried cheese tortellini
6 tablespoons olive oil
1 large onion, halved lengthwise, thinly sliced crosswise
1 pound cherry tomatoes, halved
2 garlic cloves, minced
2/3 cup vermouth
1 cup chopped fresh Italian parsley
1 cup thinly sliced fresh basil
3/4 cup Kalamata olives, pitted, halved
1 1/2 teaspoons dried oregano
1 pound smoked mozzarella, cut into 1/2-inch cubes

Steps:

  • Cook tortellini in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well.
  • Meanwhile, heat oil in heavy large skillet over medium-high heat. Add onion; increase heat to high and sauté until onion is beginning to brown, about 6 minutes. Add tomatoes; sauté 3 minutes. Stir in garlic; cook 2 minutes. Add vermouth, then parsley, basil, olives, and oregano. Cook 4 minutes, stirring often. Add cooked tortellini; toss over medium heat until sauce coats pasta. Remove from heat. Stir in cheese. Season pasta to taste with salt and pepper and serve.

2 tablespoons balsamic vinegar
1/2 cup sugar
2 teaspoons chopped garlic
1 teaspoon chopped gingerroot
salt and pepper
1 tablespoon olive oil
2 tablespoons olive oil
1 cup roasted garlic
2 quarts beef stock
1 cup tomato puree
1 cup red wine
1/2 onion, minced
1 celery rib, minced
2 teaspoons soy sauce
1 sprig thyme
5 ounces smoked mozzarella cheese
1 cup heavy whipping cream
2 cups of packed chopped washed escarole
1/2 cup roasted red pepper
1 teaspoon fresh minced garlic
1/2 cup dry white wine
1 lb of cooked fettuccine pasta
1 teaspoon sugar
12 ounces marinated top sirloin steaks or 1 strip steak
grated parmesan cheese (to garnish)
green onion (to garnish)

Steps:

  • Marinate steak for 2-4 hours or overnight.
  • To prepare Smoked Mozzarella sauce sautee vegetables in olive oil until translucent, add tomato puree, wine, soy sauce, and reduce by a quarter. Add beef stock and bring to a boil. Whisk in smoked mozzarella and heavy whipping cream until thick and bubbly. Strain.
  • In a large sauté pan on Medium High Heat, add oil until warm. Add escarole, garlic.
  • And sugar and sauté 1 to 2 minutes. Add white wine. Braise the escarole until soft and all the wine is evaporated.
  • Grill marinated steak to desired temperature. Slice.
  • Add roasted peppers and 1 1/2 cups smoked mozzarella sauce. Simmer until thickened and toss is cooked pasta. Stir to coat. Add sliced marinated steak to the top and garnish with Parmesan cheese and green onions.
