BALSAMIC PORK LOIN
Nothing smells better coming from the oven than a balsamic roasted pork loin!

Steps:
- In a medium mixing bowl whisk together the marinade ingredients.
- Add pork loin to a large zip-top bag and pour the marinade mixture into the bag. Let marinate for at least 3 hours or overnight.
- When ready to cook, preheat oven to 350°F and place pork loin with the marinade into a 9x13 casserole dish.
- Bake uncovered for about 1 to 1 ½ hours making sure to baste the pork every 30 minutes. The pork is fully cooked when the middle of the roast registers 140°F.
- Remove from the oven and let rest for at least 5 minutes before slicing.

- Whisk together the olive oil, soy sauce, garlic, mustard, salt, and pepper in a bowl. Place the pork loin in a large resealable plastic bag and pour in the marinade. Marinate in the refrigerator at least 1 hour before cooking.
- Preheat an oven to 350 degrees F (175 degrees C).
- Transfer the pork loin to a baking dish; pour marinade over the pork.
- Cook in the preheated oven until the pork is no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- 1. Combine all of the ingredients for the marinade in a bowl and form a paste. Rub this paste all over the pork and place in a covered bowl in the refrigerator for at least one hour or as long as over night. The longer the pork marinades the better it will taste. Slice the pork into ¼ inch thick slices, or however you prefer. Heat a large frying pan with 2 tablespoons of olive oil and place the pork slices in the heated pan. Let the pork sauté about 3 -6 minutes, turning once. The pork will cook quickly, since it is sliced so thin, so be careful not to overcook. Plate and serve.

ROAST PORK LOIN

- Preheat the oven to 375 degrees. Heat the oil in a large ovenproof skillet over high heat. Season the pork with salt and pepper and sear on all sides until golden brown. Combine the mustard and vinegar and brush over the pork. Transfer to the oven and roast the pork until a thermometer inserted in the center reads 145 degrees, about 35 minutes.
- Transfer the pork to a cutting board and tent with foil for 10 minutes. Remove strings, slice and serve with Fall Vegetable Cobbler (recipe below)
- Preheat the oven to 375 degrees. Whisk the broth and 1/4 cup flour in a saucepan over medium heat. Add the mustard and vegetables; simmer until thickened, about 2 minutes. Whisk in 2 tablespoons butter and salt and pepper to taste; transfer to a 3-quart baking dish.
- Whisk the remaining 1 3/4 cups flour, the baking powder and a pinch of salt in a bowl. Rub in the cold cubed butter with your hands until the dough resembles coarse meal. Lightly stir in 3/4 cup cream with a fork. Place big spoonfuls of dough (about 6) on top of the vegetables and brush with the remaining 1/4 cup cream. Bake until golden brown and cooked through, about 45 minutes. Scatter parsley on top.

THE BEST MARINATED PORK LOIN

- In a large resealable bag, combine the first 9 ingredients to create the marinade.
- Add the pork loin and marinate for about 4 hours turning several times.
- Preheat the oven to 350 degrees.
- Place a large skillet coated with cooking spray over medium high heat.
- Remove the loin from the marinade and pat it semi-dry. Reserve the marinade mixture.
- Sear the loin on all sides, including the ends, in the hot skillet. Set the skillet aside without cleaning it (leave all the juices and cooked bits in it) and keep it for later as well.
- Place the seared loin on a rack in a shallow pan. Add the 1 cup of chicken broth to the pan.
- Cook for 40-50 minutes or until the internal temperature is 145 degrees (about 20-25 minutes per pound). Remove from the oven and let rest for 5 minutes before slicing.
- During the last 15 minutes of cooking time, transfer the reserved marinade to a small pan and bring it to a rolling boil. Lower the heat but keep the marinade at a slow boil for ten minutes.
- Put the skillet that you seared the loin in back over medium-high heat.
- Pass the boiled marinade through a strainer into the skillet. Add the remaining 1/2 cup of chicken broth. Cook, stirring to loosen any cooked bits from the bottom of the pan. Bring to a low boil.
- Add the butter and stir until melted.
- Slice the loin in about 1/2" thick slices. Drizzle with the pan sauce.
