This 3-Ingredient Chocolate Mousse is light, chocolate-y, smooth and whips up in less than 5 minutes. It's a perfect dessert for any night of the week!

1 1/2 cups HEAVY whipping cream
1/4 cup cocoa powder (dutch preferred), sifted, use 1/3 cup for DARK chocolate flavor
1/2 cup powdered sugar, use 1/4 cup for DARK chocolate flavor
1/4 teaspoon almond extract, optional

Steps:

  • In a chilled mixing bowl, begin whipping cream. Whip until frothy and slightly thicken.
  • Add powdered sugar and cocoa powder. Carefully mix until soft peaks form.
  • Add almond extract if desired. Whip until stiff peaks form.
  • Spoon into plastic bag or piping bag with piping tip. Pip into serving bowls or glasses.
  • Enjoy immediately or refrigerate until ready to serve.

12 eggs, separated
1 1/2 cups sugar plus 3 tablespoons
2 teaspoons vanilla
1/4 teaspoon salt
3/4 cup brandy
15 ounces unsweetened chocolate
3 ounces semisweet chocolate
1 cup plus 2 tablespoons butter, softened
3/4 cup coffee
2 1/4 cups heavy cream
Chocolate crust

Steps:

  • Beat yolks in top of double boiler with 1 1/2 cups sugar, vanilla, salt and brandy, over simmering water, until mixture is thick. Remove from water and set aside.
  • Melt chocolates over hot water or over direct heat, carefully. Remove; beat in butter a little at a time. Gradually beat chocolate into yolks until mixture is smooth. Beat in coffee.
  • Beat whites until soft peaks form. Gradually beat in 3 tablespoons sugar until stiff peaks form. Beat one cup of whites into chocolate mixture to thin it. Then fold in remaining whites until well blended.
  • Whip cream until stiff and fold into chocolate mixture. Pour into prepared crust and chill overnight in refrigerator.
  • Or spoon mixture into 16 individual souffle dishes, each holding less than 1/8 cup.

3 ounces superfine sugar
3 or 4 ounces Sabra liqueur
1 pound semisweet chocolate
1 quart heavy cream

Steps:

  • Beat the yolks and sugar together until light. Mix in liqueur.
  • Meanwhile melt chocolate over hot water and whip the cream. Mix a little of cream into yolk mixture.
  • Then mix in the chocolate until it is smooth. Fold in whipped cream and spoon into individual serving dishes. Chill.

Chocolate mousse is the ultimate dessert for any chocolate lover. We like to make ours using bittersweet chocolate, which is high in pure chocolate (at least 35 percent cocoa solids) and makes for a deep chocolate flavor. (Plus, it's also a great eating chocolate.) If you prefer semisweet chocolate, which has more sugar and fewer cocoa solids than bittersweet, know that it can often be substituted in recipes without significantly affecting the flavor or texture.

4 large egg yolks
4 tablespoons sugar
2 cups heavy cream
8 ounces bittersweet chocolate, melted
1 teaspoon vanilla extract

Steps:

  • In a medium saucepan, whisk together egg yolks, 2 tablespoons sugar, and 3/4 cup heavy cream. Cook over medium-low heat, stirring, until mixture coats back of spoon, 3 to 4 minutes (do not boil). Remove from heat; whisk in melted chocolate and vanilla. Strain into a bowl; chill until cool.
  • With an electric mixer, beat remaining 1 1/4 cups heavy cream with remaining 2 tablespoons sugar until stiff peaks form. Stir 1/3 of whipped cream into cooled custard mixture, then gently fold in the rest with a rubber spatula.
  • Spoon into serving dishes; chill, covered, at least 30 minutes and up to 3 days. Bring to room temperature before serving.

ORIGINAL PLUM TORTE

The Times published Marian Burros's recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. "To counter anticipated protests," Ms. Burros wrote a few years later, "the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping." It didn't help. The paper was flooded with angry letters. "The appearance of the recipe, like the torte itself, is bittersweet," wrote a reader in Tarrytown, N.Y. "Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it." We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

3/4 to 1 cup sugar
1/2 cup unsalted butter, softened
1 cup unbleached flour, sifted
1 teaspoon baking powder
Pinch of salt (optional)
2 eggs
24 halves pitted purple plums
Sugar, lemon juice and cinnamon, for topping

Steps:

  • Heat oven to 350 degrees.
  • Cream the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs and beat well.
  • Spoon the batter into a springform pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 teaspoon of cinnamon, depending on how much you like cinnamon.
  • Bake 1 hour, approximately. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. (To serve a torte that was frozen, defrost and reheat it briefly at 300 degrees.)

20 ounces silken firm or extra-firm organic tofu
1/4 cup maple syrup
1/4 cup dark brown sugar
3 tablespoons amaretto
6 tablespoons good-quality unsweetened cocoa like Valrhona
2 teaspoons coffee flavoring or 2 teaspoons instant espresso
12 ounces raspberries
1/3 cup orange juice
Juice of 1/2 lemon
2 tablespoons granulated sugar

Steps:

  • Place all the ingredients for the mousse in a food processor, and blend completely, about 2 minutes, scraping down the sides once or twice. Place in bowl, cover and chill while making the sauce.
  • Wash raspberries; measure out 1 cup, and set aside. Place remaining berries, orange juice, lemon juice and sugar in food processor, and blend until smooth.
  • Stir in the whole berries. Into each of four parfait glasses or small glass bowls, spoon about an inch of the mousse. Top with a couple of spoonfuls of raspberry sauce; repeat until the rim is reached, topping with raspberry sauce.

This is one of the best chocolate mousses I've ever tried. It's so creamy (o.k. probably extremely fattening but holiday calories never count, do they?)I personally make the mousse without any alcohol added. Garnish with whipped cream and chocolate shavings for an extra special effect.

7 ounces bittersweet chocolate, chopped
7 egg yolks, beaten
2 tablespoons sugar
1 pinch salt
7 egg white
1 ¼ cups heavy cream
1 tablespoon kirschwasser

Steps:

  • Place chocolate in a metal bowl over a pan of simmering water. Stir occasionally until mostly melted, then remove from heat, and stir until smooth. Set aside to cool slightly.
  • In a separate bowl, whip heavy cream to medium stiff peaks, but do not allow it to become grainy. Set aside.
  • In a separate bowl, whip egg whites with salt until soft peaks form. Sprinkle in the sugar, and continue whipping to medium stiff peaks. Fold in egg yolks and kirshwasser.
  • Fold in the melted chocolate until completely incorporated, then fold in whipped cream until evenly blended. Spoon into dessert cups, and chill until firm, about 1 hour.

10 ounces sweet, dark chocolate, cut into small cubes
3 1/2 cups heavy cream
1 vanilla bean

Steps:

  • Place the chocolate in a large bowl and set aside.
  • In a saucepan over medium heat, combine the cream and vanilla bean, and bring just to a boil. Remove from the heat immediately. Discard the vanilla bean and pour the cream over the chocolate, stirring to dissolve the chocolate pieces.
  • Refrigerate the chocolate cream for one hour, or until the mixture is completely chilled, stirring occasionally.
  • Beat the chocolate cream until it holds a peak. Refrigerate again for half an hour, or until ready to use.

1/2 cup sugar
1/8 teaspoon cream of tartar
Salt
1/4 cup egg whites
1 1/2 teaspoons instant espresso coffee powder
1/2 cup melted sweet chocolate

Steps:

  • Whip cream until soft and firm.
  • In small saucepan combine sugar and cream of tartar. Add 1/4 cup water. Stir and cook slowly until sugar dissolves and water boils. Boil without stirring until syrup reaches 242 degrees.
  • Add salt to egg whites and beat until stiff peaks form. Beat in hot syrup and beat to form stiff peaks.
  • Fold in coffee and chocolate.
  • Whip cream until soft and firm. Fold into meringue mixture and chill.

  • In a large bowl, heat chocolate chips and ½ cup cream until the chocolate is melted and the mixture is smooth. I do this in the microwave in 20 seconds increments, stirring well between each. Set aside to cool to room temperature, stirring occasionally (this took about 15 minutes).
  • In the bowl of a hand mixer or stand mixer fitted with the whisk attachment, beat remaining 1¼ cups chilled cream with powdered sugar and vanilla until stiff peaks form.
  • Divide the whipped cream in half, transferring half to the refrigerator to use for topping the mousse. Fold* the remaining whipped cream into the melted chocolate in two additions. Once fully combined, transfer the mousse into individual serving dishes and chill for a couple hours. The colder it is, the more firm it will be. If you'd like it softer you can leave it at room temperature for about 15 minutes before serving. Top each serving with some of the reserved whipped cream.
