1 can (12 ounces) frozen nonalcoholic margarita mix, thawed
3 tablespoons lime juice
3 garlic cloves, minced
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine margarita mix, lime juice and garlic. Pour 1 cup marinade into a shallow dish. Add chicken; turn to coat. Cover and refrigerate for 2-4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from chicken. Sprinkle chicken with salt and pepper. Place chicken on oiled grill rack. Grill, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 5-7 minutes on each side, basting frequently with reserved marinade.

½ teaspoon lime zest
¼ cup lime juice
2 tablespoons gold tequila
2 tablespoons honey
1 tablespoon vegetable oil
2 teaspoons cornstarch
¼ teaspoon garlic salt
¼ teaspoon ground black pepper
4 skinless, boneless chicken breast halves
4 (10 inch) flour tortillas, warmed
1 tomato, cut into 8 wedges
1 avocado - pitted, peeled, and cubed
1 lime, cut into 8 wedges

Steps:

  • Preheat oven to Broil.
  • Combine the lime zest, lime juice, tequila, honey, oil, cornstarch, garlic salt and pepper in a small saucepan over medium heat. Bring to a boil, stirring, to thicken the sauce.
  • Broil chicken breasts for 10 to 15 minutes, or until cooked through (no longer pink inside). Baste with prepared sauce for last 5 minutes of cooking time.
  • To serve, arrange a folded tortilla on each of 4 plates; add a chicken breast, 2 tomato wedges and some avocado chunks. Drizzle chicken with remaining sauce and garnish with 2 lime wedges.

1/2 cup(s) kraft zesty lime vinaigrette dressing, divided
6 - chicken breast halves, skinless and boneless
1 - red pepper, chopped
1 - onion, chopped
1 can(s) (14.5 oz.) chicken broth
1 1/2 cup(s) long-grain white rice, uncooked
1/2 teaspoon(s) ground cumin
2 tablespoon(s) chopped fresh celery leaves
1/2 cup(s) shredded monterey jack cheese
- tri-color tortilla strips

Steps:

  • Heat 2 Tbsp. of the dressing in a large nonstick skillet on medium-high. Add chicken; cook 4 minutes on each side or until chicken is golden brown on both sides. Remove from skillet.
  • Add peppers and onions to skillet; cook and stir 5 minutes or until crisp-tender. Add broth, rice, cumin and remaining dressing to skillet; stir. Bring to boil. Top with chicken; cover.
  • Simmer on medium-low heat about 30 minutes or until chicken is done and rice is tender. Remove from heat. Sprinkle with cheese. Let stand, covered, 5 minutes.
  • To serve, garnish with celery leaves and tri-color tortilla strips.

1 cup bottled margarita mix
2 tablespoons lemon juice
2 tablespoons lime juice
1 tablespoon garlic powder
1 tablespoon vegetable oil
2 skinless, boneless chicken breast halves - cut into bite-size pieces
8 (10 inch) flour tortillas
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir margarita mix, lemon juice, lime juice, and garlic powder together in a large bowl.
  • Heat vegetable oil in a large skillet over medium heat. Cook and stir chicken in the hot oil until no longer pink in the center and juices run clear, 5 to 7 minutes. Drain excess oil from chicken. Pour margarita mixture into the skillet with chicken; simmer until most of margarita mixture is evaporated, 15 to 20 minutes. Transfer and drain chicken to a paper towel-lined plate.
  • Layer 4 tortillas with chicken, Cheddar cheese, and Monterey Jack cheese; top with remaining 4 tortillas. Place the prepared quesadillas, 1 or 2 at a time, on a large baking sheet.
  • Bake quesadillas in the preheated oven until cheese is melted, about 15 minutes. Repeat with remaining quesadillas; cut into quarters to serve.

1/2 cup reduced-fat balsamic vinaigrette
3 garlic cloves, minced

2 plum tomatoes, thinly sliced lengthwise

Let cook undisturbed for 3-4 minutes, until both the chicken and fruit slices are caramelized and golden-brown. Flip the chicken and fruit slices, then add the scallions and tomatoes, allowing the tomatoes to blister while the chicken finishes cooking, about 2 more minutes.
  • 3. While everything cooks, make a slurry in a small bowl by mixing the OJ (or clementine juice), broth and arrowroot (or corn starch) until completely smooth. Set aside.
  • 4. Remove the pan from flame (this is a very important, so the booze doesn't flame up) and pour in the tequila. Place the pan back over the flame and add the slurry mixture. Cook until the sauce becomes thick and glaze-like, about 1 minute, gently scraping and stirring with a rubber or wooden spatula to deglaze the pan and incorporate the flavors. Season with additional salt and pepper, if desired. Serve over brown rice or on its own with crusty whole-grain bread.
