DELICIOUS IRISH SODA BREAD image

An easy quick bread make with buttermilk and other simple ingredients. Delicious served warm with butter. A real treat!

Number Of Ingredients 8

2 cups all-purpose flour
3 TBS sugar
1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/4 cup cold unsalted butter (cut into small cubes)
3/4 cup buttermilk
1/3 cup raisins or currents

Steps:

  • Preheat the oven to 375 degrees.
  • Whisk together the flour, sugar, baking soda, baking powder, and salt in a large bowl.
  • Cut the cold butter into 1/4 inch cubes and add it to the flour mixture.
  • Using a pastry cutter or your hands work the butter into the flour until it resembles course pea-size pieces.
  • Add raisins or currant to the flour/butter mixture.
  • Make a well in the mixture and pour the buttermilk into the flour/butter mixture.
  • Stir it with a fork until a soft dough forms. Do not overmix.
  • Turn the dough onto a floured worksurface and gently kneed into a ball.
  • Form the ball into a 6-7 inch circle.
  • Cut an X on the top of the dough about 1 inch deep.
  • Bake on a baking sheet or in a cast iron skillet about 35-40 minutes until golden brown.
  • Cool a bit on a wire rack before serving with butter, honey or jam.

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ teaspoon salt
½ cup margarine, softened
1 cup buttermilk
1 egg
¼ cup butter, melted
¼ cup buttermilk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
  • In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
  • Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

3 1/2 cups all-purpose flour, plus more for work surface
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cut into small cubes and frozen, plus more, softened, for skillet
1 (8-ounce) container sour cream
1 large egg
2 cups raisins
1 cup buttermilk
Caraway seeds (optional)

Steps:

  • Preheat oven to 375 degrees with a rack set in lower third of oven. Lightly butter a 10-inch round cast-iron skillet; set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add butter, sour cream and egg; mix, using a pastry blender, until mixture resembles coarse crumbs. Stir in raisins, buttermilk, and caraway seeds, if using, and mix until a sticky dough forms.
  • Turn dough out onto a lightly floured work surface. Using a floured bench scraper, form into a round loaf; using a sharp knife score a large "X" in the center.
  • Place in prepared skillet and transfer to oven. Bake until loaf is golden brown and a toothpick inserted into the center comes out clean, about 1 hour. If top begins to brown too quickly, loosely cover with a piece of parchment paper-lined aluminum foil. Transfer to a wire rack to cool.

MCNAMARA'S IRISH SODA BREAD



McNamara's Irish Soda Bread image

A recipe handed down by my grandmother Anna Marie McNamara (nee Player). This is a great recipe for a light tea dessert bread. Delicious with light butter hot out of the oven. You can use any type of milk. I usually make this bread when my milk is about to go sour. I like to use raw crystallized sugar in place of the white granulated sugar. My father likes to use buttermilk.

2 ½ cups all-purpose flour
½ teaspoon baking powder
1 teaspoon baking soda
9 tablespoons white sugar
½ teaspoon salt
3 ½ tablespoons butter, softened
½ cup milk
2 eggs
½ cup raisins
1 tablespoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease an 8 1/2x4 1/2-inch loaf pan.
  • Mix flour, baking powder, baking soda, 9 tablespoons sugar, and salt in the mixing bowl of a large stand mixer on low speed until combined.
  • Mix in butter until thoroughly combined.
  • Beat in milk, then eggs, then raisins, incorporating each ingredient well before adding the next.
  • Transfer dough to the prepared loaf pan and sprinkle with 1 tablespoon sugar.
  • Bake in the preheated oven until bread has risen and the top is golden brown, about 45 minutes. A toothpick or cake tester inserted into the center should come out clean.
  • Cool for about 10 minutes before slicing. Best served warm.

3-1/4 cups flour
1/3 cup plus 1 Tbsp. sugar, divided
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 cup cold butter, cut into small pieces
1-1/3 cups buttermilk
1/2 cup currants

Steps:

  • Heat oven to 350°F.
  • Combine flour, 1/3 cup sugar, baking powder, baking soda and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Add buttermilk and currants; stir just until moistened.
  • Place dough on lightly floured surface; knead 10 times. Shape into 2-1/2-inch-thick round. Place on baking sheet sprayed with cooking spray. Cut deep 1/2-inch "X" in top of dough; sprinkle with remaining sugar.
  • Bake 1 hour or until golden brown. Remove bread from baking sheet to wire rack; cool completely before cutting into wedges.
