MAPLE GRANOLA
Homemade granola is a nourishing breakfast. Use olive oil, which has many healthfulproperties, and pure maple syrup to bind rolled oats, raisins, and nuts before baking them.

- Preheat oven to 300 degrees. Mix together oats, coconut, nuts, syrup, oil, sugar, sesame seeds, salt, and nutmeg. Spread granola in an even layer on a rimmed baking sheet. Bake, stirring every 10 minutes, for 40 minutes. Add raisins, and bake until granola is toasted, about 10 minutes more. Let cool completely.
MATZO GRANOLA
For a family-friendly breakfast, serve this crunchy matzo granola over yogurt, with milk and fruit, or straight out of the bowl. It's a healthy way to start the day.

- Preheat oven to 325 degrees. Spray a rimmed baking sheet with cooking spray; set aside.
- In a large bowl, mix together matzo, almonds, and pecans. Spread matzo mixture in an even layer on prepared baking sheet. Transfer to oven and bake until toasted, about 15 minutes, stirring every 5 minutes.
- Meanwhile, place margarine, sugar, honey, salt, and cinnamon in a medium saucepan. Place over medium-low heat and cook until margarine is melted and mixture is well combined.
- Transfer toasted matzo mixture to a large bowl and add margarine mixture; toss to coat. Return mixture to rimmed baking sheet and transfer to oven. Bake, stirring frequently, 10 to 15 minutes. Remove from oven and let cool.
- Stir cooled granola on baking sheet and transfer to an airtight container, breaking up larger pieces. Add raisins, cover container, and shake to combine. Granola may be stored in an airtight container at room temperature for 1 to 2 weeks.
BASIC GRANOLA
This is the only granola recipe you need. While some recipes are too sweet and others don't bind into those super-satisfying clusters, our approach solves for these snafus and also allows for improvisation: You can swap in any nuts, seeds, or dried fruit you have handy, and adjust so yours is higher in protein or lower in sugar.

- Preheat oven to 300°F. Line a rimmed baking sheet with parchment. In a large heatproof bowl, combine oats, nuts and seeds, salt, and cinnamon.
- Bring brown sugar, honey, and oil to a simmer in a small saucepan over medium heat, stirring until sugar has dissolved. Pour over oat mixture; stir to combine. Spread in an even layer on prepared sheet.
- Bake, stirring every 15 minutes, until golden and crisp, 40 to 55 minutes. Let cool completely. Stir in fruit. Store in an airtight container up to 2 weeks.
MARANATHA GRANOLA
I love granola, but I don't like all of the blends that are out there. So, I put several together and I have all the things in it that I like. This is one delicious recipe. Just the right taste, I think. NOTE: If you like, any dried fruit may be added to your bowl just before eating.

- In a huge bowl mix first 8 ingredients, stirring till all are combined; (I use a huge stainless steel bowl and then leave it in that to bake the granola).
- Add the oil, brown sugar, vanilla mixed with 2 tablespoons of water and salt.
- Warm the honey in the microwave so that it will be thin and mix better.
- Mix very well.
- Put onto a huge baking sheet or leave in the stainless bowl.
- If you do this, push the granola up the sides so all areas are exposed.
- Bake 300 degrees for 1 hour, mixing every 10 minutes.
- Keep an eye on it so that it doesn't brown too much in the last 10 minutes, depending on your oven.
- Dump it out on paper towels or a large brown paper bag and cool.
- Put in large container and keep in refrigerator because of the oil.
- DELICIOUS!
