1/2 lb bacon, diced into small pieces
24 ounces Simply Potatoes Traditional Mashed Potatoes
2 egg yolks
1 1/2 cups shredded cheddar cheese, separated
1/3-1/2 cup maple syrup

Steps:

  • Preheat oven to 400°.
  • In a large skillet, cook bacon pieces until crisp. Remove from skillet. Reserve the bacon fat.
  • Place potatoes into a large bowl.
  • Add egg yolks, 1 cup cheddar cheese and 1/2 of the cooked bacon.
  • Mix well.
  • With a pastry brush, brush the insides of a 6 cup jumbo muffin tin with some of the reserved bacon fat.
  • Divide potato mixture between the 6 cups.
  • Bake for 25 minutes. Remove from oven and sprinkle the 6 puffs with the remaining cheese and bacon.
  • Bake an extra 5 minutes or until the cheese is melted and the puffs are pulling slightly away from the edges of the pan.
  • Serve each Maple Bacon Tater Puff with 1 to 2 tablespoons maple syrup.

1 3/4 cups whole wheat flour
1 1/2 cups unbleached all-purpose flour
1/4 cup firmly packed dark brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 tablespoons cold salted butter, cut into 1/2-inch cubes
1 1/2 cups pitted chopped dates
12 ounces sliced bacon, cut into 1/2-inch wide pieces, cooked until crisp, drained and cooled
1 cup buttermilk
1/3 cup grade b pure maple syrup, plus
1 tablespoon grade b pure maple syrup
1 large egg
3 tablespoons demerara sugar (or other raw sugar)

Steps:

  • Position oven racks in the top third and center of the oven; preheat oven to 400°.
  • Line 2 large rimmed baking sheets with parchment paper or silicone baking mats.
  • Scones--in a large bowl, whisk together the flours, brown sugar, baking powder, baking soda, and salt.
  • Using a pastry blender or your fingertips, cut in the butter until the mixture is crumbly with some pea-sized pieces of butter.
  • Add the dates and toss to coat with the flour mixture; repeat with the bacon.
  • Whisk the buttermilk and 1/3 cup of maple syrup together in a measuring cup.
  • Pour into the flour mixture and stir just until combined; do not overmix.
  • Turn the dough out onto a lightly floured work surface and knead a few times.
  • Roll out into a 1-inch thick round.
  • Using a 2 1/2 inch round cookie cutter, pressing firmly to cut through the dates, cut out scones as close together as possible to avoid excess scraps.
  • Arrange at least 2 inches apart on the prepared baking sheets.
  • Gently press the scraps together, roll out again, and cut more scones.
  • In a small bowl, whisk together the egg and remaining 1 tablespoon maple syrup.
  • Brush the tops of the scones lightly with the egg mixture and sprinkle with the Demerara sugar.
  • Bake, switching the positions of the baking sheets from top to bottom and front to back halfway through baking, until the scones are golden brown, about 20 minutes.
  • Let cool on the pans for 10 minutes.
  • Serve warm.

cooking spray (for frying)

Steps:

  • Spray a non stick pan with cooking oil spray and fry the bacon over a medium heat until patched with brown in all the right places.
  • Once it is to your liking, add the maple syrup to the pan and turn the bacon over in it for literally a minute or two until thickened, being very careful not to burn the syrup.
  • Take off the heat immediately and serve.
  • My mouth is watering just writing this, seriously its amazing.

1 lb thick-cut bacon
3 tablespoons maple syrup (Grade B)
2 tablespoons soy sauce (Soyracha Hot Chili Soy Sauce, use more or less)

Steps:

  • Heat your oven to 400 degrees F.
  • Line a couple of rimmed baking sheets with parchment or foil. Lay bacon out on the baking sheets making sure the pieces don't overlap.
  • Mix together the maple syrup and Soyracha in a small bowl and brush the bacon slices on both sides with it. There should still be a bunch of the sauce left -- use this to brush occasionally as the bacon is cooking.
  • Stick the pans of bacon in the oven and bake until browned and crispy (about 18 to 25 minutes-depending on the thickness of your bacon),.
  • During the baking of the bacon, take the pans out once about halfway through and once towards the very end when they're looking almost done and brush with more sauce.
  • Transfer the cooked bacon to a plate or platter and serve.
