SUGAR SNAP PEAS WITH BACON AND PARMESAN

- In a large cold frying pan, lay out the bacon strips without overlapping. Turn on the heat to medium and cook the bacon, flipping occasionally (using tongs) until golden-brown and crisp, about 7-10 minutes. Remove from the pan and place the bacon onto a paper-towel lined plate. Set aside.
- Pour the excess bacon grease from the pan into a heat safe container for disposal, leaving a thin layer of oil behind. Set the stovetop temperature to medium-high heat and add the snap peas into the frying pan.
- Sauté the snap peas until tender-crisp, about 3-5 minutes. Remove from heat and stir in the remaining ingredients (red onions, parmesan, lemon juice, and black pepper).
- Place into a serving dish and top with chopped or crumbled bacon. Best served immediately.

Steps:
- Remove and discard the stem end and string from each sugar snap pod.
- Heat the olive oil in a large saute pan over medium-high heat. Add the sugar snap peas, salt and pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.
- Place the sugar snap peas in a serving bowl, sprinkle with sea salt and serve.
SUGAR SNAP PEAS WITH ONIONS AND BACON

- In a medium skillet over medium high heat, brown chopped bacon. Using a slotted spoon, remove bacon to a paper towel lined plate. Add onion to the pan. Saute chopped onions 3 minutes or so, until they are just tender. Add peas and water to the pan. Cover and cook peas 5 minutes. Uncover and allow the liquid to cook almost out of the pan. Add bacon back to the skillet and remove pan from heat. Transfer to a serving dish and enjoy!

- Preheat oven to 375°F with racks in upper and lower thirds.
- Arrange bacon slices in 1 layer (not overlapping) on racks of 2 large broiler pans (if you only have one, use a large rectangular metal rack set inside a large baking pan for the second). Bake until fat is rendered but bacon isn't crisp, about 20 minutes. Drain on paper towels.
- Arrange all of bacon in 1 layer on rack of 1 broiler pan. Brush top with syrup and sprinkle with pepper. Bake until bacon is crisp and deep golden, 20 to 25 minutes. Drain, glazed side up, on paper towels.

- Cook bacon till crisp set aside.
- In the same pan removing all grease except for a little to cover bottom saute onion, garlic and sugar.
- Add Sugar Snap Peas and broth simmer covered about 5 minutes till crisp tender stirring a couple of times.
- Meanwhile crumble the bacon.
- Place snap peas in a large dish season fresh lemon juice with more salt and pepper if needed.
- Top with bacon and serve.
- And garnish with lemon slices.

- Cook bacon in two batches in a large skillet over medium-low heat, turning occasionally, until crisp, 6 to 7 minutes. Drain bacon on paper towels, then break into 3/4- to 1-inch pieces. Reserve drippings, and wipe out skillet.
- Preheat oven to 200 degrees. Whisk together flour, baking powder, baking soda, and salt in a medium bowl. Whisk together buttermilk, syrup, eggs, and butter. Add to flour mixture, and whisk until just combined (batter will have lumps).
- Heat 1 teaspoon drippings in skillet over medium-low heat. For each pancake, arrange some of the bacon pieces in a circle in skillet. Slowly pour 1/3 cup batter over bacon, starting in center and moving outward in a swirling motion to prevent bacon from shifting. Cook until small bubbles form on surface. Flip, and cook until golden brown. Transfer pancakes to a baking sheet, and keep warm in oven. Repeat with remaining bacon and batter. Serve with syrup.
