1 teaspoon beef bouillon granules
1/4 cup hot water
1 1/2 lb lean (at least 80%) ground beef
3/4 cup coarse cracker crumbs
1/2 cup chopped onion
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/3 cup ketchup
1/8 teaspoon hot pepper sauce, if desired
1 egg, slightly beaten
1/2 cup ketchup
1/2 cup maple-flavored syrup

Steps:

  • Heat oven to 350°F. In large bowl, dissolve beef bouillon in hot water. Add remaining meatloaf ingredients; mix well. Spoon mixture into ungreased 8x4-inch loaf pan or shape mixture into 8x4-inch loaf in ungreased 12x8-inch (2-quart) glass baking dish.
  • Bake 1 1/4 hours or until beef is thoroughly cooked in center and meat thermometer reaches 160°F. Remove pan from oven. In small bowl, combine glaze ingredients. Brush top of meatloaf with glaze. Let stand, covered, 5 to 10 minutes before slicing. Serve with remaining glaze.

A covering of maple bacon will add even more flavor and lovely aromas to this classic ground beef favorite. Add a glaze of barbeque sauce and there won't be any leftovers!

2 Tablespoons Safflower Oil
1 ½ Cups Finely Chopped Onion (About 1 Large)
1/3 Cup Cream (Half & Half, or Whole Milk)
3 Large Eggs
1 Tablespoon Worcestershire Sauce
3 Pounds Ground Beef ((85% Lean))
3 Slices White or Sourdough Bread (1 ½ cups Fresh Bread Crumbs)
1 Tablespoons Poultry Seasoning
1 Teaspoons Black Pepper (Freshly Ground (Fine))
1 ½ Teaspoon Salt
7 Slices Maple Bacon (About 10 oz)
1/2 Cup Barbeque Sauce*

Steps:

  • Preheat oven to 350° Fahrenheit.
  • Line a 14 ½" x 10" sheet pan with aluminum foil.
  • Heat a 10" skillet over medium heat. Add safflower oil and finely chopped onion. Cook onion until it is translucent, stirring occasionally. Remove from heat and allow to cool.
  • In a small bowl beat together eggs, cream, and Worcestershire sauce. Set aside.
  • Place ground beef in an extra-large bowl. Put bread in a food processor and pulse until bread is in fine crumbs. Add bread crumbs, poultry seasoning, black pepper, salt, and cooked onion to the ground beef. Pour egg mixture over all and gently, mix until all ingredients are incorporated.
  • Gather meatloaf mixture into a ball and place on prepared sheet pan. Shape into a 10 inch oval.
  • Starting at center of the meatloaf, cover meatloaf diagonally with strips of maple bacon. Trim bacon with kitchen scissors as needed to completely cover the top and sides of the meatloaf.
  • Place meatloaf in the preheated oven and bake for 1 hour and 15 minutes. Remove from oven and brush top and sides of meatloaf with barbeque sauce. Return meatloaf to oven and bake for another 15 minutes.
  • Remove meatloaf from oven and serve.

3/4 pound sliced smoked bacon
1 cup finely chopped onion
3 cloves garlic, peeled and chopped
1/4 cup milk
1/4 cup sour cream or plain yogurt
2 large eggs
1 tablespoon dry mustard
2 teaspoons kosher salt
3/4 teaspoon dried thyme
1 teaspoon Worcestershire sauce
1/2 teaspoon freshly ground pepper
Dash of hot pepper sauce
1 pound ground beef
1 pound ground pork
1 pound ground veal
1/2 cup crushed saltines
1/3 cup finely chopped parsley
1/4 cup maple syrup
2 tablespoons Dijon mustard

Steps:

  • Chop 1/4 pound bacon; sauté until browned but not crisp, about 8 minutes. Transfer cooked bacon to paper towels to drain. Add onion and garlic to pan. Cover, and cook over low heat, stirring occasionally, until softened, about 10 minutes. Remove from heat, and set aside.
  • Heat oven to 375 degrees. In a medium bowl, whisk together the milk, sour cream, eggs, dry mustard, salt, thyme, Worcestershire sauce, ground pepper and hot pepper sauce.
  • In a large bowl, combine beef, pork, veal, cooked bacon, onion mixture and milk mixture. Using your hands, toss lightly to mix. Add saltines and parsley, and toss lightly again until thoroughly combined. Line a rimmed cookie sheet with foil; on it, form meat into a domed loaf about 5 inches by 12. Drape remaining strips of bacon lengthwise over loaf to completely cover.
  • In a small bowl, combine maple syrup and Dijon mustard. Paint a thick coat over bacon. Bake uncovered, until a thermometer inserted into center registers 165 degrees, 1 1/4 to 1 1/2 hours. If desired, baste occasionally with remaining maple syrup mixture. Let meatloaf rest about 10 minutes before slicing and serving.

1 pound ground beef
½ pound ground pork sausage
1 sleeve crushed buttery round crackers (such as Ritz®)
⅔ cup ketchup
½ cup chopped onion
2 eggs
1 teaspoon onion powder
1 teaspoon garlic powder
12 slices thick-cut bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) .
  • Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
  • Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
  • Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

1/4 cup ketchup or chili sauce
2 tablespoons light or dark brown sugar
2 teaspoons cider or white vinegar
2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black paper
2 teaspoons Dijon mustard
2 teaspoons Worchestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 up milk, buttermilk or low-fat plain yogurt
2 pounds meat-loaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)
2/3 cups crushed saltine crackers (about 16) or quick oatmeal or 1 1/3 cups fresh bread crumbs
1/3 cup minced parsley
6 ounces thin-sliced bacon

Steps:

  • For the glaze: Mix all ingredients in a small bowl; set aside.
  • For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
  • Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
  • Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
  • Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
  • Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

I made this one up for my honey's birthday using tidbits of loafs I have played with in the past, and combined with my desire to finally try to make a bacon wrapped meatloaf. ...

MEATLOAF
2 lb 85% lean ground beef
1 egg
1/2 c ketchup
1 c bread crumbs
2 tsp garlic powder
2 tsp emeril's seasoning
2 tsp salt
1 medium yellow onion, grated on a box grater
1 large carrot, grated on a box grater
1 lb thick cut bacon
MAPLE BOURBON GLAZE
1/4 c brown sugar
1/4 c bourbon
1/4 c maple syrup
1 c ketchup

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Make the glaze: put all of the glaze ingredients in a small saucepan and heat over medium heat. you want it to simmer, but not boil, for about 10 minutes. Stir frequently. While this simmers, you can start assembling the meat mixture.
  • 3. Mix the meatloaf: In a large bowl add ketchup, egg, onion (grate on a medium grate on a box grater), carrot (grate on a medium grate on a box grater), garlic powder, Emeril's seasoning, and salt in a large mixing bowl, and mix to combine evenly. Add hamburger and breadcrumbs to the wet ingredients and mix thoroughly to combine. Set aside.
  • 4. Make a bacon basket weave: On a piece of parchment or wax paper lay out 6 thick cut bacon slices next to each other. Fold every other one in half (3 down, 3 up), and place another piece of bacon next to the folded down bacon. Unfold the 3 pieces of bacon over the top of the piece you just laid down, and then fold down over that piece of bacon the other 3 slices that were not previously folded. where those fold down, you want to put another slice of bacon, and then repeat the process of folding back over, and folding down the other three. One more slice of bacon, and then half of the bacon weave is done. Repeat for the other half of bacon. You should have a total of 12 slices of bacon made into a basketweave mat of yumminess waiting to happen.
  • 5. Shape the Loaf: Gather up the meatloaf mix by hand and shape it into a loaf about three inches shy of the length of your bacon mat, and about 1/3 of the width. You need to eyeball it here and use your best judgment so that when you lay the loaf in the middle, the long sides will have enough bacon to wrap up and over to the top so they almost meet each other, and the short sides will wrap up to totally cover the end pieces. Lay it in the center of the bacon mat.
  • 6. Fold the bacon mat up and over the length of each of the long meatloaf sides so that it wraps up and over to the top, then fold the bacon from the ends up.
  • 7. Place the dish you want to bake the loaf in over the loaf, and then grab the paper on one side, and hold the pan tight on the other side, and flip it over so that the loaf slides inside the pan. Center it in the pan, and then brush on the glaze over the maple. Bake in a 350 degree oven for 30 minutes and then start basting every 15 minutes with the glaze. Keep basting until a meat thermometer inserted in the center

1/3 cup whole milk
1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
  • Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
  • Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
  • Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.

My mother and I came up with this recipe one night while she was visiting. We were pleasantly surprised at how this turned out. It really is delicious!! The maple sausage makes the recipe amazing!

1 small onion
1 lb ground turkey
1 lb ground sausage maple flavor
1 large egg
1/2 can(s) diced tomatoes
1 tube(s) ritz crackers bacon flavor
4-5 slice turkey bacon or regular bacon

Steps:

  • 1. Preheat oven to 375.
  • 2. Finely dice one small onion and place in large bowl.
  • 3. To the bowl add the turkey, sausage, egg, and about half the can of diced tomatoes and juice.
  • 4. Crush the entire tube of crackers into the bowl and mix until all ingredients are well combined.
  • 5. Place the mixture into a loaf pan and top it with the slices of bacon. I found that 4 slices of bacon fit my pan perfectly.
  • 6. Bake uncovered approx 1 hour.
  • 7. There will be some fat in the bottom of the pan after it cooks. I just carefully poured out as much as I could.
