BACON DEVILED EGGS
Steps:
- Mash 6 hard-boiled egg yolks, 2 tablespoons mayonnaise or yogurt, 1 1/2 teaspoons spicy mustard, 1/2 teaspoon lemon juice, 1 teaspoon relish and 1/2 teaspoon paprika. Fill the egg whites with the yolk mixture. Top with chopped chives and crumbled cooked bacon.

- Add wood chips to grill according to manufacturer's directions. Place eggs on grill rack. Grill, covered, over indirect medium heat until golden brown, 7-10 minutes. Cool slightly., Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Stir in Miracle Whip, mustard, salt, pepper and paprika. Spoon or pipe into egg whites. If desired, top with additional paprika and chopped parsley. Refrigerate, covered, until serving.

Steps:
- Heat oven to 375ºF.
- Cover rimmed baking sheet with foil; spray with cooking spray. Place bacon in single layer on prepared baking sheet. Bake 15 min., turning after 8 min. Remove baking sheet from oven; carefully pour off drippings. Discard drippings. Brush half the syrup evenly onto both sides of bacon slices. Return to oven.
- Bake 25 to 30 min. or until bacon is crisp, turning and brushing with remaining syrup every 10 min. Transfer bacon to wire rack sprayed with cooking spray. Cool 10 min. or until firm. Cut each bacon slice diagonally into thirds.
- Cut eggs lengthwise in half. Remove yolks; place in small bowl. Mash with fork. Add dressing and mustard; mix well.
- Fill egg white halves with yolk mixture; top with bacon and cilantro.

- Preheat oven to 350°. In a small bowl, mix brown sugar, 3/4 teaspoon mustard, 1/2 teaspoon syrup and salt. If desired, stir in bourbon. Coat bacon with brown sugar mixture. Place on a rack in a foil-lined 15x10x1-in. baking pan. Bake 25-30 minutes or until crisp. Cool completely. , Cut eggs in half lengthwise. Remove yolks, reserving whites. In a small bowl, mash yolks. Add mayonnaise, 1 tablespoon syrup, 1 tablespoon mustard and both types of pepper; stir until smooth. Chop bacon finely; fold half into egg yolk mixture. Spoon or pipe into egg whites. Sprinkle with remaining bacon and the chives. Refrigerate, covered, until serving.

- Prepare the bacon and shallots - Cut bacon into "lardons" (½" slices), and fry until crisp. Crumble bacon to resemble large crumbs, using a knife if necessary. Remove all but about a teaspoon of the bacon drippings from the pan. Saute the minced shallot until soft. Cool.
- Prepare the eggs - Slice eggs lengthwise; pop the yolks into a medium-sized prep bowl (or food processor bowl), and arrange the whites on a plate.
- Prepare the egg yolk mixture - To the bowl, add the maple syrup, sriracha sauce, yogurt, mayonnaise, dijon mustard, salt, and pepper. Either pulse until smooth, or use the tines of a fork to smash and blend until a smooth, creamy consistency is achieved. Season with salt and pepper to taste. Fold in the finely crumbled bacon, cooked and cooled shallot.
- Finish the deviled eggs - Pipe (see Tips) or spoon the yolk mixture into the egg white halves. Garnish with the minced chile and chives as desired.
