MANLY-MAN SALISBURY STEAKS
People used to request these when I was catering!I once made 200 of them! They aren't your "Joe-average" salisbury steaks, and are definitely company-worthy! This makes a lot, but leftovers freeze well. My own concoction! :)

Steps:
- In large mixing bowl, combine well with hands the hamburger, 1/3 cup cream of mushroom soup, 1/3 cup french onion soup, garlic powder, bread crumbs and egg.
- Shape into six 6 1/2" x 4 1/2" oval patties, 1/2" thick.
- Place on cookie sheet as you go.
- Sprinkle tops with salt and pepper.
- In 2 frying pans, place a little butter and melt.
- Add 3 patties to each pan seasoned-side down.
- Salt and pepper other sides while bottoms are frying.
- Fry over medium-high heat for 3 minutes or till deep browned.
- TURN CAREFULLY. You don't want to "flip" them or you'll break them. I just gently and carefully roll them over slowly with 2 spatulas.
- Brown other sides for about 2 minutes.
- While patties are cooking, mix sauce ingredients together:.
- Rest of soups, browning sauce, Worcestershire, salt, pepper, and mushrooms.
- When patties are done, carefully place onto clean cookie sheet(s).
- Pour grease out of pans and wipe with paper towels.
- Place a little bit of sauce into each pan, just a spoonful each and swirl around with back of spoon.
- Place patties back into pans.
- Pour/spoon rest of sauce evenly over each patty.
- Bring to a simmer and simmer 3-5 minutes longer. Stir sauce occasionally.
- Remove to warm platter, pour any sauce from pans over the tops.
- Garnish with fresh chopped parsley if desired.
- Great with mashed potatoes dotted with butter, green beans and crusty warm bread! :).
- Serves 6 hungry guests! :).
- *All 6 patties can be done in an electric skillet if you've got one handy. Just watch them so they don't burn if yours runs hot, too.
- **This does not make a ton of gravy -- just enough to compliment the steaks, not drown them, LOL! If you prefer a lot more, double the sauce part.
BAKED SALISBURY STEAKS
This Salisbury steak is so tender when cooked this way. I love the flavor searing the steaks gives, and the gravy is delicious over mashed potatoes.

- In large bowl, add 1/2 cup of soup, beef, bread crumbs, onion and eggs. Shape firmly into 3 patties, 1/2 inch thick. Sear each patty on both sides in medium hot skillet about 90 seconds per side. Place in baking dish. In medium bowl combine remaining soup and remaining ingredients, mix well. Pour over top of steaks and bake in 350 oven for 30 minutes.

EASY SALISBURY STEAKS
I came up with this as a last minute meal and have made it ever since. I usually make up a big batch of the steaks and keep them in the freezer for an even quicker meal!

Steps:
- For Steaks- Mix all steak ingredients together and make into patties (I usually get around 5).
- Bake at 350F for about 20 minutes (you can also fry in skillet as you would cheeseburgers).
- For Gravy- Mix together in skillet and add steaks!
- Enjoy!

TANGY SALISBURY STEAKS
A Salisbury Steak recipe thats a bit out of the ordinary.. The horseradish gives it a nice tang, and the mushrooms also add to the nice taste. Serve with boiled noodles or mashed potatoes and a veggie of choice.. I hope its enjoyed here..

- Corse chop 1/2 of the drained can of mushrooms.
- Saute onions and chopped mushrooms in butter over medium heat just until the onions are tender. Remove from heat and let cool.
- In a large bowl, mix ground sirloin, bread crumbs, egg, worcestershire sauce, horseradish, spices and cooled onion/mushroom mixture together and make 4 oval patties.
- Fry or broil the 4 patties to desired doneness ( I like medium well).
- While the steaks are cooking, add the consomme' and remaining 1/2 can of mushrooms to a medium sauce pan and bring to a simmer.
- Mix the cornstarch and water together and use to thicken the gravy mixture to the desired thickness just before serving.

SALISBURY STEAKS
Cold wintery, blustery day is perfect for developing a new recipe. I took several recipes, tricks and tips I've learn through the years and came up with this one. It was a huge hit with my husband and I have to brag, me as well! Very tender and gravy that is out of this world!

- In large mixing bowl combine the lean ground beef, eggs, salt, pepper, garlic powder, Panko breadcrumbs, dried onions and Cream of Mushroom soup. Mix together well.
- Prepare a wire cooling rack by covering it with parchment paper. Shape the meat mixture into 6-8 oval shaped patties. We like ours thick about 1-inch thick, so I got 6 patties out of this batch.
- Leaving the steaks uncovered, place the rack in the refrigerator for 4-6 hours (can do this the night before if you like). This gives the meat a chance to absorb all the flavors you've mixed into it.
- Approximately 1 hour before you want to serve this meal, preheat your skillet over medium-high heat. I used my cast iron and let the oven heat it for me as I sliced the onions. Preheat oven to 375 degrees F. While waiting for the oven, slice the onions into 1/4-inch thick slices. Set aside. When oven is preheated, take your skillet out and on medium-high heat, melt 2 TBSP butter.
- Place 3-4 steaks in the skillet, make sure you do not over crowd the pan. Brown for 3-4 minutes then flip over and brown the other side for 3-4 minutes.
- Remove from skillet and set aside on a plate. Repeat with remaining steaks adding another tablespoon butter if needed. Remove these steaks and let rest with the others. Now add another 1-2 TBSP butter to the same skillet (do NOT remove any of the drippings or fond from the skillet).
- Brown the sliced onions in the skillet until golden and soft, this should take 7-10 minutes. Stir in flour - start with 3 TBSP stirring constantly to cook the flour, if it appears too wet, add another TBSP flour and keep stirring. Now stir in 2 TBSP beef base (I used Better than Bouillon) and add 3 cups HOT water. (Always add hot water to a hot pan - especially cast iron, you don't want it to crack or warp!). Once you have the water added and the lumps smoothed out, return the steaks to the pan.
- Spoon the gravy over the tops and if the gravy appears too thick add more hot water, 1/4 cup at a time until it's the consistency you desire. Place skillet in the oven and bake uncovered for 30-40 minutes. Check it halfway through the time and baste the steaks with the gravy.
- Delicious with mashed potatoes, rice or noodles of your choice.

SALISBURY STEAKS
I make this often for my family - it is one of our favorite meals. I got the recipe from Betty Crocker. It is great served with mashed potatoes and corn.

Steps:
- Mix ground beef, bread crumbs, salt, pepper and egg; shape into 4 oval patties, each about 3/4-inch thick.
- Cook patties in 10-inch skillet over medium heat, turning occasionally, until brown, about 10 minutes.
- Drain.
- Add onion, broth and mushrooms. Heat to boiling; reduce heat. Cover and simmer until beef is done, about 10 minutes. (I usually start boiling the water for homemade mashed potatoes at this time and the steaks will be ready by the time you get the mashed potatoes ready).
- When patties are done, remove them from skillet. Keep warm.
- Heat onion mixture to boiling. Mix water and cornstarch; stir into onion mixture. Boil and stir 1 minute.
- Serve over patties and mashed potatoes.
