MANGO-POMEGRANATE SALMON



Mango-Pomegranate Salmon image

My apartment-mate Melinda made up this tasty recipe when we were in college. The start-up costs are a little expensive, but since you only use a little bit of the pricier ingredients each time you make it, I think it's well worth it! Serve it up over rice. It's easy to make and the presentation is very impressive for company. *** Caution: I recommend using dried rosemary and a non-stick pan as using other pans and fresh rosemary have caused the beautiful caramel colored sauce to turn black (no good for presentation, still a great taste). I prefer a wok, but any frying pan will do!

4 salmon fillets (you can cut up bigger pieces of salmon)
1 tablespoon pomegranate chipotle barbecue sauce (I use Fischer Wieser, but feel free to substitute, just get something that's thick and will give it ) or 1 tablespoon marinade (I use Fischer Wieser, but feel free to substitute, just get something that's thick and will give it )
1/2 cup pomegranate juice (such as POM)
2 tablespoons olive oil
2 mangoes
1 teaspoon rosemary
1/2 teaspoon ground ginger
1 teaspoon cumin

Steps:

  • Directions:.
  • Peel and chop mango (set aside).
  • Skin Salmon if not pre-skinned and double check for bones.
  • In nonstick pan:.
  • add olive oil, bbq sauce, juice, spices and mango. Let simmer on low-medium heat stirring frequently approximately 10-15 min or until thickened slightly.
  • If using wok, rub salmon slightly on warm sides of pan to sear the bottom and the fish will hold together better. If not using wok just gently place salmon in mango-pom sauce.
  • Flip salmon gently after 5-8 minutes depending on thickness of cuts. Salmon is done when inside of fillets are a paler pink and flake easily. Sauce keeps fish from getting overdone for the most part, so don't stress if you want to give it a little more time.
  • Serve over rice and enjoy!

MANGO CHUTNEY



Mango chutney image

Make a classic mango chutney to serve alongside curries, with cheese or in sandwiches. It makes a great gift for family and friends, and you can freeze it too

6 firm but ripe mangoes (about 1.5kg)
500ml white wine vinegar
450g granulated sugar
1 tbsp cumin seeds
2 tsp coriander seeds
10 cardamom pods
2 tsp nigella seeds
½ tsp cayenne pepper
½ tsp turmeric
3 garlic cloves , crushed
8 whole cloves
thumb-sized piece of ginger , grated
1 fat red chilli , seeds removed and finely chopped

Steps:

  • Peel the mangoes and chop the flesh into blueberry-sized pieces. Pour the vinegar and sugar into a large pan and simmer gently, stirring until the sugar has dissolved. Increase the heat and bubble for 8-10 mins until reduced a little. Meanwhile, toast the cumin, coriander and cardamom in a dry pan until aromatic.
  • Tip the spices into a pestle and mortar and gently crush them, leaving the seeds with some texture. Remove the cardamom pods, leaving the seeds in the spice mix, and add to the vinegar mix along with the mangoes, the other ingredients and 2 tsp salt. Bubble over a medium heat for 1 hr 15 mins - 1 hr 35 mins, until thick and syrupy. Leave to sit for 10 mins.
  • Transfer the chutney into 2-3 sterilised jars while still hot. Seal the jars and leave to cool, then add labels. Store in a cool place for up to 2 years - the chutney will be best eaten after a few months, when the flavours have melded and mellowed.

3 cups distilled white vinegar
6 cups white sugar
6 cups brown sugar
1 teaspoon ground cinnamon
2 teaspoons ground ginger
4 teaspoons ground allspice
1 teaspoon ground cloves
2 teaspoons ground nutmeg
5 small red hot chile peppers, seeded and chopped
1 teaspoon kosher salt
2 large onions, chopped
3 cloves garlic, chopped
1 cup golden raisins
1 cup raisins
½ cup fresh ginger root, chopped
16 cups sliced, semi-ripe mangos
½ cup sliced almonds

Steps:

  • In a large saucepan combine vinegar, white sugar, brown sugar, cinnamon, ground ginger, allspice, cloves, nutmeg, chile peppers and salt. Bring to a boil; boil for 1/2 hour.
  • Stir in onions, garlic, golden raisins, raisins and ginger and boil for another 1/2 hour.
  • Stir in mangos (and almonds if using), reduce heat to low and simmer for 1/2 hour. Pour mixture into sterilized jars, to 1/2 inch below lid level, and seal.

1 large mango, peeled and coarsely chopped
2 cups fresh peaches or 2 cups frozen peaches, peeled and coarsely chopped
1/2 cup unsweetened apple juice
1/2 cup cider vinegar
1/2 cup packed brown sugar
1 medium onion, chopped
2 teaspoons grated fresh gingerroot
2 teaspoons grated fresh green chili peppers, seeded and minced (about 1 tbls.)
1/4 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Combine all of the chutney ingredients in a nonreactive saucepan and bring to a boil.
  • Reduce the heat and simmer gently, uncovered, for about 45 minutes, stirring ocasionally, until thick and translucent.
  • Cool or chill before serving.
  • This chutney will keep for several weeks stored in a tightly covered container in the refrigerator.
  • If you wish, you may can the hot chutney in hot sterilized jelly jars, and seal with hot sterilized lids. No need to cook in a hot water bath, there is enough sugar and vinager to preserve.

1 large mango, diced
1 large pomegranate, seeded
1/2 cup golden raisin
3/4 ounce ginger, diced
1 garlic clove, minced
1/3 cup balsamic vinegar
1/3 cup light brown sugar, firmly packed
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Using the blade of a sharp knife, cut about 1/4 inch deep into the skin of the pomegranate, careful not to cut through the seeds. Cut all the way around the perimeter of the pomegranate.
  • Twist the halves of the pomegranate apart. If they don't separate, cut around the perimeter again until they do.
  • Hold one half of the pomegranate over your cook pan with the seeds facing down, and firmly tap the back of pomegranate with a meat mallet or something similar. The seeds will start to fall into the pan. Rotate the pomegranate to get as many of the seeds as possible out as you do this.
  • Remove the white membrane from inside the pomegranate half to loosen the remaining seeds. Also remove any membrane fragments that fall into the pan. Repeat with the other half of the pomegranate.
  • Place all remaining ingredients in the pan. Bring to a boil, reduce heat to low, and simmer until thick, about 30 minutes, stirring frequently to keep from sticking.
  • Store, refrigerated, in an airtight container.
