Sweet and Tangy Jerk Chicken with Caramelized Pineapple and Mango image

The flavors in this dish just scream warm and sunny tropical island. It's a fast, easy recipe that the whole family will love and it's ready in less than 15 minutes. It isn't traditional jerk chicken but who said we always have to be traditional. I love the warming flavors in jerk seasoning and combined with an easy sauce that's ridiculously good, the chicken is bursting with sweet-and-tangy flavor and wonderfully moist. I used coconut oil for the caramelize fruit which enhances the tropical flair, but you can substitute with another oil.

1/2 cup honey
1/4 cup pineapple juice (from one 16-ounce can pineapple chunks, reserve the pineapple for caramelizing)
2 tablespoons lemon juice
2 tablespoons apple cider vinegar
2 tablespoons olive oil for sauce + 1 tablespoon for cooking chicken
2 tablespoons light brown sugar, packed
1 tablespoon jerk seasoning for sauce + more for sprinkling over chicken
1/2 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
4 boneless skinless chicken breasts (about 1 1/2 pounds)
1/2 to 1 tablespoon coconut oil (or another preferred oil)
about 1 cup pineapple chunks (reserved from can)
about 1 cup mango chunks (I used frozen that I allowed to thaw)
1/2 teaspoon salt, optional and to taste

Steps:

  • Chicken - To a medium bowl or large measuring cup, add the honey, pineapple juice, lemon juice, apple cider vinegar, 2 tablespoons olive oil, brown sugar, 1 tablespoon jerk seasoning, salt, pepper, and stir to combine; set aside.
  • To a large skillet, add 1 tablespoon olive oil, generously sprinkle each chicken breast on both sides with jerk seasoning. Add chicken to skillet and cook chicken over medium-high heat for 3 to 4 minutes on each side so that it has a nice sear. Cooking time will vary based on thickness of chicken breasts. Chicken should be about 80 to 90% cooked through.
  • Remove skillet from heat, turn heat to medium-low, and carefully add the sauce noting that it will bubble up vigorously in the first few seconds.
  • Place skillet back on the heat and allow chicken to cook for about 10 minutes, or until sauce has thickened and reduced some, has darkened in color, and chicken is cooked through. Flip chicken a few times throughout. While chicken cooks, caramelize the fruit.
  • Caramelized Pineapple and Mango - To a separate large skillet, add the coconut oil, pineapple, mango, optionally sprinkle with salt, and cook over medium-high heat until golden brown and caramelized, about 8 minutes, flipping every few minutes to ensure all sides are evenly cooked.
  • Top chicken with caramelized fruit and serve immediately. Chicken and fruit are best warm and fresh, but leftovers will keep airtight in the fridge for up to 3 days. I store fruit and chicken separately.

4 chicken breast halves, bone-in
3 tablespoons Sandra Lee's All-Purpose Rub, recipe follows
1 tablespoon ground cumin
1/2 teaspoon cayenne
8 ounces frozen peach slices, diced small
8 ounces frozen mango chunks, diced small
1 jalapeno, finely chopped
1/4 teaspoon salt
1/4 cup chopped fresh cilantro leaves
1 lime, juiced
2 (1.25-ounce) packets original chili seasoning
3 tablespoons granulated garlic
1 tablespoon kosher salt
1 tablespoon salt-free all-purpose seasoning
2 tablespoons sugar

Steps:

  • Set up grill for direct grilling over medium-high heat. Oil grate when ready to start cooking.
  • Rinse and pat dry chicken breast; set aside.
  • In a small bowl, mix together All-Purpose Rub, cumin, and cayenne. Gently pat onto all sides of chicken breasts using all the rub mix; set aside while preparing salsa.
  • For salsa: In a medium bowl, toss to combine all ingredients. NOTE: It is easier to dice frozen fruit while it is still frozen. Cover and set aside while chicken cooks.
  • Place chicken on hot oiled grill. Grill chicken 5 to 6 minutes per side or until done.
  • INDOOR: Preheat oven to 350 degrees F. Prepare chicken breasts, as directed. Roast chicken breasts in preheated oven for 35 to 40 minutes.
  • Serve chicken hot with salsa.
  • Combine all ingredients. Store in air-tight container in cool dry place or freezer.

This is a recipe I developed while grilling Jerked chicken this year. The sauce is an excellent contrast to the Jerked grilled chicken and is very tropical. It is very easy to make.

1 (12 ounce) can mango nectar
1 fresh peach
1 fresh mango
1/2 cup brown sugar
1/8 cup Worcestershire sauce
2 tablespoons prepared mustard
1/4 teaspoon saigon cinnamon

Steps:

  • Pour both cans of necter into a medium sized sauce pan over medium heat.
  • Peel the skin off the mango and peach and cut into 1/4 inch cubes and place into pot with the necter.
  • Add remaining ingredients and simmer until cooked down and the mixture thickens. approximately 20-30 minute

1 large Scotch bonnet pepper, stem and seeds removed

2 tablespoons red wine vinegar
1 tablespoon light brown sugar

4 chicken thighs, skin on, bone in
4 drumsticks, skin on

Steps:

  • Puree all the ingredients, except the chicken, in a food processor until almost smooth. Piece the chicken with a fork to make tiny holes. Place the chicken in a large shallow baking dish and rub the marinade into the chicken. Cover and refrigerate for 24 to 48 hours, depending on how intense you want the flavor to be. Preheat grill. Grill chicken on each side for 5 to 6 minutes or until cooked through.
  • For the mango cilantro relish:
  • Combine the mangoes, onion, cilantro, lime juice, and orange juice in a bowl and gently mix. Season to taste with salt and pepper.

4 spring onions , finely sliced

1 mango, peeled and diced
¾ cup water
1 tablespoon seasoned rice vinegar
1 clove garlic, minced
1 pinch salt
½ cup brown sugar, divided
2 habanero peppers, seeded and minced
2 tablespoons water
1 teaspoon cornstarch
3 tablespoons vegetable oil, divided, or as needed
6 chicken thighs, diced
1 tablespoon jerk seasoning, or more to taste
1 shallot, finely chopped
1 clove garlic, minced
1 head green cabbage, shredded
1 (12 ounce) package shredded carrots
2 very ripe yellow plantains, peeled and diced
1 (16 ounce) package egg roll wrappers
1 egg
1 tablespoon water
vegetable oil for frying

Steps:

  • Combine mango with 3/4 cup water, rice vinegar, garlic, and salt in small saucepan. Add most of the brown sugar, reserving 1 teaspoon. Bring to a boil. Reduce heat to medium-low. Cook for 5 minutes. Add habanero peppers and simmer on low for 2 minutes. Mix 2 tablespoon water with cornstarch; stir slurry into the pan. Cook over medium-high until thick, 3 to 5 minutes. Leave mixture chunky or blend for a smoother texture.
  • Heat 1 tablespoon oil in a large saucepan over medium-high heat. Add chicken thighs and saute until browned, 5 to 7 minutes; sprinkle jerk seasoning over chicken. Add shallot and garlic; cook and stir until shallot begins to soften, about 3 minutes. Reduce heat to medium. Add cabbage, carrots, and reserved sugar. Cook until cabbage is translucent but still a little crunchy, 3 to 5 minutes. Taste for seasoning. Let mixture cool.
  • Heat remaining vegetable oil in a pan over medium-high heat. Fry plantains until they start to brown, about 5 minutes. Transfer plantains onto a paper towel and let cool.
  • Separate and place egg roll wrappers onto your work surface. Mix egg with water for the egg wash.
  • Lay out one wrapper with a corner pointed toward you. Use a slotted spoon to add some of the chicken and cabbage mixtures across the center. Sprinkle plantain bits on top. Use your finger or a pastry brush to lightly moisten edges of wonton wrappers with egg wash. Fold one corner of the wrapper over the filling onto the opposite corner to form a triangle. Press edges together to seal. Fill and fold remaining egg rolls.
  • Heat oil in a large saucepan over medium-high heat. Fry egg rolls in batches in the hot oil, turning occasionally, until golden brown, about 5 minutes. Remove from oil and drain on paper towels or rack. Serve with the mango-habanero sauce.

We can handle the heat, but we're not here to show off how much pain we can tolerate. Looking to hit a delicate balance between heat and flavor, we made a fiery jerk-inspired spice rub for chicken wings and added a sweet and spicy mango-cilantro sauce to temper the heat.

1 teaspoon cayenne
2 teaspoons ground allspice
1/2 teaspoon ground nutmeg
1/2 tablespoon garlic powder
1/4 teaspoon ground cloves

2 pounds chicken wings, separated at the joint

Steps:

  • Prepare a grill for high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off).
  • For the wings: Add the paprika, cayenne, allspice, nutmeg, garlic powder, cloves, ginger, minced garlic, thyme, salt and pepper to a small bowl and stir to combine. Reserve 1 tablespoon of the spice mixture for the mango sauce.
  • Put the chicken wings in a large bowl with the remaining spice mixture. Toss to evenly coat. Reserve the wings while you make the sauce.
  • For the mango-cilantro sauce: Put the orange juice, mango jam, 1 tablespoon reserved spice mixture, honey, cilantro, orange zest, scallions and Scotch bonnet in a blender. Blend until smooth. Pour into a bowl and reserve at room temperature while you grill the wings.
  • Place the chicken wings on the grill over the indirect heat zone. Cover and grill for 5 minutes. Flip the wings and continue to cook for an additional 5 minutes. Move the wings directly over the heat and cook until nicely charred and cooked through, about 5 minutes.
  • Remove the wings from the grill and toss with the reserved sauce. Pile onto a platter and garnish with chopped cilantro.

Peaches are in season. I have an over abundance of peaches that I need to use up. This is a barbecue sauce I came up with. It is sweet tangy and a little spicy. We really enjoyed this on chicken. It is sweet, tangy, and little spicy. The sauce works really well on chicken, and I believe it would work really well on pork too.

2 1/4 c peeled chopped peaches ( about 3)
1 c mango juice
3/4 c yellow mustard
4 Tbsp brown sugar
1/2 tsp salt
1/2 tsp ground black pepper
1 tsp chili powder
3/4 tsp smoked paprika or regular
1 tsp worcestershire sauce
1/2 c honey
1/4 c ketchup regular or gluten free
1 Tbsp molasses
2 clove garlic
1/2 c chopped onion
1 Tbsp chop jalapeño pepper fresh or jarred ( optional)
8 skinless chicken thighs, breast, or legs
OPTIONAL
2 peaches peeled with pit removed.

Steps:

  • 1. Take a half cup of chopped peaches and set them aside. Place remaing peaches in a food processor. add the mango juice and pulse until it is smooth .
  • 2. set stove to medium-high heat. in a large sauce pan add the peach mango mixture. add in the half cup of reserve peaches.
  • 3. Add in all of the ingredients except for the garlic onion and jalapeño. pepper. Stir while it is cooking. Reduce heat to medium.
  • 4. Sauté the onion in a pan with about a tablespoon of olive oil. Cook until translucent. add the onion into the sauce. Into the pan add some more olive oil and cooked chopped garlic just until lightly golden. about 1 min. Add the garlic to the sauce.
  • 5. Add the chopped pepper directly to the sauce and stir well to combine.
  • 6. Bring sauce back up to a boil. Continue to cook reducing heat to medium low. stir occasionally until it mixture boils down and is thickened. This step should take about 30 to 40 minutes. Remove from heat and let cool. It will thicken even more after it cools. Keep refrigerated 1-2 weeks. Use it to baste grilled chicken or you may use it it to baste pork ribs.
  • 7. Bake chicken , or Grill chicken. Baste with sauce while cooking. coating each side of chicken twice. I grilled mine. I like the nice char on my chicken.
  • 8. Each cut of chicken differs in cooking time. Cook chicken Until meat is not pink is in the center before serving. Grill time approximately 30 minutes for thighs. Picture shown served with grilled peaches. Simply cut peaches in half remove pit. Cook on grill until slightly tender.
