Grilled Jerk-Spiced Chicken Wings with Mango Sauce image

At one of the highest levels of heat comes one of Jamaica's most famous exports. Not reggae, not rum...JERK CHICKEN. We can handle the heat, but we're not here to show off how much pain we can tolerate. Looking to hit a delicate balance between heat and flavor, we made a fiery jerk-inspired spice rub for chicken wings and added a sweet and spicy mango-cilantro sauce to temper the heat.

2 tablespoons paprika
1 teaspoon cayenne
2 teaspoons ground allspice
1/2 teaspoon ground nutmeg
1/2 tablespoon garlic powder
1/4 teaspoon ground cloves
1 teaspoon minced ginger
2 cloves garlic, minced
2 teaspoons minced fresh thyme
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds chicken wings, separated at the joint
1/3 cup orange juice
1/2 cup mango jam
1 tablespoon honey
1/4 cup cilantro leaves, plus more for garnish
1 tablespoon finely grated orange zest
2 scallions, chopped
1 Scotch bonnet pepper, chopped (see Cook's Note)

Steps:

  • Prepare a grill for high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off).
  • For the wings: Add the paprika, cayenne, allspice, nutmeg, garlic powder, cloves, ginger, minced garlic, thyme, salt and pepper to a small bowl and stir to combine. Reserve 1 tablespoon of the spice mixture for the mango sauce.
  • Put the chicken wings in a large bowl with the remaining spice mixture. Toss to evenly coat. Reserve the wings while you make the sauce.
  • For the mango-cilantro sauce: Put the orange juice, mango jam, 1 tablespoon reserved spice mixture, honey, cilantro, orange zest, scallions and Scotch bonnet in a blender. Blend until smooth. Pour into a bowl and reserve at room temperature while you grill the wings.
  • Place the chicken wings on the grill over the indirect heat zone. Cover and grill for 5 minutes. Flip the wings and continue to cook for an additional 5 minutes. Move the wings directly over the heat and cook until nicely charred and cooked through, about 5 minutes.
  • Remove the wings from the grill and toss with the reserved sauce. Pile onto a platter and garnish with chopped cilantro.

1 lb chicken wing
1 mango
3 habanero peppers, optional, seeded or unseeded

¼ cup apple cider vinegar
2 tablespoons lime juice
¼ cup honey

Steps:

  • Preheat oven to 425ºF (220ºC).
  • In a small mixing bowl, combine flour, chili powder, garlic powder, pepper, and salt.
  • Pat the chicken wings dry using a paper towel.
  • Batter them in the flour mixture and place chicken wings on a wired baking sheet.
  • Bake at 425ºF (220ºC) for 45 minutes, flipping halfway for even cooking.
  • In a food processor or blender, mix together the mango, habanero peppers, garlic, paprika, apple cider vinegar, and lime juice. Blend until fully combined. The mixture should be a bright orange vibrant color.
  • In a saucepan, combine honey with your mango habanero mixture at medium heat. Stir occasionally to prevent sticking and simmer for 5-10 minutes or until your sauce reaches a prefered consistency.
  • Fully coat your cooked wings in the sauce then place on a parchment-lined baking sheet.
  • Bake at 450ºF (230ºC) for 8-10 minutes or until sauce has slightly caramelized.

1 tablespoon olive oil
1/2 medium onion (chopped)
1 1/2 cups mango (sliced and cubed)
1/4 cup lime or lemon juice
2/3 cup mango nectar or orange juice
2 tablespoons brown sugar
1 tablespoon honey
1 1/2 teaspoons allspice
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon paprika
1/4 teaspoon cayenne
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons garlic powder
1 1/2 pounds chicken wings (disjointed)
Salt and pepper to taste

Steps:

  • Add olive oil to pan then cook onion until tender.
  • Next saute mango until tender.
  • Add mango, lime or lemon juice and mango nectar or orange juice, brown sugar, honey and all spices to blender or food processor and grind until smooth. If it needs to thin a bit more, add a little bit more juice.
  • Pour marinade into a large ziploc bag and submerge chicken in marinade. Seal and refrigerate for at least 4 hours and up to 8 hours.
  • Preheat oven to 425 degrees and line a baking sheet with non stick foil or parchment paper.
  • Remove chicken from marinade and season on both sides with remaining salt and pepper.
  • Bake chicken on first side for 15 minutes then turn over. For more flavor, feel free to baste chicken with marinade during cooking. Cook for another 10-15 minutes or until chicken is completely done, marinade is sticky on chicken and it is browned.

12 Chicken wings
1/4 teaspoon turmeric
1/2 teaspoon kosher salt

1 cup mango chutney
2 tablespoons lemon juice
2 tablespoons yellow mustard

Steps:

  • Toss 12 chicken wings with 1/4 teaspoon turmeric, 1/2 teaspoon kosher salt, and pepper to taste. Spread on an oiled baking sheet; bake at 425 degrees F until golden, about 30 minutes. Whisk 1 cup mango chutney, 2 tablespoons each lemon juice and yellow mustard, and a pinch of salt. Toss the chicken with half of the sauce; return to the baking sheet and bake 5 more minutes. Okay, I didn't mean that, but these really are amazing; a perfect balance of sweet, sour, salty, and spicy. I'm usually pretty casual about you changing my recipes, but I'm going to have to insist you not change any of the key ingredients, which are, every one of them.

½ yellow onion, chopped
½ cup green onions, sliced
6 cloves garlic
3 habanero peppers, seeded and chopped
2 tablespoons fresh thyme leaves
1 tablespoon kosher salt
2 teaspoons ground black pepper
2 teaspoons ground allspice
1 teaspoon dried thyme
½ teaspoon ground cinnamon
½ teaspoon ground cumin
½ teaspoon freshly grated nutmeg
2 tablespoons vegetable oil
3 tablespoons soy sauce
2 tablespoons brown sugar
⅓ cup lime juice
3 pounds chicken wing drumettes
cooking spray

Steps:

  • Put yellow onion, green onions, garlic, habanero peppers, fresh thyme, kosher salt, black pepper, allspice, dried thyme, cinnamon, cumin, nutmeg, vegetable oil, soy sauce, brown sugar, and lime juice, respectively, in a blender and blend until marinade is completely smooth.
  • Place chicken in a large bowl. Pour marinade over chicken and toss to coat completely. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 8 hours or overnight.
  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Place chicken drumettes on prepared baking sheet and reserve marinade left in the bowl.
  • Bake in the preheated oven for 25 minutes.
  • Brush 1/2 the reserved marinade onto chicken and turn wings over. Bake for 15 minutes.
  • Turn chicken and brush on remaining 1/2 the reserved marinade. Bake until tender and caramelized, 10 to 15 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Rest wings on baking sheet for 5 minutes before removing to a serving platter.

Being a big fan of restaurant-style mango-habanero wings, I set out to create something similar. I found multiple recipes online, but none seemed up to my standards. After about a year of making a few and combining different ideas, I came up with this one. Every time I've made this, it's been a huge hit and people are always asking me for the recipe, so here it is. The cornstarch absorbs extra moisture and forms a very thin crispy crust on the wings. It's not a heavy breading, it just adds a bit of crunch.

30 chicken wing sections
1 (12 ounce) can mango nectar
¼ cup brown sugar
6 habanero peppers, stemmed
2 tablespoons soy sauce
1 tablespoon sriracha hot chili sauce
1 tablespoon rice vinegar
1 stick butter
3 cloves garlic, minced
2 tablespoons honey
1 cup cornstarch
2 cups vegetable oil for frying

Steps:

  • Rinse chicken wings and pat dry with paper towels. Place wings on a baking sheet and refrigerate to dry a bit more.
  • Combine mango nectar, brown sugar, habanero peppers, soy sauce, sriracha sauce, and vinegar in a food processor. Mix until peppers are pureed; seeds will still be visible. Remove food processor lid carefully; the pepper fumes can be strong.
  • Melt butter in a saucepan over medium heat. Add minced garlic; cook until fragrant, about 30 seconds. Add the mango-habanero mixture immediately; bring to a simmer, stirring frequently. Reduce heat to medium-low; add honey. Simmer, stirring frequently, until sauce is reduced by 75% and thickened to a glaze, 45 minutes to 1 hour. Remove from heat.
  • Preheat the oven to 200 degrees F (95 degrees C).
  • Heat oil in a deep-fryer to 350 degrees F (175 degrees C).
  • Coat wings lightly with cornstarch. Place 5 to 6 wings in the hot oil; fry until golden brown and crispy, about 8 minutes. Place wings on a paper towel to absorb excess oil; transfer to the preheated oven to keep warm. Repeat until all wings have been fried and drained.
  • Place wings in a large bowl. Pour half the sauce over the wings and mix, coating the wings with the sauce. Continue adding the remaining sauce until you have coated the wings to your liking.

1 cup scallions, whites and greens roughly chopped (6 to 8 scallions), plus extra sliced for garnish
1/3 cup vegetable oil, plus additional for oiling the grill grates
1/3 cup soy sauce
2 tablespoons roughly chopped fresh ginger
2 tablespoons light brown sugar, packed
1 tablespoon fresh thyme leaves, plus a small handful of sprigs
3/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon
3 cloves garlic, roughly chopped
2 Scotch bonnet peppers, halved and seeds removed (see Cook's Note)
Zest and juice of 1 lime, plus wedges for serving
Kosher salt and freshly ground black pepper
3 pounds chicken wings, wingettes and drumettes separated and tips discarded

Steps:

  • Combine the scallions, oil, soy sauce, ginger, brown sugar, thyme leaves, allspice, cinnamon, garlic, Scotch bonnet peppers, lime zest and juice and 1/2 teaspoon ground black pepper in a food processor. Pulse until smooth. Reserve 1/2 cup marinade for basting later. Put the chicken wings and remaining marinade in a large resealable plastic bag. Rub the thyme sprigs between your hands and add to the bag. Seal the bag and massage to distribute the marinade evenly. Refrigerate for at least 4 hours or up to overnight. Remove to room temperature 30 minutes before grilling.
  • Preheat a grill for indirect and direct grilling over medium heat. For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Lightly oil the grill grates. Remove the wings from the bag and season all over with salt. Add the wings to the indirect-heat side. Cover and cook, flipping halfway through, about 20 minutes (the wings will be almost completely cooked at this point). Uncover the grill and baste the wings with some of the reserved marinade. Flip the wings onto the hot side of the grill to crisp up and cook, about 3 minutes, then baste, flip and cook until the wings are cooked all the way through, about 4 minutes more.
  • Sprinkle with sliced scallions and serve with lime wedges.

2 tablespoons red wine vinegar
1 tablespoon light brown sugar

1/4 teaspoon freshly ground black pepper
1 teaspoon fresh lime juice
4 chicken thighs, skin on, bone in
4 drumsticks, skin on
2 mangoes, peeled and diced
1/4 cup finely chopped red onion
2 tablespoons chopped cilantro
3 tablespoons lime juice
3 tablespoons fresh orange juice
Salt and freshly ground pepper

Steps:

  • Puree all the ingredients, except the chicken, in a food processor until almost smooth. Piece the chicken with a fork to make tiny holes. Place the chicken in a large shallow baking dish and rub the marinade into the chicken. Cover and refrigerate for 24 to 48 hours, depending on how intense you want the flavor to be. Preheat grill. Grill chicken on each side for 5 to 6 minutes or until cooked through.
  • For the mango cilantro relish:
  • Combine the mangoes, onion, cilantro, lime juice, and orange juice in a bowl and gently mix. Season to taste with salt and pepper.
