These Mango Coconut Meatballs are the perfect blend of spicy and sweet. They're quick enough to make on a weeknight and make enough to use as meal prep for the week.

Ingredients

2 pounds ground chicken
1 cup plain bread crumbs
2 eggs
2 jalapeños (seeded and diced small)
2 mangoes (peeled and diced small)
1/4 cup cilantro (chopped fine)
1/3 cup coconut milk
2 teaspoons salt
1/2 teaspoon pepper
1/2 Tablespoon chili powder
1/2 teaspoon garlic powder
1 teaspoon cumin
2 mangoes (peeled and diced)
2/3 cup coconut milk
3/4 cup heavy cream
2 Tablespoons lime juice

Steps:

Preheat oven to 375 degrees.
Lightly spray a large baking sheet with non-stick cooking spray and set aside.
In a large bowl, mix together the ground chicken, bread crumbs, eggs, jalapenos, mangoes, cilantro, coconut milk, salt, pepper, chili powder, garlic powder, and cumin until thoroughly combined.
Shape into balls that are about 1 1/2 inches in size (should make about 35-40 meatballs).
Set each meatball on the prepared baking sheet.
Cook for 20-25 minutes or until meat is cooked through.
While the meatballs are cooking, make the coconut mango sauce.
Combine all the ingredients for the sauce in food processor or blender.
Pour the mixture into a saucepan. Bring to a boil, then remove from heat.
Serve sauce with the meatballs.

Mix together all the ingredients for the meatballs, except the avocado oil. Form the meat mixture into meatballs about 2″ in diameter, you will have around 24. Heat a large skillet over medium high heat. When the pan is hot but not smoking, add the avocado oil and sauté the meatballs in 2 batches to brown the sides.
Remove the meatballs from the pan and set them aside. Add a touch more oil if necessary along with the garlic and ginger called for in the sauce portion of the recipe. Sauté until fragrant, stirring, about 1 minute. Add the lime zest, coriander, turmeric, chili flakes, fish sauce, and coconut milk.
Stir, scraping up any browned bits from the bottom. Then add the meatballs back to the pan, and simmer until the meatballs are done, and the sauce is thickened, about 8-10 minutes.
When the meatballs are done, season the sauce to taste with sea salt, and add the diced mango to the pan. Stir to combine, being careful not to break up the meatballs. Serve immediately with your choice of sides.
