Mango Chicken Salad image

Mango, lime juice, cilantro, and coconut give this chicken salad tropical flavors. Yogurt replaces the usual mayonnaise for a lighter dish.

1/2 cup sweetened shredded coconut
3/4 cup plain low-fat yogurt
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons Major Grey's mango chutney
1 tablespoon Dijon mustard
1 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
Coarse salt and ground pepper
1 Easy Roasted Chicken or store-bought rotisserie chicken (about 2 1/2 pounds), shredded (about 4 cups)
1 mango, peeled, seeded, and diced
10 ounces baby spinach

Steps:

  • Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet; toast, tossing occasionally, until golden, 8 to 10 minutes; cool.
  • In a medium bowl, whisk yogurt, cilantro, lime juice, chutney, mustard, turmeric, and cayenne; season with salt and pepper. Add chicken and mango; toss. Serve on spinach, sprinkled with toasted coconut.

3 Tbsp. KRAFT Real Mayo
2 Tbsp. milk
1 pkg. (6 oz.) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips
1 medium mango, peeled, pitted and chopped
1 medium avocado, peeled, pitted and chopped
9 lettuce leaves

Steps:

  • Mix yogurt, mayo and milk until well blended.
  • Toss chicken breast strips, mangos and avocados with 1/2 cup of the yogurt mixture.
  • Spoon evenly onto lettuce-covered plates. Top evenly with the remaining yogurt mixture.

Chicken, Mango and Chilli Salad image

This started off life as a reworking of Coronation Chicken, that mixture I can't help liking, against all contemporary culinary strictures, of cold chicken, mayo, mango chutney, curry powder and apricot puree (or that's how both my grandmothers made it). But still, I wanted to pare it down, make it lighter and fresher, and so this is it. For US cup measures, use the toggle at the top of the ingredients list.

Number Of Ingredients 9

1 mango (cut into approx. 1cm cubes)
1 spring onion (finely chopped)
1 - 2 red chillies (or to taste) deseeded and finely chopped
juice of 2 limes (to taste)
1 cold cooked chicken breast (cut into chunks)
1 little gem lettuce (sliced or shredded)
1 large handful fresh coriander (chopped)
1 teaspoon vegetable oil
4 drops toasted sesame oil

Steps:

  • Tumble the mango cubes, and any juice they make, into a bowl and, with your hands, mix in the chopped spring onion and chilli and squeeze over the lime juice: use as much or as little as you want; frankly, the amount of juice you can get from a lime varies enormously from one to another. I tend to leave all these to steep while I get on with the rest of my shredding and chopping, but whatever way you do it, tumble in the chunked chicken and shredded lettuce and most of the fresh coriander and, using your hands, toss to combine. Add the oils and toss again then decant on to a large serving plate and sprinkle over the remaining bit of fresh coriander.

2 cups shredded cooked chicken breast
1 medium mango, sliced
½ cup coarsely chopped fresh mint

  • Whisk juice, vinegar, soy sauce, sesame oil and sambal oelek (if using) in a large bowl. Add cabbage, peas, chicken, mango, mint and scallions; toss gently to coat. Serve the salad sprinkled with sesame seeds.
