A delicious rice pudding studded with raisins and mandarin oranges.Served in individual glass serving dishes and topped with whipped cream, this rice pudding is pretty and elegant enough to serve to company.

2 1/2 cups cooked rice, cooled
1 cup undiluted evaporated milk
1/2 cup mandarin orange liquid (can)
1/2 cup white sugar
3 tablespoons butter, melted
1 teaspoon vanilla
3 eggs, beaten
1/2 cup raisins
1 cup drained mandarin orange section

Steps:

  • Combine all ingredients except mandarin oranges.
  • Mix well.
  • Place in lightly buttered crockpot.
  • Cover and cook on Low for 4 to 6 hours or High for 2 to 3 hours.
  • Stir after first 30 minutes.
  • Stir in mandarin oranges during last half hour.
  • Serve warm.

Cooked rice is combined with milk, sugar, and an egg and flavored with butter and vanilla in this quick stovetop rice pudding.

1 ½ cups cooked rice
2 cups milk, divided
¼ teaspoon salt
⅔ cup golden raisins
1 egg, beaten
⅓ cup white sugar
1 tablespoon butter
½ teaspoon vanilla extract

Steps:

  • Combine cooked rice, 1 1/2 cups milk, and salt in a saucepan over medium heat; cook and stir until thick and creamy, 15 to 20 minutes. Stir remaining 1/2 cup milk, golden raisins, beaten egg, and white sugar into the rice mixture; stirring continually. Continue cooking until egg is set, 2 to 3 minutes. Remove saucepan from heat; stir butter and vanilla extract into the pudding.

  • For caramelised mandarin compote, stir sugar and 100ml water in a saucepan over medium-high heat to dissolve sugar, then bring to the boil, brush down sides of pan with a wet pastry brush and cook until dark caramel (10-15 minutes). Reduce heat to low, add mandarin segments and juice (be careful as hot caramel will spit) and scraped vanilla pod and stir to combine. Cool to room temperature and refrigerate to develop flavours (overnight).
  • Bring rice and enough cold water to cover to the boil in a saucepan over high heat. Drain, return to pan with milk, cream, sugar, lemon rind, vanilla seeds and a pinch of salt, cover, then stir occasionally over low heat until rice is tender (30-40 minutes).
  • Bring caramelised mandarin compote to room temperature, divide warm rice pudding among bowls, spoon compote over and serve with extra compote.
