Prompted by a visit from my husband's orange-loving grandmother (she spends winters in Florida), I planned an orangy dinner. Even the main dish fit the theme, with mandarin oranges and orange juice in this savory chicken and rice bake. -Susan West North Grafton, Massachusetts

- Spread rice in a greased shallow 3-qt. baking dish. Top with chicken and mushrooms. Pour orange juice and broth over all. Sprinkle with salt and pepper. , Cover and bake at 350° for 45-50 minutes or until chicken juices run clear and rice is tender. Garnish with oranges, paprika and parsley if desired.

- In a large bowl, combine the flour, salt and pepper. Add chicken, a few pieces at a time, and turn to coat. , In a skillet, brown chicken in butter until no longer pink. In a small saucepan, combine the oranges, marmalade and tarragon; bring to a boil. Pour over chicken; stir gently to coat. Serve warm, with toothpicks.

MANDARIN CHICKEN TENDERS
Mandarin orange flavored chicken. I found this recipe in Take Heart leaflet. This recipe is from Easy Healthy Cooking With 4 Ingredients. A serving is 1 cup. When I made this recipe I used mandarin oranges sweetened with Splenda and the Honey and Ginger.

- Preheat a skillet sprayed with oil over medium heat. Season chicken tenders to taste with salt or salt substitute and freshly ground black pepper. Add tenders to the skillet and brown tenders lightly on both sides, checking for donesness.
- Add orange juice and soy sauce to the skillet. Cover and simmer about 10 minutes. Add mandarin orange sections and simmer an additional 5 minutes.
- Flavor perk: Add 2 tablespoons honey and 1/2 teaspoon ground ginger to soy sauce mixture.

- Place flour in a small bowl. Dredge chicken in the flour to lightly coat.
- Heat olive oil and butter in a medium skillet over medium heat, and saute the chicken breasts until no longer pink and juices run clear. Set aside, and keep warm.
- Stir hoisin sauce and orange juice into the skillet, and scrape up the browned bits. Mix in mandarin oranges, green onions, and cashews, Return chicken to the skillet. Continue cooking until all ingredients are heated through.

MANDARIN CHICKEN
This is very similar to the Mandarin chicken served in the malls, except I use white meat chicken. Boneless chicken thighs are what the restaurant uses. It's quick, easy and delicious. Sometimes I'll make this, then a quick trip to the local Chinese take-out for vegetable lo mein and eggrolls for a cheap, tasty Chinese meal that's almost homemade. You'll be amazed at how authentic this tastes! *Note: I have adjusted the amount of sugar to reflect comments written in reviews. If you like it sweet, use the full 2/3 cup.

Steps:
- Spray chicken breasts with vegetable oil spray.
- Grill chicken breasts 4-6 minutes per side or until done (chicken should be brown in spots).
- Chop chicken into bite size pieces, set aside.
- Combine sugar, soy sauce, lemon juice, oil, garlic and ginger in a small saucepan.
- Heat over medium until sugar is dissolved, stirring often.
- Bring to boil.
- Combine cornstarch and water.
- Add to sauce pan, stirring often.
- Reduce heat and simmer 4-6 minutes or until sauce thickens.
- Pour chicken into a large frying pan over medium heat.
- Heat until chicken sizzles, then reduce heat and pour sauce over the chicken.
- Heat through.
- Serve over white rice.

- Place a large ziptop bag inside of a baking dish so that it is upright with the opening at the top. Add the chicken strips. In a large measuring cup or small bowl, whisk together the milk, soy sauce, honey, vinegar, sesame oil, garlic, ginger, and hot sauce until combined. Carefully pour the liquid into the bag, then seal the bag, removing as much air as possible. Turn the bag so that the chicken is well coated, then let marinate at room temperature for 30 minutes or place in the refrigerator overnight.
- When ready to bake: Preheat oven to 350 degrees F. Line a rimmed baking sheet with foil, then place an ovenproof wire rack on top of it. Coat the rack with nonstick spray.
- Place the panko in a large, shallow dish (a 9×13-inch pan works well). Drizzle the oil over the top, then toss to moisten.
- Arrange the ingredients in a line from left to right as follows: marinated chicken, panko breadcrumbs, baking sheet. Working with a few pieces of chicken at a time, with your left hand, remove the chicken from the marinade and shake off any excess (this is the “wet” hand). Place the chicken in the dish with the panko. With your right hand (the “dry” hand), pat the chicken on all sides with the breadcrumbs, pressing them on lightly so that the chicken is well coated. Still with your dry hand, place the chicken on the baking sheet, leaving a little space between each tender. Repeat for remaining tenders.
