Mandarin Chicken Pasta Salad is a tasty spin on a classic deli side! Pasta, chicken, mandarin oranges, and veggies with a tangy sweet orange vinaigrette.

Steps:
- To make the dressing, whisk together rice vinegar, orange juice, vegetable oil, sesame oil, sugar, ground ginger, garlic powder and onion powder until smooth.
- In a large bowl add the pasta, cucumber, red bell pepper, onion, carrot, garlic and chicken.
- Toss well with the dressing until well coated.
- Refrigerate 1 hour before serving.
- Garnish with mandarin oranges and sliced almonds.

I had this at a party and couldn't get it off my mind. It's a fruity Asian chicken salad that even my family's picky eaters enjoy. I bake my own chicken for more flavor, which adds to the prep time, but pre-cooked or canned chicken will also work just fine.

- To make the dressing, whisk together the ginger root, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar, and garlic until well blended. Cover, and refrigerate until needed.
- Bring a large pot of lightly salted water to a boil. Add the bowtie pasta and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water. Place pasta in a large bowl.
- To make the salad, toss the cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, and almonds with the pasta. Pour the dressing over the salad mixture, and toss again to coat evenly. Serve immediately.

- For dressing combine gingerroot, vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic; whisk until well blended.
- For salad, cook pasta according to package directions; drain and rinse under cold water. Place pasta in a large serving bowl.
- While pasta is cooking, slice cucumber, dice bell pepper , and chop onion.
- Add cucumber, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta.

Steps:
- Cook chicken until tender. (I cook mine in a pressure saucepan). When cool, remove skin, debone and cut into bite-sized pieces.
- Prepare pasta according to package directions to al dente. Rinse in cold water. Drain well.
- Add chicken to pasta. Stir in grapes and pecans.
- Mix together dressing ingredients, blending well. Toss with chicken and pasta mixture.
- Gently fold in mandarin orange sections.
- Chill at least one hour.

- Cook pasta according to package directions. Drain and rinse with cold water; set aside. In a large skillet, saute chicken and garlic in butter until chicken is no longer pink; sprinkle with seasoned salt. Remove with a slotted spoon; set aside., In the same skillet, saute water chestnuts for 2-3 minutes. Drain oranges, reserve 1/2 cup juice. In a large serving bowl, combine oranges, pasta, chicken, water chestnuts, peas, mushrooms, carrots and onions., In a jar with a tight-fitting lid, combine the oil, vinegar, soy sauce, garlic, sugar, honey, ginger and reserved mandarin orange juice; shake well. - Vinaigrette – To a medium bowl, add all ingredients, whisk to combine; set aside. Note – You are only adding the juice from one can of mandarins to the vinaigrette. Add the mandarins to a separate very large bowl.
- Salad – Cook pasta according to package directions, drain, and add it to the bowl with the mandarins.
- While the pasta is cooking, to a large skillet add the sesame oil, olive oil, chicken, season with salt and pepper, and cook over medium-high heat for about 5 minutes, or until chicken is cooked through; stir and flip intermittently to ensure even cooking. Add chicken and all cooking juices to the bowl with the mandarins and pasta.
- Add the peppers, carrots, cucumbers, additional one can of mandarins (drain juice and discard), spinach, add the vinaigrette, stir and toss to combine and coat evenly. Tip – Because of the large volume of this salad, you may want to add half the spinach to start with to your mixing bowl, and as things get mixed and the spinach wilts a bit, add the remaining spinach and continue mixing.
