Mandarin Chicken Pasta Salad is a tasty spin on a classic deli side! Pasta, chicken, mandarin oranges, and veggies with a tangy sweet orange vinaigrette.

1/3 cup rice vinegar
1/4 cup orange juice
1/4 cup vegetable oil
2 teaspoons toasted sesame oil
2 teaspoons sugar
1 teaspoon ground ginger
1 teaspoon garlic powder
1 teaspoon onion powder
8 ounces rotini pasta (, cooked and drained)
1 cup cucumber (, peeled, seeded, and cubed)
1 red bell pepper (, diced)
1/4 red onion (, minced)
1 medium carrot (, shredded)
2 cloves garlic (, minced)
2 cups chicken breast (, cooked and diced)
11 ounce can mandarin orange segments (, drained)
½ cup sliced almonds (, toasted)

Steps:

  • To make the dressing, whisk together rice vinegar, orange juice, vegetable oil, sesame oil, sugar, ground ginger, garlic powder and onion powder until smooth.
  • In a large bowl add the pasta, cucumber, red bell pepper, onion, carrot, garlic and chicken.
  • Toss well with the dressing until well coated.
  • Refrigerate 1 hour before serving.
  • Garnish with mandarin oranges and sliced almonds.

I had this at a party and couldn't get it off my mind. It's a fruity Asian chicken salad that even my family's picky eaters enjoy. I bake my own chicken for more flavor, which adds to the prep time, but pre-cooked or canned chicken will also work just fine.

1 teaspoon finely chopped, peeled fresh ginger
⅓ cup rice vinegar
¼ cup orange juice
¼ cup vegetable oil
1 teaspoon toasted sesame oil
1 (1 ounce) package dry onion soup mix
2 teaspoons white sugar
1 clove garlic, pressed
1 (8 ounce) package bow tie (farfalle) pasta
½ cucumber - scored, halved lengthwise, seeded, and sliced
½ cup diced red bell pepper
½ cup coarsely chopped red onion
2 diced Roma tomatoes
1 carrot, shredded
1 (6 ounce) bag fresh spinach
1 (11 ounce) can mandarin orange segments, drained
2 cups diced cooked chicken
½ cup sliced almonds, toasted

Steps:

  • To make the dressing, whisk together the ginger root, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar, and garlic until well blended. Cover, and refrigerate until needed.
  • Bring a large pot of lightly salted water to a boil. Add the bowtie pasta and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water. Place pasta in a large bowl.
  • To make the salad, toss the cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, and almonds with the pasta. Pour the dressing over the salad mixture, and toss again to coat evenly. Serve immediately.

1/4 cup orange juice
1/4 cup vegetable oil
1 teaspoon sesame oil
1 (1 1/4 ounce) envelope dry onion soup mix
2 teaspoons sugar
1 garlic clove, finely minced
8 ounces dry bow tie pasta
1/2 cucumber, scored, seeded and sliced
1/2 cup red bell pepper, diced
1/2 cup red onion, coarsely chopped
1 (6 ounce) package baby spinach leaves
1 (11 ounce) can mandarin orange segments, drained
2 cups cooked chicken, diced
1/2 cup sliced almonds, toasted

Steps:

  • For dressing combine gingerroot, vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic; whisk until well blended.
  • For salad, cook pasta according to package directions; drain and rinse under cold water. Place pasta in a large serving bowl.
  • While pasta is cooking, slice cucumber, dice bell pepper , and chop onion.

I wanted something for lunch one day and nothing sounded good. I searched the cabinets and finally decided to make something up with things I had. It was a huge hit. I have taken it to several luncheons and served it at showers, etc.

2 large chicken breasts
8 ounces orecchiette (or similar pasta)
1 (15 ounce) can mandarin oranges (drained)
1 cup red seedless grapes
1/2 cup pecans (chopped)
1 cup sour cream
1/2 cup mayonnaise
2 tablespoons sugar
1/2 teaspoon ground ginger

Steps:

  • Cook chicken until tender. (I cook mine in a pressure saucepan). When cool, remove skin, debone and cut into bite-sized pieces.
  • Prepare pasta according to package directions to al dente. Rinse in cold water. Drain well.
  • Add chicken to pasta. Stir in grapes and pecans.
  • Mix together dressing ingredients, blending well. Toss with chicken and pasta mixture.
  • Gently fold in mandarin orange sections.
  • Chill at least one hour.

1 package (1 pound) angel hair pasta or thin spaghetti, broken into thirds
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
2 garlic cloves, minced
2 tablespoons butter
1-1/2 teaspoons seasoned salt
1 can (8 ounces) sliced water chestnuts, drained
2 cans (11 ounces each) mandarin oranges
1 package (6 ounces) frozen snow peas, thawed and drained
2 cups sliced fresh mushrooms
2 cups shredded carrots
2 bunches green onions, sliced
DRESSING:
2/3 cup canola oil
1/2 cup white wine vinegar
3 tablespoons soy sauce
1 garlic clove, minced
1 tablespoon sugar
1 tablespoon honey
1/2 teaspoon ground ginger
3 tablespoons sesame seeds, toasted

Steps:

  • Cook pasta according to package directions. Drain and rinse with cold water; set aside. In a large skillet, saute chicken and garlic in butter until chicken is no longer pink; sprinkle with seasoned salt. Remove with a slotted spoon; set aside., In the same skillet, saute water chestnuts for 2-3 minutes. Drain oranges, reserve 1/2 cup juice. In a large serving bowl, combine oranges, pasta, chicken, water chestnuts, peas, mushrooms, carrots and onions., In a jar with a tight-fitting lid, combine the oil, vinegar, soy sauce, garlic, sugar, honey, ginger and reserved mandarin orange juice; shake well. Pour over pasta mixture and toss. Sprinkle with sesame seeds. Refrigerate until serving.
