⅓ cup butter, softened
1 cup white sugar
1 cup molasses
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cloves
1 cup milk
4 cups semisweet chocolate chips
1 cup raisins

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
  • In a medium bowl, cream together the butter and sugar until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon and ginger; stir into the molasses mixture alternately with the milk. Finally, mix in the chocolate chips and raisins. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 10 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

This is an old recipe that my Mom frequently used. It makes a big batch of spicy cookies with raisins, and walnuts. The big batch never lasted long!

1 c crisco or butter
1 c brown sugar, firmly packed
1 c molasses
1 large egg
1/2 tsp salt
3 tsp cinnamon
1 tsp nutmeg
3/4 c plus 2 tablespoons boiling water
3 tsp baking soda
5 c all purpose flour
1/2 c raisins, optional
1/2 c chopped walnuts, optional

Steps:

  • 1. Preheat oven to 350 degrees. Grease cookie sheets. Set aside. Throughly cream shortening and sugar. Add molasses, egg, salt, spices, and beat until blended. Stir together water and soda and add to first mixture. Stir in flour and raisins and nuts if using. Drop from a teaspoon onto a greased baking sheet. Bake 350 degress for 10-15 minutes.
  • 2. These can be served plain or iced with a simple vanilla frosting.

1 cup shortening
2 eggs
2 teaspoons baking soda
1 cup brewed coffee
1 cup molasses
1 tablespoon distilled white vinegar
½ cup unsweetened cocoa powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon ground cloves
4 ½ cups all-purpose flour
2 cups confectioners' sugar
¼ cup unsweetened cocoa powder
5 tablespoons water as needed
2 cups white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Dissolve the baking soda in the coffee.
  • Cream the shortening with the white sugar. Beat in the eggs, coffee mixture, molasses, vinegar, 1/2 cup of the cocoa powder, spices, and flour. Dough should be thick and slightly sticky. Drop rounded spoonfuls of dough onto a greased cookie sheet.
  • Bake for 10 to 12 minutes. Let cookies cool, then glaze.
  • To Make Glaze: Combine the confectioner's sugar, 1/4 cup cocoa, and enough water to achieve a desired spreading consistency. Beat until smooth.

These cookies are from 1937. They have been in my "special" cook-book for years, but I don't know where it came from. They are really good..the true old-fashioned kind! I usually get about 3 doz., but that depends on how big of a spoon you use to drop them on the cookie-sheet.

1 cup shortening
1 cup sugar
1 cup molasses
2 eggs
4 1/2 cups flour
2 teaspoons cinnamon
2 teaspoons ginger
1/2 teaspoon salt
2 teaspoons baking soda
1 cup raisins, chopped
1 cup nuts, chopped
1 cup hot coffee

Steps:

  • Cream shortning, sugar, molasses and eggs together.
  • In a seperate bowl, sift flour, cinnamon, ginger, salt and.
  • soda together.
  • Stir in raisins and nuts.
  • Alternately add flour mixture and coffee, beating well after each addition.
  • Drop from a teaspoon onto greased cookie sheets.
  • Bake in a moderate oven (350 F) until done, about 7-10 minute.

MAMERE'S CRANBERRY SALAD

This was always served as a side dish at the Holidays, or when I made the special request to MaMere, as it is a favorite of mine.

1 (13 ounce) can crushed pineapple (1 2/3c)
2 (3 ounce) packages lemon Jell-O gelatin
1 (7 ounce) bottle ginger ale (approx 1 c)
1 (1 lb) can jellied cranberry sauce (2 c)
1 (2 ounce) package Dream Whip
1 (8 ounce) package cream cheese (softened)
1/2 cup chopped pecans

Steps:

  • Drain pineapple, reserving liquid and set aside. Add water to reserved syrup to make 1 cup, in saucepan.
  • Heat until mixture boils, dissolve jello in hot liquid and cool.
  • Gently stir in gingerale and chill until partially set.
  • Meanwhile, blend drained pineapple and cranberry sauce into pineapple mixture and fold into 9x12x2 dish.
  • Chill until firm.
  • Prepare dessert topping according to directions, fold in cream cheese.
  • Spread over gelatin.
  • Toast pecans in 1T butter in moderate oven 350 for 10 minutes.
  • Spread over salad and chill.
  • *prep time does not include refrigeration time needed.
  • *** You can also use SF gingerale for this recipe, as well as No sugar added crushed pineapple and SF lemon jello.I save calories by this method.

2 1/2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon (optional)
1/4 teaspoon salt
1/4 teaspoon ground ginger (optional)
1/4 teaspoon ground allspice (optional)
1/8 teaspoon freshly grated nutmeg (optional)
10 tablespoons unsalted butter, room temperature
1/2 cup plus 2 tablespoons granulated sugar
1/2 cup unsulphured molasses
1 large egg, beaten
1/2 cup whole milk
1 cup shredded sweetened coconut
1 cup chopped walnuts
1/2 cup raisins or dried currants
White Icing for Crybaby Cookies
Colored sprinkles or chopped nuts, for garnish

Steps:

  • Preheat oven to 350 degrees. Line baking sheets with Silpats. Into a medium bowl, sift together flour, baking powder, baking soda, cinnamon, salt, ginger, allspice, and nutmeg; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar until light and fluffy. With machine running, gradually add molasses and egg. Add dry ingredients, alternating with milk, starting and ending with the dry ingredients; scrape down bowl as necessary. Stir in coconut, walnuts, and raisins.
  • Drop by tablespoons onto prepared baking sheets, leaving 2 inches between cookies. Bake until golden brown, 15 minutes. Remove from oven, and let cool on pans until almost, but not completely cool, about 5 minutes.
  • Dip tops of cookies into icing, and decorate with sprinkles or chopped nuts.

CRY BABY MOLASSES COOKIES

Again another one of my Grandma Clark's recipes our family LOVES. It is at almost every family gathering. I have used 'store bought' icing before and it works OK but I prefer to make my own powdered sugar icing. This is a LARGE recipe and my servings are a guess as my family eats the cookies before I can count. I often half this recipe to make a more manageable number of cookies.

1 cup sugar
1 cup lard or 1 cup shortening
1/2 cup molasses
1 cup hot water
1 egg
2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon salt
1/2 teaspoon cinnamon
4 cups flour
2 cups powdered sugar
1 -2 tablespoon milk

Steps:

  • Mix all ingredients together.
  • Drop from a spoon onto pan.
  • Bake at 350 F until lightly browned at edges (I believe 8-10 minutes but WATCH).
  • Remove to wire cooling rack (if needed let sit on pan 1-2 minutes).
  • Ice while hot/warm with powdered sugar icing.

MEMERE'S MEAT PIE AND MEAT STUFFING

My grandmother makes this every year as a Thanksgiving stuffing, while the meat pie version is rarer. Both dishes are out of this world--two of my favorite things to have! I've always wanted to make this and actually watched her make it once, but I couldn't remember the recipe. Then, one day, when I was flipping through New McCall's Cookbook (an excellent volume), I saw her recipe stuck in one of the pages. Enjoy!!

2 lbs ground beef
1 lb ground pork
2 onions, large
4 stalks celery
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
1 dash pepper
2 cups breadcrumbs (seasoned or plain)
1/4-1/2 cup hot water
1 double crust pie crust, unbaked (for meat pie)

Steps:

  • Chop onions and celery and saute until soft.
  • Lightly cook pork and drain off grease.
  • Add ground beef to pork and cook 5 minutes.
  • Transfer meat to deep pan, pot, or Dutch oven.
  • Add onions and celery.
  • Cook over low heat for 25 minutes, stirring occasionally to prevent sticking.
  • Drain any grease that has surfaced, and remove from heat.
  • Add seasoning, salt, and pepper.
  • Add hot water and bread crumbs, and mix well.
  • Cover and let stand for 30 minutes.
  • While that's standing, preheat the oven to 350°F.
  • Spoon meat mixture into pie crust and bake (in bottom shell) for 20-25 minutes. (Variation: add any amount of mashed potatoes after first 15 minutes.).
  • Add top crust and seal. Bake until done.
