This one is great for impressing non-cookers because it is really easy to make.

10 cups water
2 cups dried navy beans
8 slices crisply cooked bacon, crumbled
½ cup chopped onion
½ cup packed brown sugar
¼ cup molasses
1 teaspoon salt
3 cups water

Steps:

  • Bring 10 cups water and navy beans to a boil in a large pot; cook at a boil for 2 minutes. Stir bacon, onion, brown sugar, molasses, and salt into the water.
  • Carefully pour the mixture into a slow cooker.
  • Cook on High, stirring occasionally, for 4 hours.
  • Stir 3 cups water into the mixture. Continue cooking until beans are tender, about 2 hours 15 minutes more.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

This recipe was my grandmother Lillian Smith's. These are always served at Thanksgiving and Christmas.

2 c great northern beans
1 c bean liquid
2 Tbsp brown sugar
1/4 c ketchup
1 tsp dry mustard
1 small onion, finely chopped
1 1/2 tsp salt
2 thick slice bacon
5 c water
1/4 c molasses

Steps:

  • 1. Wash and sort beans to remove stones. Place in slow cooker.
  • 2. Add water, salt, onion and bacon. Cook on high overnight (8 to 10 hours).
  • 3. Drain the beans reserving 1 cup of the liquid. Add remaining ingredients and mix well.
  • 4. Cover and cook on high for 1-2 hours.

I usually increase the brown sugar to about 3/4 cup and double the molasses to sweeten the beans up and I omit the bacon/pork. I cook the beans and then throw everything in the crock pot to cook for 8-10 hours on high. This recipe comes from the package of Thompson White Beans.

1 lb white beans
1 small onion, sliced
1/2 tablespoon salt
2 teaspoons cider vinegar
1/2 teaspoon prepared mustard
1 tablespoon brown sugar
1/4 cup molasses
1/2 cup ketchup
1 pinch black pepper
hot water, as needed
1/4 lb bacon or 1/4 lb salt pork, sliced

Steps:

  • Pick and rinse beans.
  • In a large pot, add cold water to cover.
  • Bring the beans to boiling and then simmer for 30 minutes - do not add any salt, this toughens the beans.
  • Drain.
  • Place onions in a casserole.
  • Mix seasonings and turn into pot.
  • Add beans and hot water to cover.
  • Arrange pork on top.
  • Cover and bake in a slow oven (250*F) for 7 hours.
  • After 4 hours, mash 1 cup of beans and return to pot.
  • Add liquid to keep beans covered.
  • Enjoy.

Comfort food at its finest! This has been a staple in Nova Scotia homes for generations. Serve with brown bread and butter, and a good cup of tea! Prep time includes soaking the beans overnight.

2 lbs yellow-eyed beans
1 teaspoon baking soda
1 medium onion
1/2 lb salt pork
1/4 cup brown sugar
1/2 cup molasses
2 teaspoons dry mustard
1/2 teaspoon salt

Steps:

  • Soak beans overnight, well covered with cold water.
  • Pour off soaking water and pick over beans to remove any bad ones, or debris.
  • Put beans in a pot.
  • Cover with fresh cold water and add 1 tsp. baking soda.
  • Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
  • Cut onion in quarters and put in bottom of a bean crock or large casserole.
  • Add the partially cooked beans.
  • Put cut up salt pork on top.
  • (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
  • Pour over the beans.
  • Add more boiling water, if needed, to come just to the top of the beans.
  • Also, if needed during baking tme, add more boiling water.
  • Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.

Real Old Fashion Oven Baked Beans image

Doctored-up "canned beans" are OK if you're in a hurry...I've done it more than once, but for REAL Baked Beans, give these a try! The aroma of them baking in the oven is heavenly!!! A stoneware bean pot is preferred, but you can use a small covered roaster or casserole if need be. My Dad always used lean salt pork, but I prefer to use a good smoked bacon.

1 lb navy beans
2 teaspoons baking soda
water
1/2 cup light molasses
1/2 cup catsup
1/2 cup light brown sugar
2 teaspoons Worcestershire sauce
2 teaspoons seasoning salt, Lawry's preferred
1 teaspoon dry mustard
1 teaspoon black pepper
1/2 cup onion, chopped
1/2 lb thick slab bacon, diced (thick sliced is OK)

Steps:

  • THE NIGHT BEFORE:.
  • Wash & sort beans for any small stones.
  • Place in a large kettle & cover with water, about 3 inches above the beans.
  • Cover & soak overnight.
  • THE NEXT MORNING:.
  • Drain & add 6 cups fresh cold water.
  • Stir in the baking soda (this helps remove the "music" afterwards, but no guarantees. LOL!).
  • Cover & bring to a boil -- WATCH CAREFULLY so as to not boil over!
  • Reduce heat & simmer for 10 minutes.
  • Drain & reserve the bean water.
  • Preheat oven to 300°.
  • Add remaing ingredients plus 2 cups of the reserved bean water.
  • Place everything into the bean pot (or whatever you're using) & cover.
  • (Use double-thick aluminum foil to cover if need to.).
  • Bake for 3 to 4 hours.
  • IMPORTANT: Check every couple of hours, adding more bean water if needed, so the beans don't cook dry.
