6 large eggs, room temperature
4 c granulated sugar
1 lb butter, softened room temperature
11 1/2 c white lily all purpose flour
2 c butter milk
1 Tbsp lemon extract
1 Tbsp almond extract
1 Tbsp vanilla bean paste or extract
2 tsp cinnamon
2 tsp nutmeg
6 Tbsp baking powder (not baking soda)
2 tsp baking soda
1 tsp salt
few drops of yellow food color if desired

Steps:

  • 1. PLEASE NOTE: IF YOU ARE NOT USING WHITE LILY ALL PURPOSE FLOUR DECREASE FLOUR AMOUNT TO 10 CUPS. White Lily flour is a winter wheat flour and is much lighter than regular all purpose flour, hence the addition of the extra 1 1/2 cups.
  • 2. This method requires chilling time, so there is no need to preheat the oven at this point.
  • 3. Measure out flour into a very large bowl, add the cinnamon and nutmeg, & Baking Powder and Baking soda, & salt then stir to blend with a large spoon, then set aside till needed.
  • 4. Add softened butter to mixing bowl, then gradually add the sugar beating well after each addition and until no granules remain in batter. I like to add yellow food color to mine so the cookies do not look too pale.
  • 5. Now crack eggs into a medium size bowl, and add one at a time to the sugar mixture, beating well after each addition.
  • 6. Add each of the extracts to a cup larger than a 2 cup measure, then add the 2 cups of buttermilk. Now alternately add some of the flour mixture alternately with the buttermilk mixture, beating and blending after each addition is added. Repeat until all of both the flour and buttermilk mixture has been added to the mixing bowl. Remove bough and refrigerate until dough is completely cooled.
  • 7. Remove dough from fridge. Preheat oven to 400 degrees F. Spray a large cookie sheet with non stick cooking spray. Now remove a small amount of dough and sprinkle on counter top surface with flour, add dough and roll out to desired thickness about 1/4 inch or so. Cut with a glass or biscuit/cookie cutter, and place on a prepared cookie sheet. Bake in preheated 400 degrees F. oven and bake for 10 minutes. COOKIES WILL NOT GET REAL DARK. LEAVE ON COOKIE SHEET FOR ABOUT 8-10 MINUTES UNTIL COOKIES COOL. REMOVE FROM PAN AND PLACE ON A COOLING RACK OR LARGE PLATTER, dust with Powdered or cinnamon sugar if desired.
  • 8. PLEASE NOTE I PREFER TO ROLL MY Tea Cakes BY HAND, ENOUGH DOUGH ABOUT THE SIZE OF A GOLF BALL, THEN FLATTEN OUT SLIGHTLY, PLACE ON Prepared COOKIE SHEET AND BAKE AS INSTRUCTED ABOVE. DUST WITH POWDERED SUGAR OR CINNAMON SUGAR, OR LEAVE SOME PLAIN.

This is the first time I have made this cake size for a Reunion using WHITE LILY FLOUR. I WAS CERTAINLY AMAZED IN A POSITIVE WAY WITH THE OUT COME OF the CAKE. THIS RECIPE MADE MY 11 cup HEART SHAPED PAN PLUS 3 LOAF PAN SIZES so I could ADD SLICES AROUND THE HEART shaped cake to use as a center piece. The pan has a heart shape indented in the center, & I filled it with fresh Strawberries & then added mini marshmallows around the fruit, but you can use fresh peaches, or blue berries or what ever you like. The cake is great plain with ice cream or a dusting of powdered sugar.

2 1/2 cup(s) evaporated milk
1 teaspoon(s) salt
- yellow food color if desired (till it reaches the color consistency you want)

Steps:

  • Please note if you are not using the White Lily all purpose flour, omit the extra 3/4 cup flour. Because the HEART SYMBOLIZES LOVE, I CHOSE TO bake the main cake in the HEART shaped pan, then the remaining batter in loaf pans to be sliced and arranged around the HEART CAKE FOR THE TABLE DISPLAY. Many friends and family remembered having this cake in years past, and loved it. This is MAMA'S BASIC Recipe just in a larger size for a large gathering.
  • For this recipe, I use a 11 cup capacity Heart shaped Pan , and 3 Disposable loaf pans that were approximately 3 inches X 8 inches. Between the 4 pans they were enough to accommodate this size recipe. The amount in the above recipe is what this recipe made. Preheat oven to 350 degrees F.
  • Cream the Butter with the sugar till light & fluffy.
  • Then add the eggs one at a time and beat well after each has been added. I am showing 8 but I did add 10.
  • Measure out the flour into a medium size bowl then add the salt, and baking powder, then stir to blend together & set aside till needed.
  • Alternately add the flour to the creamed mixture with the evaporated milk.
  • Now add the extracts and yellow food coloring if using, and beat till blended together.
  • Prepare pans with Bakers Joy or grease with butter and dust with flour, and remove excess flour. Then fill pans leaving at least 1 1/2 to 2 inches from the top of pan, to allow for the batter to rise during cooking. Pour batter into cake pans and bake in preheated 350 degrees F. oven for approximately 45 to 50 minutes for the smaller loaf pans, and the Heart shaped pan required more time about 55 minutes to an hour. Test with toothpick to make sure it comes out clean before removing from oven. Dust with powdered sugar if desired.
  • Serve plain or with fresh fruit if desired. The loaves are to be sliced and arranged around the heart shaped pan. I added fresh strawberries to the center of the cake, can use peaches, or Blueberries or what ever you like.
  • I ordered the Heart shaped Pan from Amazon it is called THE CROWN OF HEARTS CAKE PAN AND HOLDS 11 CUPS OF BATTER.

Vegetable shortening, for greasing cookie sheets
3 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon baking soda
1/4 teaspoon salt
1 stick (8 tablespoons) butter, room temperature
1 1/2 cups sugar, plus more for sprinkling
2 large eggs
1 1/2 teaspoons vanilla extract
1/4 cup sour cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease two large (14-by-16-inch) cookie sheets with shortening.
  • Sift together the flour, baking soda and salt. Using an electric mixer set to medium speed, cream the butter and sugar together. Add the eggs and vanilla. Add the sour cream and mix well. On low speed, gradually add the flour mixture until just blended. Turn the dough out onto a lightly floured board, and gently pat with floured hands to a 1/4-inch thickness. Cut with a 2-inch round, floured cookie cutter and place about 1 inch apart on the cookie sheets. Bake until the teacakes are lightly browned, about 10 to 12 minutes. Do not overbake. Sprinkle with a couple of tablespoons of sugar and remove the cookies to a rack to cool.

4 cups all-purpose flour (plus 1 cup extra for rolling the dough (I used all-purpose flour, but you could also use cake flour))
4 teaspoons baking powder
½ cup butter (unsalted & softened)
1 cup sugar (granulated )
1 cup light brown sugar
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon lemon zest
1 egg
¼ cup sour cream
1 tablespoon mayonnaise
½ cup evaporated milk
½ tablespoon vanilla extract
2 ½ cups powdered sugar
4 tablespoons lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium-size bowl, use an electric mixer to combine the butter, granulated sugar, and brown sugar for about 2 minutes until creamy.
  • Add the egg, lemon zest, sour cream, mayonnaise, evaporated milk, and vanilla extract.
  • Mix until well blended to make the tea cake batter.
  • Sift together the remaining dry ingredients: flour, baking powder, salt, and nutmeg over a sheet of parchment paper large enough to fit your baking sheet.
  • Fold the parchment paper to pour the sifted flour mixture into the tea cake batter and then mix again.
  • Add the batter to a lightly floured surface and roll the dough to approx ¼ inch thickness. This is where the extra cup of flour will come in handy to help with rolling because the dough is sticky!
  • Cut out the tea cakes with a 2 ½" up to 3″ biscuit cutter. (I used a 2 ¾" biscuit cutter.)
  • Place the rounds onto a parchment paper-lined baking sheet about one inch apart. (You may need to bake more than 1 batch if all your rounds don't fit on your baking sheet.)
  • Bake until light brown (but don't let them get too brown!). 5-6 minutes in the conventional oven and 3-4 minutes in the Instant Pot Omni Plus oven. (Tea cakes don't take long to bake, so keep a close eye on them to avoid burning! Like a biscuit, you want them firm on the outside and fluffy on the inside.)
  • Optional: When the tea cakes are finished baking and cooling, optionally make the lemon glaze frosting by combining the powdered sugar and lemon juice.
  • Mix well with a whisk to remove any lumps from the powdered sugar.
  • Use a small spatula or spoon to drop a dollop of icing onto each cooled tea cake. The icing will harden in about 5 minutes.
  • Optionally, garnish this Southern Black folk tea cake recipe with a sprinkle of lemon zest, then serve and enjoy!
