MAMA'S CREAMED PEAS FOR SICK TUMMIES
When I was a little girl and I would get sick, my Mama (Mary in LA) would always serve me Creamed Peas on Toast. It was light enough for an upset tummy but filling enough to make a sick little girl not be hungry anymore. I never could make it like Mama could until now. I finally figured out where the recipe came from! It is from a book called "The Culinary Arts Institute Encyclopedia of Cooking and Homemaking" which was published in 1940. I decide to post this recipe as a tribute to my Mama. Now all mommies can help their daughters sick tummies feel better just like mine did all those years ago. Thanks Mama!

Steps:
- Melt butter in a large sauce pan.
- Whisk in flour and allow to cook for 1 minute.
- Slowly add milk, whisking the whole time to prevent lumps.
- Add salt and pepper.
- Allow to cook until sauce starts to thicken.
- Add peas, stir and cook until peas are heated through about 5-7 minutes.
- Can be served alone or over toast.

- Melt butter over medium high heat in a medium sized saucepan.
- Whisk the flour and garlic powder (if using) into the butter until incorporated and smooth.
- Slowly whisk in the milk and cook, stirring frequently, over medium high heat until the mixture has thickened, about 6 minutes. Season with salt and pepper.
- Add the peas and cook, stirring frequently, until the peas are heated through, about 4 minutes.
- Stir in heavy cream and check for seasonings.
- Garnish with additional pepper, butter, fresh chopped chives or dill. Serve and enjoy!

COMFORT CREAMED PEAS
my grandma used to make these all the time. my youngest son just loves them! try to keep the pea liquid and half and half equal. you may need to use a little more or less half and half. you can wisk in a little bit of flour to thicken them to your desired consistency. can use whole milk instead of half and half but won't be as creamy.

- On stove in small pot melt butter and add flour slowly to thicken it.
- When it is almost like a paste add the milk and stir.
- Continue stirring on low heat until the mixture thickens.

So creamy, buttery and yummy. This is one of my top comfort foods. Depending on how many mouths you want to feed, the milk is a MAJOR estimate!! My family can easily use almost a whole 2 litre carton. Prep time is an estimate.

Steps:
- Melt butter in a large saucepan or pot.
- When butter is almost melted, add the flour and stir it until a paste forms. DON'T LET IT BURN!
- Add the 2 cups of milk and stir constantly on high heat until it thickens. Do not stop stirring or the bottom will burn.
- When it is quite thick, add a little more milk to thin it. Then continue stirring until it has thickened again.
- Repeat this step as needed until there is as much white sauce as you think you need. We usually have quite a lot.
- Salt, Pepper and/or parmesan cheese can be added at this point, if desired.
- When all milk has been added, and sauce has thickened again, add the drained peas. Stir.
- Serve on warm, buttered toast, with more grated parmesan on top. Mmmm.
