OLD MAMA'S FASHIONED CHILI
This spooky chili is great for Halloween dinner! Keep warm on the stove and the little ones can eat anytime during trick-or-treat activities.

Steps:
- Cook and stir ground beef in a skillet over medium-high heat until crumbly and browned, 5 to 10 minutes. Drain.
- Stir drained ground beef, black beans, kidney beans, tomatoes, green bell peppers, yellow onion, garlic, and chili seasoning together in a large pot over medium-high heat. Bring to a boil, reduce heat to low, and simmer, stirring occasionally, until vegetables are slightly tender and chili is heated through, 15 to 20 minutes. Season with hot sauce, salt, and ground black pepper to taste.

MOM'S EASY CHILI
I used Mom's chili recipe and added a few things of my own over the years. I put it together in the crock pot the night before, throw it in the fridge (just the crock), then before leaving for work the next morning I put the crock in the base, plug it in and it's yummy when I get home.

Steps:
- Brown ground beef and drain.
- Put all ingredients in crock pot and stir well.
- Cook on low for 8 to 10 hours, or high for 4 to 6 hours. I also like to take the lid off the crock pot the last hour or two (when I'm home) to allow some of the water to burn off.
JO MAMA'S CHILI
This is the chili my family has been enjoying for years. I make it so it isn't too spicy for the kids, but feel free to kick it up.

Steps:
- Saute onion in oil until nearly translucent; add ground beef and brown, breaking it up as it cooks.
- Add seasonings and cook for 2-3 minutes, stirring frequently.
- Add tomato sauce, catsup, tomatoes, water and kidney beans. Bring to a boil and simmer, uncovered, for at least a half hour, adding additional water if necessary.
- Serve with onions, jalapenos, cheese, and sour cream.

- Heat oil in a large saucepan over medium heat. Cook onions and garlic until onions are tender and remove from saucepan. Add ground sirloin and cubed beef chuck and cook for 10 minutes, or until the meat is well browned. Add onions and garlic back into saucepan with the meats.
- Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander, salt and black pepper. Stir in 2 cans of the beans and the chopped jalapeño peppers. Reduce heat to low and simmer for at least 1 hour and 30 minutes.

- Brown ground beef in a dutch oven in 1 tablespoon olive oil until most of the pink is gone; remove to plate and set aside.
- Add 2 tablespoons of olive oil to the pan and saute onion for about 2 minutes. Add red peppers and continue to cook until soft. Add jalapeno and garlic and saute for about 5 minutes. Add 1/2 tablespoon of salt and cooked beef to pan and heat through.
- Add all the rest of the ingredients to the pan and bring to a boil; reduce heat and simmer for 3 hours or until chili is at the desired thickness. Cool and refrigerate overnight. Bring chili to simmer and serve. Yum!
