- Arrange tomatoes and onions on a large rimmed serving platter. In a small bowl, whisk the oil, lemon juice, oregano, salt and pepper. Drizzle over top. Sprinkle with parsley.

- Truly ripe tomatoes don't need much. Slice a variety of sizes and colors and arrange on a platter. Dress with good olive oil, coarse salt, and black pepper, then top with fresh herbs like basil, parsley, chives, and chervil.

- Whisk together the olive oil, vinegars, green onion, shallot, basil, mustard, and pepper until dressing mixture is emulsified well.
- Place sliced tomatoes and cucumbers in a container (such as Tupperware), pour over the dressing, then stir together gently.
- Cover and chill for at least 30 minutes and up to 2 hours, gently stirring occasionally.
- Before serving, sprinkle with crumbled feta cheese.
