1/3 cup butter, softened
1/3 cup reduced-fat butter, softened
1 cup packed brown sugar
1/2 cup sugar blend
1 cup reduced-fat chunky peanut butter
2 eggs
2 cups all-purpose flour
1-1/2 cups quick-cooking oats
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup raisins
3/4 cup sweetened shredded coconut
1/2 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, cream the butters, brown sugar and sugar substitute until light and fluffy. Beat in peanut butter. Add eggs, one at a time, beating well after each addition. Combine the flour, oats, baking powder, salt and baking soda; gradually add to creamed mixture and mix well. Stir in the raisins, coconut and chocolate chips. , Drop by rounded tablespoonfuls onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until golden brown. Cool for 2 minutes before removing to wire racks.

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
1 cup creamy peanut butter
2 large eggs
1-1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup semisweet chocolate chips
1 cup raisins
1 cup dry roasted peanuts, chopped
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, cream the butter, sugars and peanut butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, oats, baking powder, salt and baking soda; gradually add to creamed mixture and mix well. Stir in the chocolate chips, raisins, peanuts and coconut., Drop by rounded tablespoonfuls onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until golden brown. You probably have all the ingredients for these delicious peanut butter cookies on hand-especially if you're a peanut butter fan! For extra peanut butter flavor, sprinkle cookies with salted peanuts before popping them in the oven. Substitute smooth peanut butter for chunky to get a different cookie texture.

Number Of Ingredients 9

8 tablespoons (1 stick) unsalted butter
3/4 cup smooth peanut butter
1/2 cup granulated sugar
1/2 cup packed dark-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
3/4 teaspoon baking soda
Dry-roasted, salted peanuts, for sprinkling (optional)

Steps:

  • Heat oven to 350 degrees. Line several baking sheets with parchment paper, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, peanut butter, and both sugars together until light and fluffy. Add egg and vanilla, and mix on medium speed until well combined.
  • In a medium mixing bowl, sift flour and baking soda together. Add to the butter mixture, and beat just to combine.
  • Scoop out 2 tablespoons of dough, shape into a ball, and place on one of the prepared baking sheets. Repeat with remaining dough, placing scoops 3 inches apart. Dip the tines of a fork in warm water; press the dough balls lightly with the back of the fork to flatten them slightly (dip the fork back in the water for each dough ball, to prevent sticking). Sprinkle with a few peanuts, if desired.
  • Transfer to the oven, and bake until golden brown, 18 to 20 minutes, rotating the baking sheets between the oven shelves halfway through baking. Transfer baking sheets to a wire rack to cool. Store in an airtight container at room temperature up to 1 week.

1 cup chopped pecans

Steps:

  • Preheat oven to 375°F.
  • Combine flour, baking soda, and salt in small bowl.
  • Beat shortening, peanut butter, brown sugar and egg in a large mixer bowl on medium speed until light and creamy, about 4 minutes.
  • Add flour mixture, chocolate or peanut butter chips, and pecans. Mix well.
  • Drop dough by spoonfulls onto ungreased baking sheets. Bake at 375°F for 8-10 minutes, or until light golden. Cool 10 minutes, then remove to rack to cool completely.
