Pulled pork isn't just for barbecue sandwiches. Keep this freezer-friendly little piggy on hand to make your weeknight dinners doable and delicious!

4 to 6 lb boneless pork shoulder roast (Boston butt)
20 cloves garlic, peeled
1/4 cup olive oil
2 teaspoons salt
2 teaspoons pepper

Steps:

  • Heat oven to 325°F. In 13x9-inch (3-quart) baking dish, place pork fat side up. Make (20) 1-inch slits in the fat, and tuck a clove of garlic into each. Rub all over with oil. Sprinkle with salt and pepper; rub into meat.
  • Cover tightly with foil. Roast 5 1/2 to 6 1/2 hours, or until meat thermometer inserted in center of roast reads 190°F. Remove from oven; let rest until cool enough to handle, about 30 minutes.
  • Shred meat with two forks, discarding garlic as you go. Toss shredded pork in some of the pan juices (if any) to coat. Divide pork into 2-cup portions. Place each portion in freezer container or resealable freezer plastic bag. Label with date. Cover and refrigerate until completely cooled, at least an hour. Transfer to freezer; freeze up to 3 months.

1 cup cracker crumb
1/2 cup diced onion
1 egg
1 lb ground beef
1 (14 ounce) can tomato sauce
salt
pepper

Steps:

  • Mix cracker crumbs, ground beef, onion, egg, salt, pepper, and 1/2 can of tomato sauce in large bowl.
  • Divide into two small or one large loaf pan.
  • Pat mixture into loaf pans evenly.
  • Go wash your nasty hands, ewww!
  • Cover top of each loaf with rest of tomato sauce (you may use ketchup as well, if so you will only need a small can of tomato sauce. My family doesn't like the sweetness of ketchup in this dish.).
  • Cover with heavy duty foil, label, and freeze.
  • When ready to make, thaw loaves completely.
  • Preheat oven to 350 degrees F.
  • Bake thawed loaves 1-1/2 hours (depends on if you are using the large or smaller ones.).
  • Enjoy!

My favorite do-ahead party dish. Excellent taste, very easy to make, and perfect for everything from a casual to a formal dinner party, or even a buffet. It's great served with braised belgian endive or lightly sauteed broccoli rappe, green salad, wine, and even pasta. Versatile and easy dish. My go-to dish when we've got friends coming over, and I can't think of what to make.

1 boneless pork loin (2 to 3 pounds)
3 tablespoons softened butter
3 ounces finely-chopped prosciutto
2 -3 tablespoons finely-minced garlic
2 -3 tablespoons chopped fresh rosemary (or 1 - 1 1/2 T dried)
1 -1 1/2 tablespoon fresh grated parmesan cheese or 1 -1 1/2 tablespoon shredded parmesan cheese
black pepper
1 -2 cup dry white wine

Steps:

  • Mix together butter, prosciutto, garlic, rosemary, parmesan, and black pepper and set aside (can be made in advance and refrigerated up to one day, but warm to room temperature before proceeding).
  • Preheat oven to 350 degrees F.
  • Cut slits about an inch or so long and a half inch or so deep all over the top of the roast.
  • Spread butter mixture over the roast, using the handle of a spoon to get it into the slits you made earlier (very important).
  • (At this point, you can wrap roast in plastic and refrigerate overnight and up to 1 day.) Put prepared roast in a roasting pan, pour wine slowly over it, and cook for about 1 1/4 to 1 1/2 hours, depending on the size of the roast, basting about every 30 minutes or so with pan drippings.
  • Remove from oven, cover with aluminum foil and let rest for about 15 minutes.

Elegant sauce I concocted one night to dress up an ordinary meatloaf for company fare. Also good over pork roast. My guests thought I'd slaved in the kitchen, but it can be made in less than ten minutes.

1/4 cup butter or 1/4 cup butter substitute
2 tablespoons flour
1/2 medium onion, minced
1/4 carrot, grated
6 fresh button mushrooms, sliced
1/2 cup 1% low-fat milk
salt
1 tablespoon garam masala, indian spice
1/3 cup sake or 1/3 cup dry white wine
3 leaves flat-leaf Italian parsley (to garnish) (optional)
1/2 cup slivered almonds (to garnish) (optional)

Steps:

  • Saute onion and carrot in butter until softened.
  • Add flour and cook until flour taste is gone or until it is just about to turn brown.
  • Add milk and make a medium-thick sauce, stirring constantly.
  • Add mushrooms, salt and curry powder to taste.
  • Cover and let simmer until mushrooms are cooked.
  • Refrigerate until dinner time.
  • You can add more milk when you reheat if the sauce is too thick, but if heated in a covered pan I doubt you'll need to add more liquid.
  • Add a good dose of wine and let simmer -- be careful, you don't want to overpower the curry and other flavors.
  • Place meat in center of platter and pour sauce over top and drizzle down the sides.
  • Sprinkle fresh parsley and almond slivers over the top.
  • Around the meat arrange broccoli flowerettes, thick slices of carrot, and small boiled potatoes.
  • So-o elegant!
