BEEF AND BEAN BURRITOS

- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Return to pan; add the beans, cheese, enchilada sauce, water, onion and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Spoon 1/2 cup filling off center on each tortilla. Fold sides and end over filling and roll up., Freeze option: Wrap individually in paper towels, then foil. Transfer to a resealable plastic bag. May be frozen for up to 2 months. To use, unwrap foil. Place paper towel-wrapped burritos on a microwave-safe plate. Microwave on high until heated through, 3-4 minutes. Serve with toppings of your choice.

MAKE-AHEAD BURRITOS

- In a large skillet, combine the meat, salsa, beans, chilies, seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through., Spoon about 1/3 cup off-center on each tortilla; top with a cheese strip. Fold edge of tortilla nearest filling over to cover. Fold ends of tortilla over filling and roll up. Wrap individually in aluminum foil. Freeze for up to 2 months., To use frozen burritos: Place foil packets on a baking sheet. Bake at 350° for 50 minutes or until heated through. If thawed, bake for 25-30 minutes.

BEEF AND BEAN BURRITOS

- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.

- Combine rice, water, and taco seasoning in a saucepan; bring to a boil. Reduce heat to low, cover, and simmer until tender, 35 to 40 minutes. Remove from the heat and let cool; it will be soggy.
- Combine black beans, pinto beans, corn, salsa, onion, cumin, garlic powder, oregano, salt, and pepper in a large bowl; toss to mix. Mix in cooked rice, Cheddar, and Monterey Jack.
- Divide the bean-rice mixture evenly among the tortillas and roll up.
- Spray a cookie sheet lightly with cooking spray. Lay tortillas in a single layer on the cookie sheet and place in the freezer until fully frozen, about 2 hours. Wrap each tortilla in plastic wrap or foil and place in a large zip-top bag to store in the freezer until ready to use.

- Heat oil in a large skillet for 2 minutes over medium-high heat until the hot oil sizzles. Add ground beef and stir well to cook evenly until nicely browned, about 6-8 minutes. Break up the beef into small pieces to help even cooking and browning.
- Add all seasoning including cumin, chili powder, paprika, garlic powder, oregano, salt, pepper, and tomato paste. Reduce the heat to medium and let the mixture simmer for 3-5 minutes until the sauce thickens a bit, stirring occasionally. Turn off heat and set aside.
- On each tortilla wrap, add 2-3 tablespoons beef, 1/4 cup cooked rice, lettuce, corn, black beans, tomato, onion, cilantro and cheese in the centre. Drizzle on top with sour cream and lime juice, to taste.

EASY MAKE AHEAD FREEZER BEEF AND BEAN BURRITOS RECIPE

- Filling ... To a medium non-stick sauce pan, add the olive oil and bring to medium heat. Add in the onion and cook 1 minute; then the beef, taco seasoning, and green chilies. Cook stirring often, breaking up the meat as it cooks. Then add in the beans and check for seasoning. You can add salt, pepper or more taco seasoning depending on your taste. Cook just a minute until reheated.
- Tortillas ... Add 4 tortillas stacked up on a damp paper towel and wrap. Microwave 15-20 seconds on medium heat, flip and cook 10 more seconds on medium. Remove and set to the side. They should be WARM not HOT. Do 2 batches so they warm up, stacking 8 at one time is too many and will not heat properly.
- Fill ... Fill each tortilla with the meat and bean mixture. Roll one end over and then fold in each of the sides and continue to roll like a WRAP Sandwich. Set to the side. Finish all the tortillas. Depending on how full you stuff the burittos, you will make between 6-10 tortillas.
- Wrap ... I use parchment paper. Wrap each tortillas in parchment paper and freeze in a ziplock bag. I can fit approximately 4 burritos per bag. That way you can take out as many as you want each time.
