ROASTED CORNISH HENS WITH POMEGRANATE-MOLASSES GLAZE



Roasted Cornish Hens with Pomegranate-Molasses Glaze image

Pomegranate molasses is sold in many ethnic markets and health-food stores.

Yield serves 4

Number Of Ingredients 10

1/3 cup pomegranate molasses
1/3 cup extra-virgin olive oil
1/4 teaspoon freshly ground pepper
2 Cornish hens (each 1 to 1 1/2 pounds), rinsed and patted dry
2 onions, 1 thinly sliced and the other cut into 8 wedges
4 garlic cloves, smashed
Cooking spray, for the roasting rack
1 lemon, cut into 8 wedges
2 tablespoons unsalted butter, melted
Coarse salt and freshly ground pepper

Steps:

  • In a small bowl, whisk together the pomegranate molasses, oil, and pepper. Place each hen in a large resealable plastic bag. Divide the marinade evenly between the bags; add the sliced onion and garlic. Seal the bags; turn to coat. Refrigerate at least 4 hours or overnight, turning occasionally.
  • Preheat the oven to 350°F, with the rack in the lower third. Line a shallow roasting pan or rimmed baking sheet with a roasting rack, and coat the rack with spray; set aside.
  • Remove the hens from the plastic bags, letting excess marinade drip off. Place the hens on the rack, breast side up, and tuck the wing tips under the body. Fill each cavity with 4 onion and 4 lemon wedges; tie the legs with kitchen twine. Brush with butter; sprinkle with salt and pepper.
  • Transfer to the oven, and roast until the hens are golden and cooked through, about 1 1/2 hours, rotating the pan every half-hour. If the skin starts to get too dark, cover loosely with foil. Remove from the oven; serve warm.

Roasted Cornish Hen with Balsamic Glaze image

2 Cornish hens (about 1 1/4 pounds each)
Salt
Freshly ground black pepper
5 fresh rosemary sprigs
10 sage leaves
2 fresh or dried bay leaves
1/4 cup extra-virgin olive oil
2 bunches scallions, trimmed and cut into 2-inch lengths (about 2 cups)
1 cup peeled, trimmed, and thinly sliced carrots
1/2 cup thinly sliced celery
6 slices dried porcini mushrooms
2 cups Chicken Stock (page 74) or canned reduced-sodium chicken broth
3 tablespoons balsamic vinegar
1 tablespoon honey

Steps:

  • Preheat the oven to 425° F. Remove all visible fat and the neck and giblets from the Cornish hens. Rinse the hens under cold water and pat them dry inside and out with paper towels. Season the birds generously with salt and pepper, inside and out. Place one rosemary sprig, 2 sage leaves, and 1 bay leaf in the body cavity of each bird.
  • Heat the oil in a heavy, flameproof roasting pan or very large ovenproof skillet over medium heat. Add the scallions, carrots, celery, porcini, and the remaining rosemary and sage leaves and cook, stirring, until the scallions are wilted, about 4 minutes. Smooth the vegetables into an even layer and nestle the prepared birds, breast side up, over them. Roast, basting frequently with enough of the chicken stock to keep the vegetables well moistened, until the vegetables and hens are golden brown-about 45 minutes.
  • Carefully tilt the pan and spoon off enough of the roasting juices to measure 1 cup, not including fat. Stir the balsamic vinegar and honey into the measured juices until the honey is dissolved. Return the birds to oven and roast, basting occasionally with the honey mixture, until the birds are a rich mahogany color and the leg joint moves easily when you wiggle it, about 15 minutes.
  • Remove the birds from the oven, transfer them to a platter or plates, and cover with a tent of aluminum foil to keep them warm. Strain the pan juices through a sieve into a small saucepan, pressing as much of the liquid from the vegetables as possible. Skim the fat from the surface of the sauce, and bring the sauce to a simmer while carving the birds. With a pair of kitchen shears, cut along both sides of the backbones to remove them. Cut the birds in half through the center breastbone. Cut each half into leg and breast portions. Arrange the pieces on a platter or plates, and spoon some of the roasting juices over them. Pass the remaining sauce separately.

  • Place game hen halves with skin sides up into a 9x13-inch roasting pan.
  • Roast hens in the preheated oven for 35 minutes.
  • Stir orange juice, honey, soy sauce, and vinegar together in a small bowl; brush mixture over hens.
  • Roast hens for 5 more minutes and baste again with orange juice mixture. Roast until skin is browned and meat is no longer pink inside, about 10 more minutes.

3 tablespoons chopped onion
1/4 cup butter, cubed
3 cups dry bread cubes
1 can (4 ounces) mushroom stems and pieces, drained
1-1/2 teaspoons poultry seasoning
1/2 teaspoon rubbed sage
1/4 teaspoon salt
1/4 teaspoon pepper
3 to 4 tablespoons chicken broth
4 Cornish game hens (20 to 24 ounces each)
1 jar (12 ounces) apricot preserves, warmed
4 green onions (green part only), optional
Fresh rosemary sprigs, optional

Steps:

  • In a large skillet, saute celery and onion in butter until tender; remove from heat. Add the bread, mushrooms and seasonings. Toss with enough chicken broth just to moisten. , Stuff hens. Tie drumsticks together. Place on a rack in a large shallow baking pan. Cover and bake at 350° for 1 hour. , Brush with preserves. The sweetness from the apricot preserves combined with Sriracha adds a nice twist on the traditional roasted cornish hen.

1 cup apricot preserves
1 tablespoon Sriracha sauce
1 tablespoon Worcestershire sauce
1 tablespoon butter
2 (1 1/4 pound) Cornish game hens
1 tablespoon grapeseed oil
mango-habanero seasoning to taste
4 sprigs fresh basil, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a cookie sheet generously with cooking spray.
  • Combine apricot preserves, Sriracha, Worcestershire, and butter in a small pot and melt over medium heat. Stir constantly to prevent from sticking.
  • Clean hens and pat dry with paper towels. Coat outsides and insides with oil. Season with mango-habanero seasoning; insert sprigs of basil inside of the hens.
  • Place hens on the prepared cookie sheet and cover with foil.
  • Cook in the preheated oven for 45 minutes. Remove foil and baste with apricot glaze. Put back in the oven and cook until no longer pink in the centers, about 15 minutes more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
