RASPBERRY CURD
This delicious raspberry curd is quick and easy to make. Adjust the sweetness to your taste. Add more sugar if you like it sweet or less for a tarter taste. This curd is a great topping for cheesecakes or as a filling in cakes.

Steps:
- Melt butter in a saucepan over medium-low heat.
- Add raspberries, egg yolks, sugar, lemon juice, zest, and salt. Cook, stirring constantly, until curd coats the back of a spoon and is slightly thickened, 8 to 10 minutes.
- Strain curd through a fine mesh sieve, mashing the raspberries with the back of a spoon.

- For the madeleines: Beat the sugar with the eggs until pale and frothy. Put the flour and baking powder into a separate bowl and add the lemon zest. Mix the honey and milk with the cooled butter, and then add to the eggs. In two batches, fold in the flour mixture. Cover and leave to rest in the fridge for a few hours, or overnight. Preheat the oven to 375 degrees F/190 degrees C /Gas 5. Butter and flour a 12-shell madeleine tin. Put a heaped tablespoon of batter into each madeleine shell and press a raspberry deep into the batter. Bake for 5 minutes and turn the oven off for 1 minute (the madeleines will get their signature peaks), and then turn the oven on to 325F/160 degrees C/Gas 3 and bake for a further 5 minutes. Transfer the madeleines to a wire rack and leave for a few minutes until cool enough to handle. Repeat with the remaining batter and raspberries. While the second batch is baking, pop the piping nozzle into the mound in each baked madeleine and squirt in a teaspoon's worth of lemon curd. Repeat with the second batch. Dust with icing sugar and serve straightaway. LEMON CURD Beat the eggs and sugar in heavy-bottomed sauce pan. Add the lemon juice, zest and butter. Heat the mixture to a boil, then remove from the heat and strain the mixture through a fine-mesh sieve. Transfer the lemon curd to an airtight container and store in the refrigerator for up to a few weeks.

- In a separate bowl, whisk together the eggs, white and brown sugar, maple syrup, lemon zest, and water until a smooth mixture is produced. Whisk the dry ingredients in until just incorporated, and then add the butter, whisking until the mixture is smooth and sticky. Cover your bowl with cling film, and chill in the refrigerator for at least one hour, ideally overnight.
- Preheat oven to 400 degrees F. Lightly coat a madeleine pan with butter and dust with flour, tapping out any excess. Pipe or spoon (it doesn’t affect the shape of the madeleine) the batter into the pan, filling each madeleine well about two thirds full. Place one raspberry “open-side”-up in the centre of each madeleine well.
