MALAGASY MOFO SAKAY (SPICY BREAD)



Malagasy Mofo Sakay (Spicy Bread) image

Number Of Ingredients 11

2 1/4 cups of flour
1 1/2 teaspoons salt
1 teaspoon curry powder
1 teaspoon baking soda
3/4 teaspoon black pepper
1 1/2 cups water +/-
1/2 cup watercress (chopped)
3 red or green chilies (finely chopped)
2 green onions (chopped)
1 to mato (chopped)
oil for frying

Steps:

  • In a bowl combine all the ingredients except the oil
  • Mix to form a smooth paste, add water slowly as you may not need the entire 1 1/2 cups
  • Pour the oil into a skillet or deep fryer
  • Drop the batter about a tablespoon at a time into the hot oil and fry the fritters turning frequently until golden brown.
  • Remove the fritters and place on a paper towel to remove excess oil
  • Serve hot.
  • You can serve along side the condiment sakay for an extra spicy dipping sauce
  • Enjoy

5-10 Thai bird chilies (whole)
1 clove garlic (peeled)
1 " piece of ginger (peeled and thinly sliced)
about 1/2 cup olive oil or just enough to make the paste
salt to taste.

Steps:

  • Put the chilies, garlic and ginger into a blender or food processor along with a bit of the olive oil. Blend until smooth adding oil as needed to get the desired consistency. Add salt to taste. If you want to make it authentically you should grind the chilies, garlic and ginger with a mortar and pestle. Put a dab or a spoonful on everything. Enjoy!

This is Hot Red Pepper condiment. Most meals in Madagascar are simply prepared. This is served in tiny butter dishes or passed around in a bowl for people to spice to taste. When I served it at a dinner at our church only a few strong souls used it.

1 tablespoon ginger, ground
2 garlic cloves, crushed
4 tablespoons oil

Steps:

  • Combine all in a 1 pint bowl and make a mush of it.
  • Serve 1 - 2 tablespoons in a dish at each place or pass in a bowl.

1 quart water (lightly salted)
4 carrots, julienne strips
1 turnip, julienne strips
1 1/4 heads cabbage, shredded
1/4 lb green beans, cut lengthwise into strips
1 tablespoon curry powder
1/2 tablespoon black pepper
1 onion, finely chopped
4 tablespoons vinegar
5 tablespoons vegetable oil
Tabasco sauce

Steps:

  • Bring water to a boil and add carrots, turnip, cabbage and green beans. Cook, incovered, 5 minutes.
  • Drain and place in a large bowl.
  • While still hot, sprinkle with curry and pepper. Mix well and let cool.
  • Add onion, vinegar and oil to veggies and toss.
  • Stir in enough Tabasco to give the mixture piquancy.
  • Chill well before serving.

1/2 lb chuck, boneless cut in 1/2 inch cube
2 tablespoons oil
1 tomatoes, cut in 1/2 inch chunks
1 bunch scallion, cut in 1 inch pieces
1/2 lb mustard greens, cut in small pieces
1/2 lb spinach, cut in small pieces
1 bunch watercress, cut in small pieces
2 cups water
1 cup rice
1 tablespoon salt
1/2 teaspoon pepper

Steps:

  • In a 4 quart saucepan saute the meat in 2 Tbs oil until brown on all sides.
  • Add tomato and cook 10 minutes.
  • Add scallions, greens, spinach and watercress. Saute, stirring occasionally, with cover on until veggies soften.
  • Add water, be sure it is enough to cover the veggies, and rice, salt and pepper.
  • Cover tightly and simmer slowly until rice is thoroughly cooked and all liquid is absorbed.
  • Correct seasoning to your taste.
  • Serve with hot papper Sakay as a relish to accompany.
