EASY CHILI NACHOS



Easy Chili Nachos image

This makes a wonderful quick late-night snack, and it's a great way to use up any leftover chili I freeze some of my chili just to make this recipe --- I sprinkle finely chopped jalapeno peppers on top of second layer of cheese, but that is only optional add them on if you like heat --- all ingredients can be adjusted to suit taste. Prepare a double recipe in two separate pie plates if you are serving more than 6 people. Prep time does not include making the chili --- this is very good!

Number Of Ingredients 6

2 cups prepared chili (use your favorite recipe for this)
7 ounces tortilla chips
2 cups shredded cheddar cheese (or to taste)
salsa, to taste
prepared guacamole, to taste (I use my own easy guacamole Really Easy and Good Creamy Guacamole for this)
sour cream (I use lots!)

Steps:

  • Set oven to 400°F.
  • Heat the chili in a small saucepan or microwave until hot.
  • Spread half of the tortilla chips on the bottom of a 10-inch deep-dish pie plate.
  • Spoon half of the chili over the chips.
  • Sprinkle with half of the cheese.
  • Repeat with remaining chips, chili and cheese.
  • Bake for about 7-8 minutes until the cheese has melted.
  • Top with salsa, guacamole and sour cream.
  • Serve immediately.
  • Delicious!

5 lbs stew meat, boneless beef chuck
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
3 tablespoons olive oil or 3 tablespoons vegetable oil, divided
1 medium onion, chopped
3 tablespoons Mexican chili powder
14 1/2 ounces canned diced tomatoes and green chilies
3/4 cup chicken broth
4 large roasted garlic cloves, minced

Steps:

  • Heat oven to 325°F Toss beef with salt and pepper. Heat 1 1/2 teaspoons oil in a Dutch oven over high heat. Add one-third of the beef and brown on all sides, about 5 minutes. Transfer to a bowl and repeat two more times with beef and oil. Add the last 1 1/2 teaspoons oil to Dutch oven and cook onion until lightly browned. Stir in chile powder, tomatoes, wine and garlic; bring to a simmer. Return beef and accumulated juices to Dutch oven. Cover and bake 2 1/2 hours, stirring once halfway through cooking time, until beef is very tender.

1 lb lean sirloin steaks, chopped, bite size
1 lb ground turkey, chopped
3 tablespoons olive oil
1 (15 1/2 ounce) can black beans, drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can red beans (Goya brand) or 1 (15 ounce) can pinto beans, drained (Goya brand)
1.5 (8 ounce) cans tomato sauce
1 (28 ounce) can whole canned tomatoes, NOT drained
1 yellow onion, chopped
1 green bell pepper, seeded, chopped
2 jalapeno peppers, seeded, finely chopped
2 poblano chiles, seeded, chopped
3 habanero peppers, seeded, minced
1 teaspoon salt
1 teaspoon ground pepper
1 taplespoon chili powder
1 tablespoon tony chachere's original creole seasoning

Steps:

  • Place chopped lean sirloin beef & 1 tbsn. of olive oil in a pan over medium-high heat for 5-8 minutes, or until fully cooked; stir occasionally, once cooked place the meat in the crock-pot.
  • Place ground turkey & 1 tbsn. of olive oil in a pan over medium-high heat for 5-8 minutes, or until fully cooked; stir/break up occasionally, once cooked place the meat in the crock-pot.
  • Place all the chilis (already chopped & minced) & 1 tbsn. olive oil in a medium sized pot over medium heat for about 5-6 minutes; stir occasionally, then place in crock pot.
  • Drain all cans of beans (black/kidney/red or pinto), then place in to crock-pot.
  • Pour entire can of whole-peeled tomatoes (with juice) into crock-pot.
  • Pour 1 1/2 cans of tomato sauce into crock-pot.
  • Pour in the 3 tbsn. of chili powder & 2 tbsn. of Tony Chachere's Creole Seasoning.
  • Stir in all ingredients until fully mixed.
  • Set crock-pot to high heat for 4 to 6 hours, or low heat for 8 to 10 hours; up to you & your schedule.
  • Occasionally stir (every other hour) the chili, while breaking up the whole-peeled tomatoes.
  • Serve how you like, I prefer with Tostito chips, but thats just me. Enjoy!

3 plum tomatoes, finely chopped
⅓ cup finely chopped red or white onion
⅓ cup chopped fresh cilantro
1 lime
12 cups corn tortilla chips
1 (15 ounce) can HORMEL® Chili With Beans
1 (2.25 ounce) can sliced pitted ripe olives, coarsely chopped
3 cups shredded colby or Monterey Jack cheese
1 fresh jalapeno chile (or more to taste), thinly sliced

Steps:

  • Heat oven to 375 degrees F. In bowl, mix together tomatoes, onion and cilantro. Squeeze lime into the tomato mixture and toss until blended.
  • Arrange a single layer of chips on heatproof platter or baking sheet. Top with spoonfuls of chili, tomato mixture, olives and cheese. Add jalapeno slices, if desired. Repeat layers until all the ingredients are used.
  • Bake 15 minutes or until cheese is completely melted. Serve nachos hot.

400g can chilli con carne
115g bag tortilla chips
1 Tbsp Emmental cheese, finely grated
1 Tbsp sliced, green jalapenos, drained
Guacamole or sour cream to serve

Steps:

  • Heat the chilli con carne in a saucepan for five minutes until hot.
  • Place tortillas in a large frying pan on a low heat, carefully tossing to warm through.
  • To serve, arrange tortillas on a large plate or platter and pour over chilli.
  • Sprinkle with cheese and scatter over jalapenos. Serve with guacamole and sour cream.
