1 package (1.4 ounces) vegetable soup mix
1 envelope (.6 ounce) cream of chicken soup mix
2 cans (5-1/2 ounces each) spicy tomato juice
4 cups water
2 cans (15 ounces each) mixed vegetables, drained
Dash crushed red pepper flakes
Dash dried minced garlic
1/2 cup uncooked elbow macaroni

Steps:

  • In a Dutch oven, combine soup mixes and tomato juice. Stir in the water, mixed vegetables, pepper flakes and garlic; bring to a boil. Add macaroni. Reduce heat; cook, uncovered, for 10-15 minutes or until macaroni is tender, stirring occasionally.

1 medium zucchini, julienned
1/2 cup finely chopped onion
1 medium carrot, halved and thinly sliced
1 tablespoon butter
2 cans (14-1/2 ounces each) chicken broth
1 cup tomato or vegetable juice
1/2 cup uncooked elbow macaroni
1/8 to 1/4 teaspoon cayenne pepper
1 can (15 ounces) cannellini beans, rinsed and drained
1/2 cup frozen corn

Steps:

  • In a large saucepan, saute the zucchini, onion and carrot in butter until tender. Add broth and tomato juice. Bring to a boil; stir in macaroni and cayenne. Cook for 10 minutes or until macaroni is tender. Stir in beans and corn; heat through.

1 cup sour cream

1 large white onion, minced
6 cups chicken broth
6 cups tomato juice
