This recipe comes out of Vegan with a Vengeance, and let me tell you, Isa Chandra Moscowitz does her desserts right!! Finally, someone who understands that some vegans get tired of being so healthy all the time. Sometimes you still want guilt-inducing delicious treats. Well this recipe fits the bill. Smells like caramel corn & toasted nuts, tastes like the most decadent coffee cake.... I'm in love.

Number Of Ingredients 14

2 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces firm silken tofu (half a package of the vacuum-packed kind)
1/4 cup rice or 1/4 cup soymilk
1/3 cup canola oil
2 cups sugar (very strict vegans will want to mind your sugar)
2 tablespoons vanilla extract
1 1/4 cups macadamias, partially chopped & partially ground (a few pulses in a food processor for chopped, remove some for this & below, then a few more for grou)
1/4 cup nonhydrogenated margarine (no whey, mind you)
2 tablespoons turbinado sugar or 2 tablespoons other brown sugar
1/4 cup pure maple syrup
1 cup raw macadamias, coarsely chopped (either from first round in the food processor or chopped by hand on a cutting board with a large kni)

Steps:

  • Preheat the oven to 350. Lightly grease a 9x13-inch baking pan.
  • To prepare the dough:.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt.
  • In a blender, whiz the tofu with rice milk until smooth.
  • Add the oil, sugar, and vanilla, and blend again.
  • Pour the tofu mixture into the flour mixture and use a firm wooden spoon to combine everything well.
  • Fold in the macadamias. The batter will be thick and have a cookie dough consistency.
  • Spread in the baking pan and bake for 25 minutes. Meanwhile, prepare the topping.
  • To prepare the topping:.
  • In a saucepan over medium heat, combine the margarine, turbinado sugar, and maple syrup, and heat until the sugar dissolves.
  • Increase the heat to bring to a boil for 1 minute.
  • Stir in the nuts. Remove from heat.
  • Finally:.
  • Remove the blondies from the oven and pour the topping over them.
  • Return to oven, and let bake for 10 more minutes.
  • Let cool completely before serving. The topping should harden to a caramel-like consistency.
  • The cookbook says to cut them into 16 squares or triangles. I got 20 out of the recipe. ENJOY!

When two brothers opened the first Applebee's in 1980, they gave it the clunky name T.J. Applebee's Rx for Edibles & Elixirs. The name changed six years later, but the chain's insanely popular Maple-Butter Blondies didn't come along until 2004. They're made with walnuts and white chocolate and served in a sizzling skillet with ice cream and maple-butter sauce. Applebee's sells about 2.5 million of the sundaes every year, and readers like Julie Thornton of Dover, PA, have been begging us to track down the recipe. The eatery's Kansas headquarters refused to reveal it, so Food Network Kitchens engineered this spot-on imitation.

10 tablespoons unsalted butter, at room temperature, plus more for the pan
1 cup walnut pieces
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups packed light brown sugar
3 large eggs
2 tablespoons vanilla extract
6 ounces white chocolate, cut into chunks
1/3 cup maple syrup
6 tablespoons unsalted butter
1/4 cup heavy cream
Vanilla ice cream, for serving
1/2 cup walnut pieces

Steps:

  • Make the blondies: Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving an overhang on two sides; butter the foil. Pulse 1/2 cup walnuts in a food processor until almost fine (do not overprocess). Whisk the ground nuts, flour, baking powder, baking soda and salt in a medium bowl.
  • Beat 10 tablespoons butter and the brown sugar with a mixer on medium speed until fluffy, about 2 minutes. Beat in the eggs, one at a time, scraping down the bowl with a rubber spatula. Beat in the vanilla. Gradually beat in the dry ingredients until just combined. Fold in the white chocolate and the remaining 1/2 cup walnuts.
  • Spread the batter in the prepared pan and bake until the blondies are light brown around the edges and spring back when pressed, about 30 minutes. Cool slightly on a rack.
  • Meanwhile, make the topping: Place the maple syrup and butter in a small saucepan over medium heat and cook until the mixture bubbles and thickens, swirling the pan, about 6 minutes. Add the cream and continue to cook until the mixture is the consistency of caramel.
  • Use the foil to lift the blondies out of the pan, then cut into large bars. Serve warm topped with ice cream, the maple-butter sauce and the walnuts.

  • Preheat an oven to 350 degrees F and grease a 13 by 9-inch baking dish. In a bowl, stir together the flour, baking powder, and salt. In a large bowl or in a mixer, beat together the butter and sugar until light and creamy, then beat in the eggs and vanilla. Gently stir in the flour mixture, then the macadamia nuts. Mix until well blended and pour into the baking dish. Bake until a toothpick inserted into the center of the dish comes out clean, about 35 minutes.
  • Let blondies cool in pan. To serve, cut into 9 large bars.

The blondie is the lazy man's chocolate chip cookie. It's basically the same dough, but instead of scooping and baking, it's patted into a baking pan and baked in one go. This recipe simplifies things even further. Instead of creaming room-temperature butter to make the batter, the butter is melted and browned on the stovetop. Then all the other ingredients are mixed into the pot. One pot. One batch. One delicious dessert with plenty of time for relaxing.

10 tablespoons unsalted butter
1 cup packed light brown sugar
1 large egg
1 1/2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup semisweet chocolate chips
1/2 cup macadamia nuts, chopped

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square pan with parchment paper, leaving a 2-inch overhang on 2 sides.
  • In a medium saucepan, heat the butter over medium-high heat until melted. Continue to cook the butter, swirling the pan often, until the milk solids turn golden brown and the butter smells nutty, about 5 minutes.
  • Remove the pan from the heat and let it cool for a few minutes. (You don't want the egg to scramble when you stir it in.) Stir in the brown sugar until smooth. Then stir in the egg and the vanilla extract. Stir in the flour, salt, baking powder, and baking soda. Then add half of the chocolate and half of the macadamia nuts. The batter will be thick.
  • Tip the mixture out into the prepared pan. Use an offset spatula to smooth the dough to an even thickness. Sprinkle with the remaining chocolate and macadamia nuts. Bake until the dough is puffed and a toothpick inserted into the center comes out with moist crumbs attached, 20 to 25 minutes. Let cool on a rack. Using the parchment, lift the bar out of the pan and onto a cutting board. Cut into pieces and serve.
