Time 45m

Yield 24 servings

Number Of Ingredients 15

2 cups all-purpose flour
2 cups sugar
1/4 teaspoon salt
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 large eggs
2 sticks butter
4 heaping tablespoons cocoa powder
1 3/4 sticks butter
4 heaping tablespoons cocoa powder
6 tablespoons milk
1 teaspoon vanilla extract
1 pound powdered sugar
1/2 cup finely chopped pecans, optional

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • In a large bowl, combine the flour, sugar and salt. Stir together and set aside.
  • In another bowl, mix the buttermilk, baking soda, vanilla and eggs. Mix with a fork and set aside.
  • In a medium saucepan, melt the butter and add the cocoa. Whisk together to combine. Meanwhile, bring 1 cup water to a boil. When the butter is melted, pour the boiling water in the pan. Allow to bubble for a moment, then turn off the heat. Pour the chocolate mixture into the flour mixture. Stir together for a moment to cool the chocolate, then pour in the egg mixture. Stir together until smooth, then pour into an ungreased jelly roll pan (or rimmed baking sheet) and bake for 20 minutes.
  • While the cake is baking, make the icing: Melt the butter in a saucepan over medium-low heat. Add the cocoa powder and stir until smooth. Add the milk, vanilla and powdered sugar. Stir together. Dump in the pecans and stir until well combined.
  • Immediately after removing the cake from the oven, pour the warm icing over the top. You'll want to avoid doing much spreading, so try to distribute it evenly as you pour.

MA ANN'S CHOCOLATE SHEET CAKE

Ma Ann's Chocolate Sheet Cake image

One of my very best friends, Ma Ann, gave me this recipe years ago and I've been making it ever since. Don't you dare make fun of my very well seasoned 9x13 pan. I've had it for 42 years and refuse to part with it since it was a wedding gift. LOL!

CHOCOLATE SHEET CAKE

Chocolate Sheet Cake image

Meet the Cook: The biggest compliment I've ever gotten on this cake might have come when I baked it for my son's 11th birthday party last fall. The children were full after eating pizza, veggies and dip, etc. - but each of them asked for seconds! -Dianne Medwid, Dauphin, Manitoba

  • Prep: Preheat your oven to 350 F (180 C). Prepare either a 9 x 13 in (22 x 33 cm) baking dish or an 18 x 13 in (46 x 22 cm) half sheet pan by lining it with parchment paper or by greasing it with non-stick spray. To make a layered sheet cake as pictured, choose the half sheet pan and line with parchment paper.
  • Mix Cake Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, and salt until thoroughly combined.
  • Add in the Cake Wet Ingredients: Add the vanilla extract, milk, eggs, and oil into the bowl of the dry ingredients. Using a spoon or a rubber spatula (not a whisk) stir together wet ingredients until they are slightly combined. Add the hot coffee or water into the bowl. The hot liquid blooms the cocoa powder and intensifies its flavor. Stir together until combined. It will be lumpy at first, but will start to become smooth. Stop stirring as soon as the batter is smooth.
  • Pan & Bake: Pour the cake batter into the prepared pan and bake at 350 F (180 C) until a cake tester comes out of the center with moist crumbs, not liquid batter. This should take about 20 minutes for a cake baked in the half sheet pan and about 40 minutes for a cake baked in a 9 x 13 in baking dish. Allow the cake to cool completely before glazing.
